HEALTHY BOW TIE CHICKEN SUPPER

This healthy dinner is easy to make and very yummy! I like to add whatever extra veggies I have on hand to change it up. My husband is a picky eater with vegetables but he loves this dish! NOTES: I add a little more olive oil while the veggies are cooking as it adds a nice coat to the pasta. I also add extra pasta to this to make it stretch a little further. We really like adding summer squash as well and I have been omitting the peas lately because hubby dislikes them.

1 lb boneless skinless chicken breast, cut into 1/4 inch strips
1 tablespoon olive oil, more added as needed
1 red sweet bell pepper, julienned into 1 inch strips
1 -2 zucchini, cut into 1/4 inch rounds
1 small onion, chopped
2 garlic cloves, minced
1/2 cup frozen peas, thawed
1 teaspoon italian seasoning
1/4 teaspoon sodium-free seasoning or 1/4 teaspoon salt
1/4 teaspoon fresh ground black pepper
1 -2 cup bow tie pasta, cooked and drained
2 medium tomatoes, seeded and chopped
1/4 cup grated parmesan cheese

Steps:

  • Start boiling water for pasta. Cook bowtie pasta until just al dente.
  • Meanwhile, in a large nonstick skillet over medium-high heat, saute chicken in oil for about 5 minutes, or until just done.
  • Remove chicken from skillet and set aside.
  • To the same skillet add the red bell pepper and onion and stir-fry for 2-3 minutes. Add another tablespoon of olive oil if needed to moisten.
  • Add the zucchini (and summer squash if using) and cook for another 2-3 minutes. Add garlic and cook for another minute until veggies get crisp-tender.
  • Add the thawed peas, tomatoes and seasonings; stir-fry for 2 more minutes.
  • Add cooked pasta, chicken and parmesan cheese; turn off heat and stir until combined.
  • Add more olive oil if necessary to coat pasta and sprinkle with more parmesan cheese if you'd like and enjoy!

GARLIC CHICKEN AND VEGETABLE BOWTIE PASTA



Garlic Chicken and Vegetable Bowtie Pasta image

Number Of Ingredients 12

2-3 boneless skinless chicken breasts
Olive Garden Italian Salad Dressing
1 (16 ounce) package bowtie pasta
3 Tb olive oil, divided
1 C carrots, sliced
1 onion, chopped
1 red bell pepper, chopped
2 small zucchini, sliced
1 (8 ounce) package sliced mushrooms
1 Tb minced garlic
3/4 C parmesan cheese, grated
salt and pepper

Steps:

  • 1. Preheat your oven to 425 degrees.
  • 2. Spray a shallow baking dish with cooking spray and place 2-3 chicken breasts in it (more if you like).
  • 3. Grab some Olive Garden Italian Dressing (or another Italian dressing of your choice) and pour about 1/3 C over the top of the chicken. Pop it into the oven and bake for 30 minutes, or until the juices run clear and it's not longer pink on the inside.
  • 4. Cook 1 (16 ounce) box of bowtie pasta noodles according to package directions. Strain the water from the pasta when it's cooked through, add the hot pasta back into the pan you cooked it in. Add 1 Tb olive oil and stir to combine. Cover the pot and set aside.
  • 5. While your pasta is cooking heat a large, deep skillet up over medium high heat. Add 2 Tb olive oil, allow it to get hot and add 1 C sliced carrots. Allow them to cook for 3-5 minutes.
  • 6. Slice 2 small zucchini into 1/4 inch rounds. Chop 1 onion and 1 red bell pepper into small pieces. Mince 1 Tb fresh garlic. Add them and 1 (8 ounce) package sliced mushrooms to the skillet. Saute until crisp tender. Should only take 7-8 minutes. Sprinkle generously with salt and pepper.
  • 7. When the veggies are done add the cooked pasta to the skillet. Give it a nice stir to combine.
  • 8. Add about 3/4 C of the Italian Salad Dressing. Give it a nice stir to combine and then let the veggies and pasta saute together, stirring occasionally, for 2-3 minutes. You want the dressing to heat through and the pasta to get a little bit of a sear on it.
  • 9. Remove the pan from the heat and add 3/4 C grated parmesan cheese. Stir to combine.
  • 10. When the chicken is done allow it to rest for 5 minutes then slice it and add it to the pasta and veggies. Give everything a taste and add more salt and pepper to your liking.
  • Enjoy!

"BOW-TIE" PASTA WITH ZUCCHINI

6 small zucchini
2 teaspoons salt
2 cups packed fresh basil leaves
1 pound farfalle
1/4 cup extra-virgin olive oil
3 tablespoons unsalted butter
1/2 cup finely grated fresh Parmigiano-Reggiano plus additional for serving

Steps:

  • Cut zucchini crosswise into 1/8-inch-thick slices and in a colander toss with salt. Let zucchini stand to drain 45 minutes. Pat zucchini dry.
  • While zucchini is draining, cut basil into thin strips and bring a 6-quart pasta pot three fourths full with salted water to a boil for farfalle. Cook pasta in boiling water until al dente and ladle out and reserve 1 cup pasta cooking water. Drain pasta in colander.
  • While pasta is cooking, in a deep 12-inch heavy skillet heat oil over moderately high heat until hot but not smoking and sauté zucchini, stirring occasionally, until golden and tender, about 7 minutes. Reduce heat to low and stir in half of basil. Stir in pasta and butter and gently toss until butter is melted. Stir in 1/2 cup reserved pasta water and gently toss (adding more pasta water as needed if mixture becomes too dry). Stir in 1/2 cup Parmigiano-Reggiano, remaining basil, and salt and pepper to taste.
  • Serve pasta with additional cheese.

1 package (16 ounces) bow tie pasta
2 pounds boneless skinless chicken breasts, cut into strips
1 cup chopped sweet red pepper
1/4 cup butter, cubed
2 cans (10-3/4 ounces each) condensed cream of chicken soup, undiluted
2 cups frozen peas
1-1/2 cups 2% milk
1 teaspoon garlic powder
1/4 to 1/2 teaspoon salt
1/4 teaspoon pepper
2/3 cup grated Parmesan cheese
Crushed red pepper flakes, optional

Steps:

  • Cook pasta according to package directions. Meanwhile, in a Dutch oven, cook chicken and red pepper in butter over medium heat for 5-6 minutes or until chicken is no longer pink., Stir in the soup, peas, milk, garlic powder, salt and pepper; heat through. Stir in cheese. Drain pasta; add to chicken mixture and toss to coat. If desired, sprinkle with crushed red pepper flakes. Freeze option: Transfer individual portions of cooled mixture into freezer containers. Freeze up to 3 months. To use, thaw in the refrigerator overnight. Transfer to an ungreased shallow microwave-safe dish. Cover and microwave on high until heated through, stirring occasionally.
