My preschooler doesn't eat ground beef unless it's taco flavored, so I came up with this casserole we all like. To make assembly easy, I prepare the taco meat and freeze several bags at a time. I also cook the noodles over the weekend for a timely supper later in the week. -Kathy Wilson, Romeoville, Illinois

3 cups uncooked bow tie pasta
1 pound ground beef
1/4 cup chopped onion
2 cups shredded cheddar cheese
1 jar (16 ounces) salsa
1 can (14-1/2 ounces) diced tomatoes, undrained
1 envelope taco seasoning
2 cups nacho tortilla chips, crushed

Steps:

  • Preheat oven to 350°. Cook pasta according to package directions. Meanwhile, in a large skillet, cook beef and onion over medium heat until meat is no longer pink; drain. Add cheese, salsa, tomatoes and taco seasoning. Drain pasta; stir into beef mixture., Transfer to a greased 11x7-in. baking dish. Cover and bake 20 minutes. Uncover; sprinkle with tortilla chips. Bake until heated through, about 10 minutes longer.

I originally found this taco casserole recipe in a Taste of Home magazine. Since then, I have made this recipe at least 50 times. I love it because the ingredients list isn't complicated and, based on the layers, I can readily remember all ingredients when I am at the store without my recipe card. I have served this for myself and had wonderful leftovers or many times I have made it for company with a nice green salad to accompany it. I hope you enjoy it as much as I do.

Number Of Ingredients 9

1 lb ground beef
1 (1 1/4 ounce) package taco seasoning
1 (15 ounce) can refried beans
2 cups monterey jack cheese, divided (or mixed cheddar, jack etc.)
1 cup salsa (I prefer mild, but if you would like to kick it up a notch, go for it)
2 green onions, chopped
1 (2 1/3 ounce) can sliced black olives
1 tomatoes, chopped
2 cups corn chips (coarsely crushed or chopped)

Steps:

  • Brown ground beef and drain.
  • Add taco seasoning and cook according to package directions, adding proper amount of water.
  • Put corn chips on bottom of 8x8" dish.
  • Cook refried beans on stove until hot.
  • Add 1 cup cheese and 1 cup salsa. Stir until combined.
  • Pour beans over corn chips in dish.
  • Add beef to top of beans.
  • Sprinkle remaining cheese over top.
  • Sprinkle green onions and black olives over cheese.
  • Bake in a 375 degree oven until the cheese is sufficiently melted.
  • Take out of oven and sprinkle chopped tomatoes on top. Wait 1-2 minutes and then serve.

This is definitely a freeze ahead recipe option. You can freeze after you put together and just heat from freezer for approx 20 additional minutes!

12 ounces bow tie pasta (can also use elbow pasta)
1 jar marinara sauce
1 (1 lb) container low fat cottage cheese
1 (8 ounce) container sour cream
1 (10 ounce) package frozen chopped spinach, thawed and sqeezed of excess liquid
3/4 cup scallion, chopped
1 teaspoon salt
1/2 teaspoon black pepper
2 cups cheddar cheese, shredded

Steps:

  • Cook pasta according to directions, omitting salt and undercooking by 2 minutes.
  • Drain Meanwhile, heat oven to 375 F degrees.
  • Grease 12 cup oven-proof casserole.
  • Mix pasta, sauce, cottage cheese, sour cream, spinach, scallions, salt, pepper in a bowl.
  • Spoon into casserole and top with cheese.
  • Bake, covered for 20 minutes, uncover and continue baking for about 10 minutes or until temperature registers 150 F degrees.

1 lb ground pork
2 (1 1/4 ounce) packages taco seasoning mix
1/2 cup diced green pepper
1 (15 ounce) can tomato sauce
1 (14 1/2 ounce) can diced tomatoes (I use Contadina Roasted Garlic)
1 lb bow tie pasta
2 cups shredded monterey jack cheese, cheese
1 cup sour cream

Steps:

  • Brown the ground beef& ground pork; drain.
  • Stir in the taco seasoning mix, tomato sauce, diced tomatoes and green pepper.
  • Bring to a boil then reduce heat and simmer for 10 minutes.
  • Cook Bow Tie pasta according to package directions; drain.
  • Combine pasta with 1 cup of the cheese and sour cream.
  • Spray a 13x9-inch baking dish with Pam cooking spray.
  • Pour the pasta into the baking dish; top with meat mixture and sprinkle with the remaining cheese.
  • Bake in a 350°F oven for 35-40 minutes.

1/2 lb ground beef
1 (15 ounce) can tomato sauce
1 (15 ounce) can chili beans, undrained
1 (3 ounce) can French-fried onions
1 cup corn chips, crushed coarsely
1 cup cheddar cheese, shredded
2 cups lettuce, shredded
1/2 cup sour cream
1 (15 ounce) jar salsa

Steps:

  • Brown and crumble beef in a large skillet;drain.
  • Add tomato sauce,chili beans and half of the onions.
  • Mix well then bring to a boil.
  • Once mixture comes to a boil reduce heat.
  • Let simmer uncovered for 10 minutes.
  • Stir in remaining onions and all the corn chips.
  • Remove from heat.
  • Sprinkle lettuce around the outer edge of the pan.
  • Add salsa, cheese and a dollop of sour cream in the center.
  • Serve immediately.

4 cups chopped cooked chicken
6 tablespoons butter

1 (24 ounce) jar tomato basil pasta spaghetti sauce

Steps:

  • Preheat oven to 350°.
  • Prepare pasta according to package directions.
  • Place pasta and chicken in a large bowl.
  • Melt butter in a medium saucepan over med-high heat.
  • Whisk in flour; cook, whisking constantly, 1 minute or until smooth.
  • Gradually whisk in milk until smooth.
  • Bring mixture to a boil, decrease heat to med-low, and gradually stir in cheddar cheese until smooth.
  • Stir in salt and pepper.
  • Stir cheese sauce into pasta mixture.
