BOURSIN BLUE CHEESECAKE
Blue cheese lovers will delight in this creamy creation. Garnish with nasturtiums and fresh herbs and serve on a platter with fruit and nuts. Spread on bagel chips, sweet biscuits, water crackers or toasted sourdough bread.

Steps:
- Preheat oven to 350*F.
- Combine cracker crumbs and melted butter and press into the bottom of an 8 inch springform pan.
- Bake for 5 to 8 minutes or until very lightly browned.
- Mix remaining ingredients in a food processor.
- Pour mixture onto crust in spring form pan.
- Wrap bottom and sides of pan in a double thickness of aluminum foil and then place it inside a larger pan, adding enough hot water to the larger pan to come halfway up the sides of the springform pan.
- Bake at 350*F for 50 to 55 minutes.
- (DO not overbake or brown.) It is done when a knife inserted in the middle comes out clean.
- Chill and serve.

Steps:
- Have cheeses and butter at room temperature.
- Crush garlic.
- Mix cheeses, butter and garlic.
- Add remaining ingredients, mix well.
- Pack into a container just large enough to hold the boursin and store in refrigerator.
- To serve, bring to room temperature.
- Serve with crackers.
MAKE YOUR OWN BOURSIN CHEESE - PAULA DEEN
This recipe comes from Paula Deen. It tastes exactly like the boursin cheese sold at stores, for a fraction of the cost! I like to serve this spread with buttery crackers. You could also use it to make sandwiches, etc... The prep time does not include softening of cream cheese, butter or the refrigeration time.

- Put the cream cheese and butter into the bowl of a food processor. (You could use a mixer or blender if you don't have a food processor.).
- Add the seasonings and process until completely blended and smooth.
- Line a medium-sized serving bowl with plastic wrap and fill it with the cheese mixture.
- Cover and refrigerate for at least a few hours before serving.
- You can keep refrigerated for up to 1 week.
