How to make easy Old Fashioned Bourbon Balls. Boozy pecans and chocolate make this Southern no bake dessert taste spectacular! Perfect for holidays, gifting, and cocktail parties.

1 1/2 cups raw pecans
2 1/2 cups gingersnap cookie crumbs
1/8 teaspoon kosher salt
1/2 cup bourbon
1 cup powdered sugar
3 tablespoons unsweetened cocoa powder
1 1/2 tablespoons molasses (honey, or pure maple syrup (I like molasses for the intense flavor))
For rolling: Crushed cookie crumbs

Steps:

  • Place a rack in the center of the oven and preheat the oven to 350 degrees F. Spread the pecans in a single layer. Bake until the pecans are toasted and crisp, about 8 to 10 minutes, stirring once halfway through. Immediate transfer to a cutting board to cool.
  • In the bowl of a food processor fitted with a steel blade, pulse together the cookie crumbs (if you are starting with whole cookies, make the crumbs now then double-check to make sure you have 2 1/2 cups).
  • Add the cooled nuts and salt. Continue to pulse, until the nuts are finely ground but not completely pulverized (you want them in small bits but for them to still have a little bit of texture).
  • In a small bowl, whisk together the bourbon, powdered sugar, cocoa powder, and molasses until smooth.
  • Add to the food processor bowl and pulse until just combined.
  • Scoop the mixture into a bowl and give it a few stirs if the ingredients are not evenly combined. Press it into a mass. Let rest at room temperature for 1 hour to allow the crumbs to absorb some of the liquid.
  • Arrange anything you'd like to roll the balls in a shallow dish (a low bowl both works well).
  • Portion the dough by tablespoonfuls (I like to use a tablespoon scoop like this) and roll into 1-inch balls. Roll the balls in toppings of your choice, then transfer to a storage container (or enjoy IMMEDIATELY!).

This twist on a classic rum ball recipe substitutes chocolate cookies for the usual vanilla wafers, and features bourbon rather than rum. The flavors will mellow and integrate after sitting for a few days, so the cookies will be all the better if you can plan ahead and let them ripen for three or four days. They'll keep for up to two weeks stored at room temperature.

2 1/2 cups/280 grams chocolate cookie crumbs (such as Nabisco Famous Chocolate Wafers or chocolate graham crackers)
1 1/4 cups/125 grams pecans, whole, halved or pieces
1/2 cup/120 milliliters good bourbon
1 cup/120 grams confectioners' sugar, plus more for rolling
3 tablespoons unsweetened cocoa powder
1 tablespoon honey

Steps:

  • In the bowl of a food processor, pulse together the cookie crumbs and pecans until the nuts are finely ground. (The crumbs keep the nuts from turning into nut butter.)
  • In a separate bowl, stir together the bourbon, 1 cup confectioners' sugar, cocoa powder and honey. Add the mixture to food processor and pulse until just combined. Let the dough rest overnight, uncovered and at room temperature. This allows the mixture to dry out a little.
  • Roll the dough into balls about 1 inch in diameter, then toss the balls in confectioners' sugar. Store them in an airtight container if you want them moist, or uncovered if you like them to develop a crunchy sugar crust on the outside. Sprinkle with more confectioners' sugar just before serving.

1 cup confectioners' sugar
1 1/2 cups pecans, finely chopped
1/4 cup light corn syrup
2 tablespoons unsweetened cocoa
1/2 cup Bourbon (or rum)
1/2 cup granulated sugar

Steps:

  • In a large bowl, stir together vanilla wafers, confectioners sugar, pecans, corn syrup, cocoa and bourbon (rum) until thoroughly combined.
  • Shape into 1 inch balls.
  • Pour granulated sugar in a pie plate then roll balls in the sugar.
  • Store in an airtight container for up to 2 weeks.
  • DOES NOT FREEZE WELL!

These balls are so quick and easy to make. They make a nice addition to the baked goodies that you give as gifts. Make these about a week before you want to serve them as they mellow and the sharp strong alcohol taste blends in more with the other ingredients. Store in a tin with a tight lid. This year I couldn't find the Vanilla wafers so I used chocolate and I like them even more. To form the balls I use two teaspoons as the dough is quite moist. I store them in the freezer - they don't go hard and they are so good ice cold

2 1/2 cups vanilla wafers, crushed (a 250g box of Christies vanilla wafers equals 2 1/2 cups)
2 tablespoons cocoa
1 1/4 cups icing sugar
1/2 cup spiced rum (the rum is called Spiced Rum) or 1/2 cup Bourbon
2 tablespoons white corn syrup (one brand is Karo)
1 cup pecans or 1 cup walnuts, broken

Steps:

  • Sift the cocoa with 1 cup sugar.
  • Stir in the spiced rum mixed with the syrup.
  • Add crushed vanilla wafers and nuts.
  • Mix thoroughly.
  • Shape mixture into walnut sizes balls and dredge with remaining sugar or leave them plain.
  • Store in a tin.

1 cup semisweet chocolate chips
½ cup white sugar
3 tablespoons corn syrup
½ cup rum
2 ½ cups crushed vanilla wafers
1 cup chopped walnuts
⅓ cup confectioners' sugar

Steps:

  • Place chocolate chips into a microwave-safe medium bowl. Heat in the microwave for 1 minute, stir and then continue to heat at 20 second intervals, stirring between each, until melted and smooth. Stir in sugar and corn syrup. Blend in rum. Add crushed vanilla wafers and chopped nuts. Mix until evenly distributed. Cover and refrigerate until firm.
  • Roll the chilled chocolate mixture into bite-size balls. Roll balls in a mixture of ground nuts and confectioner's sugar, or just plain confectioner's sugar. Store in a covered container for a week before serving to blend the flavors.

This recipe is from Christoper Kimball of Cook's Illustrated and America's Test Kitchen. It makes about five dozen rum balls that are intense, fudgy, chewy, complex, and balanced. Recipe can be halved or doubled. Plan ahead, since these are best when left to mellow for at least a few days in the refrigerator. They keep very well and can be stored in the refrigerator for up to a couple of weeks or frozen for up to a few months. Cooking time is refrigeration time. Use vanilla for a non-alcoholic version (sometimes called moon balls).

6 ounces semisweet chocolate or 6 ounces bittersweet chocolate
12 tablespoons unsalted butter (1-1/2 sticks)
4 cups vanilla wafers, finely ground in a food processor
1 1/2 cups confectioners' sugar
1/3 cup best quality cocoa
1 cup toasted pecan halves, finely ground in a food processor
generous pinch salt
1/4 cup almond paste
1/2 cup sour cream
3/4 cup rum, of your choice or 1 tablespoon vanilla extract
3 cups chocolate sprinkles

Steps:

  • Place the butter and chocolate in a small saucepan over low heat. When melted, stir until smooth and set aside to cool until warm.
  • Meanwhile, combine the wafers, sugar, cocoa, pecans and salt in a large mixing bowl. Note that any lumps can be worked out once the wet ingredients are added.
  • Once the chocolate/butter mixture is cooled, transfer it to the bowl of a food processor (no need to wash it after grinding the wafers and nuts). Break the almond paste into small pieces and add it to the chocolate mixture. Process until smooth, about one minute. Add the sour cream and process until well combined, about 20 seconds. Transfer to the large bowl containing the dry ingredients. Add the rum and stir until the mixture is smooth and homogeneous, about two minutes. Refrigerate until firm, at least an hour and up to overnight.
  • Form the mixture into one-inch balls and roll in chocolate sprinkles. Place on a parchment or wax paper-lined baking sheet and refrigerate until very firm, about one hour. Transfer to covered containers and allow flavors to mature for three days and up to two weeks. Remove from refrigerator about 20 minutes before serving.

  • Place the nuts in a sealable jar. Pour the bourbon over the nuts. Seal and allow to soak overnight.
  • Mix the butter and sugar; fold in the soaked nuts. Form into 3/4" balls and refrigerate overnight.
