HONEY-BOURBON GLAZED BACON
Steps:
- Preheat the oven to 350 degrees F. Line a baking sheet with parchment paper.
- Combine the honey and bourbon in a small saucepan and bring to a boil over high heat. Remove from heat and let cool slightly.
- Lay the bacon on the prepared baking sheet and roast for 10 minutes. Brush with some of the honey-bourbon syrup. Continue roasting until deeply caramelized and crispy, another 10 to 15 minutes--the bacon will really crisp as it cools. Sprinkle with 1/4 teaspoon pepper and serve.
BOURBON HONEY CAKE
"My Bourbon Honey Cake came from a strong taste memory: It's inspired by a classic Jewish holiday dessert that my mother served. I started with the flavors of honey, orange and autumn spices, then I added hot coffee for depth and rich bourbon to give it a grown-up edge. And because texture is so important, I added crunchy sliced almonds to the top. When it all came together, it was even better than I remembered!" says Ina.

- Preheat the oven to 350˚ F. Brush a 9-inch angel food cake pan with a nonremovable bottom with oil, line the bottom with parchment paper, then oil and flour the pan.
- In the bowl of an electric mixer fitted with the paddle attachment, mix the oil, granulated sugar, honey, brown sugar, eggs, orange zest and vanilla on medium speed for 1 minute. In another bowl, sift together the flour, baking powder, baking soda, cinnamon, salt, cloves, allspice and ginger and blend. Combine the coffee, orange juice and bourbon in a 2-cup glass measuring cup. With the mixer on low, alternately add the flour and liquid mixtures to the oil-sugar mixture in thirds, beginning and ending with flour, until combined. Scrape down the bowl with a rubber spatula. Don't worry; the batter will be very liquid!
- Pour the batter into the prepared pan. Rap the pan 5 times on the counter to get rid of any bubbles in the batter. Sprinkle the top with the almonds. Bake in the center of the oven for 45 minutes to 1 hour, until a toothpick inserted into the center comes out clean. Cool completely, then remove from the pan and place almond-side up on a flat serving plate. Serve at room temperature.

- Combine bourbon, lemon juice, and honey in a cocktail shaker. Fill shaker with ice, cover, and shake very vigorously to help dissolve honey until outside of shaker is very cold, about 20 seconds.
- Strain cocktail through a Hawthorne strainer or a slotted spoon into an old-fashioned or rocks glass with 1 large ice cube or several smaller ones.

- 1. In a small sauce pan, combine lemon juice, honey and thyme. Bring to a boil. Remove thyme, then chill.
- 2. Choose a quality bourbon (NOT a Jack Daniels grade. In my opinion, life is too short for subpar whiskey.)
- 3. Chill two tumblers in the freezer. Divide chilled lemon juice/honey mixture between the two tumblers. Stir in 2 shots (or more?) per tumbler. Serve with a spring of thyme in the glass. Enjoy.

- Preheat oven to 350 degrees F.
- In a medium saucepan, heat bourbon, honey, molasses, and marmalade over low heat for 15 minutes or until reduced by half, stirring occasionally. (When measuring honey and molasses, spray measuring cup with nonstick cooking spray to keep measurements accurate.) Set aside.
- With a sharp knife, cut a diamond pattern on the fatty part of the ham. Stud whole cloves in each diamond, at points where lines cross. Spread half of the bourbon glaze over the ham and roast for 30 minutes, uncovered. Baste occasionally with remaining glaze and continue to roast for another 15 minutes. Let ham stand for 20 minutes before slicing.

- In a 1-quart saucepan, mix honey and water. Heat about 2 minutes over medium-high heat, stirring constantly until honey is dissolved. Remove from heat; and set aside 1 hour to cool.
- Pour syrup into glass jar. Cover jar; refrigerate until ready to use. Makes about 1/2 cup.
- Cocktail: Add the bourbon, orange juice, honey syrup, lemon juice and bitters to a cocktail shaker filled with ice; shake well.
- Pour into a cocktail glass. Top with Champagne. Garnish with an orange twist.
