These would be good for any party - football, Mardi Gras, a holiday party, etc. I really liked that these are baked not fried. The sweet crawfish tails mixed with the onions and parsley is perfect. By rolling in the bread crumbs before baking, they come out of the oven with a slight crust. Delish!

2 lb crawfish tails, peeled
1 medium onion, finely chopped
4 slice bread
1/4 c finely chopped parsley
1/4 c finely chopped green onions
salt and pepper to taste
1 c plain bread crumbs
1 egg

Steps:

  • 1. Grind crawfish, onions and bread together. Add egg, parsley, and green onions and mix thoroughly.
  • 2. Season with salt and pepper and mix. Shape mixture into quarter-sized balls. Roll balls lightly in bread crumbs.
  • 3. Bake at 350 degrees for 20 minutes. Makes about 3 1/2 dozen.

The Acadians of Louisiana, also known as Cajuns, are especially innovative cooks who learned to make good use of whatever was on hand. Crawfish balls are a favorite of Cajuns, but since these delicate little critters are not easy to come by in other parts of the country, shrimp is used in this recipe. Served hot, they're a fine first course or appetizer to enjoy with drinks. If you wish, serve with remoulade sauce. From an old newspaper clipping.

Number Of Ingredients 11

2 tablespoons parsley, minced
2 tablespoons green onions, minced
2 tablespoons butter (not spread or tub product) or 2 tablespoons margarine (not spread or tub product)
2 tablespoons flour
1/2 cup milk
1/2 teaspoon salt
1/4 teaspoon hot pepper sauce (or to taste, Tabasco or other Louisiana-style pepper sauce preferred)
1/2 lb shrimp, cooked, cleaned and finely chopped
2 eggs
2 cups fine dry breadcrumbs
oil, for frying

Steps:

  • Cook parsley in green onions in melted butter for a minute; blend in flour until fully incorporated.
  • Stir in milk, salt and hot pepper sauce.
  • Cook until thickened, stirring constantly.
  • Remove from heat and stir in minced shrimp.
  • Shape into balls, using one tablespoon mixture per ball.
  • Beat eggs until well mixed; dip balls into bread crumbs, then egg, then in crumbs again.
  • Chill 30 minutes.
  • Heat oil to 350°F.
  • Fry 4 balls at a time until golden brown, about 2 or 3 minutes.
  • Keep warm in low oven on paper towel lined plate; repeat with remaining balls.

1 lb fresh shrimp
4 water chestnuts, chopped fine
1/2 cup bamboo shoot, chopped fine
1/4 teaspoon fresh ginger, chopped
1 teaspoon salt (I prefer to use 2 tsp of light soya sauce)
1 dash black pepper (optional)
1 tablespoon white wine (sherry will do)
2 teaspoons cornstarch
1 egg white
deep frying oil

Steps:

  • Prepare shrimp by cleaning thoroughly and removing shell, legs and devein.
  • Mince the shrimp.
  • Combine all of the ingredients except oil Use a teaspoon of the mixture and shape into balls.
  • Heat oil in a deep pot or skillet and deep fry shrimp balls until Golden Brown.
  • Remove from oil and place onto paper towells to drain excess oil.
  • Serve Hot.
  • Note: You can add 150g minced pork to the mixture if you like. Increase the cornstarch to 1 tbs and use one whole egg.

I found this in my mother's recipes and it is so simple and a real crowd pleaser!! 8) (Prep time includes refrigerating time).

fine dry breadcrumb
6 1/2 ounces crabmeat
1/2 cup milk
2 tablespoons flour
1 tablespoon butter
2 beaten eggs
1/2 teaspoon onion, minced
1/2 teaspoon finely chopped parsley
1/2 teaspoon mustard
1/2 teaspoon Worcestershire sauce
1 teaspoon salt
1 dash pepper

Steps:

  • Melt the butter, and blend in the flour, then milk.
  • Cook until thickened, stir continuously.
  • Cut the crabmeat into small pieces, removing fiber.
  • Combine crabmeat with the spices, onion, parsley, and Worcestershire to cream sauce.
  • Lightly sprinkle the breadcrumbs on bottom of pan.
  • Spread the mixture in pan and chill for 1/2 hour.
  • When chilled, mold the mixture into small balls and roll in fine bread crumbs.
  • Then dip in beaten egg, and re-coat in crumbs.
  • Fry in deep fat about 350F, or until lightly browned.
  • Drain on paper towels, stick tooth-picks in and serve!
