CRUNCHY BATTER FRIED FISH (NO BEER)
I had great reviews with my other fish recipe recipe #104409. But I'm always striving to improve. I did some experimenting, and this fish batter is great! Serve it with recipe #104661, fries and coleslaw. Or make it into a fish sandwich with tartar sauce and lettuce on a bun. Either way, it's delish!

Steps:
- Mix together 1 cup flour, 1/4 cup cornstarch, baking powder and salt in a bowl.
- Stir in enough club soda to make a batter about the consistency of thin pancake batter. You don't want it too thick, just thick enough to nicely coat a spoon.
- Season the batter to taste if desired with seasoning of your choice. I suggest Old Bay, Lemon Pepper seasoning, or seasoned salt. set aside.
- In another bowl, mix together remaining 1/4 cup flour and 1/4 cup cornstarch.
- Heat oil in a deep pan to 375°F Use a candy thermometer if you need to. Oil in pan should be about 3" to 4" deep.
- Cut fish into portion sizes and remove any pin bones, and pat dry.
- Dredge the fish in the dry flour/cornstarch mixture. Shake off any excess.This allows the batter to stick to the fish.
- Dip dredged fish into batter allowing any excess to drip off before carefully adding the fish to the hot oil.
- Cook the fish one or two pieces at a time until golden brown.
- Drain on paper towels or better yet, on a cake cooling rack set up over paper towels.
- Serve while hot.
BATTERED FISH - LIKE THE FISH & CHIP SHOP!
My family loves fish & chips from the 'chippie'.....but recently it has become far too expensive & we have been dissapointed a few times by the quality of the food. So, here we have the recipe I came up with to satisfy the family when they fancy fish 'n' chips. You can use any white fish fillet you prefer. I like to cut mine into 5" strips so they cook quicker & fit a bit better in my small fryer! If you have any batter left over, it makes great onion rings too......

- Preheat the oven to 180°C.
- In a 10" x 3" plastic tub, place the flour, egg, salt, seasoning, milk & melted butter. Blend really well using an immersion blender - or liquidize & pour into the tub. (The tub just makes it easier to apply the batter to the fish.).
- Rinse your fillets & cut into 5" pieces. Dust each piece with a little flour.
- Heat your fryer to approximately 180 - 190°C.
- Dip the fillerts one by one in the batter & coat both sides evenly.
- When the oil has reached the correct temp, gently lay one fillet at a time onto the top of the oil.
- Cook until golden brown on both sides - takes me about 4-5 mins, then remove & place on a tray with a wire rack (I use the grill pan) in the oven to stay crisp & hot.
- Repeat with the remaining fish.
- Serve with chunky chips, peas (mushy is best!) & lots of salt & vinegar -- .

Growing up in Boston, we love fried fish! There I said it....and hope you enjoy the way I created this very easy recipe for delicious "FRIED FISH". I use Tilapia but any white fillet would work. You can also use this recipe to make Fried Calamari. Yum!

- Heat oil in a large sauce pan to frying temperature.
- In a small bowl mix dry ingredients.
- Add water and cider vinegar to make a thick batter.
- Dip fish pieces into batter then into hot oil.

- Put flour, seasoning salt, garlic powder and paprika into a large bowl and whisk to combine.
- Add beer and 1/4 cup water and whisk to make a smooth batter.
- Pour the oil into a large heavy pot to a depth of 2" and heat over medium high heat until temperature registers 350 F on a deep fry thermometer.
- Working in batches, dust the fish with cornstarch lightly, dip the fish into the batter, shaking off some of the excess, and fry, turning occasionally, until cooked through and deep golden brown, about 5 minutes. Transfer the fried fish to a rack to drain.

- Heat oil in a deep fryer to 365 degrees F (185 degrees C).
- Rinse fish, pat dry, and season with salt and pepper.
- Combine flour, garlic powder, paprika, 2 teaspoons salt, and 2 teaspoons pepper. Stir egg into dry ingredients.

MUCHLI MASALA (INDIAN SPICY FRIED FISH)
Quick, easy, delicious. I was looking for a low carb recipe that was somewhat out of the ordinary, and found this. Use fresh ginger, the powdered stuff is different entirely. Also, I thought sea salt worked better than table salt, it let more flavor shine through. Prep time includes marinate time.

- Heat oil in a large heavy pot (mine’s cast iron) to 325 degrees. Add fries, a few at a time to blanch. Drain on paper towels and set aside. Increase heat to 360 to 375 degrees.
- Combine first 1 1/2 cups flour with cornstarch and baking powder. Make a depression in the center and slowly add the cold beer while stirring to remove lumps.
