The most authentic Jamaican jerk chicken recipe you'll find without traveling to Jamaica.

1 tbsp ground thyme or 2 tbsp thyme leaves
1 or 2 Scotch bonnet peppers (Habanero if you cannot source Scotch bonnet, but it won't be authentic) BOTH ARE EXTREMELY HOT!
1/2 teaspoon nutmeg
1/2 cup packed brown sugar
2 tbsp soy sauce
1-2 bunches green onions (6 to 12)
salt and pepper to taste (at least 1 tsp Kosher or sea salt)
1 teaspoon cinnamon
1/2teaspoon ginger minced
2 tsp allspice
6-8 garlic cloves
2 tbsp Jerk paste (above)
2/3 cup (5 oz) pineapple juice
3/4 cup (6 oz) ketchup
6 oz Red Stripe beer (you can find it at BevMo!)
one chicken, cut up into pieces (preferably organic)

Steps:

  • Place all ingredients for base in a blender or food processor and process until smooth.
  • Use to marinate chicken for at least 4 hours, but preferably overnight, before cooking on the barbecue.
  • Grill on the barbecue until fully cooked.
  • Add all ingredients listed for the Jerk sauce to a pan over low heat and allow to simmer for 30 minutes to an hour, stirring often. Add more juice or beer to thin the sauce, alternatively, simmer longer for a thicker sauce.
  • Spoon this sauce over the cooked jerk chicken, serving extra for those who want a little more.

1 pint plain tomato sauce
1 cup molasses
1 cup stout or full flavored beer, remainder to be consumed immediately by cook
Spices, to taste (Jamaica is multi-ethnic and so is this sauce - African, Spanish, Indian, Chinese)
1 tablespoon ground allspice
1 tablespoon garlic powder
1 teaspoon ground cinnamon
1 teaspoon powdered ginger
1 teaspoon chili powder
1 teaspoon cumin or brown curry powder
3 tablespoons hot sauce (or as you like it)
4 tablespoons soy sauce
5 tablespoons vegetable oil
Ribs

Steps:

  • Combine all ingredients in a large pot or saucepan. Heat over medium heat, until thickened and slightly reduced. Cool and store in plastic containers or jars in the refrigerator until ready to use.
  • Preheat grill to high.
  • For ribs, place on grill without sauce and sear both sides. Use tongs. (Not forks, which allow juices to run.). Paint both sides with sauce. Place on grill and sear first side, approximately 5 minutes. Turn and repaint seared side. Remove after approximately 5 minutes. Cut and serve.

  • Rinse chicken pieces well under cold running water and pat dry with paper towels. Divide chicken pieces between 2 heavy-duty gallon plastic sealable bags and divide marinade evenly between the 2. Turn bags over to evenly distribute marinade, and refrigerate chicken for at least 24 hours and up to 2 days.
  • On an oiled grill rack set about 6 inches above red-hot coals, grill chicken (in batches if necessary), covered, for 10 to 15 minutes on each side, or until cooked through. Transfer to a warm platter and keep warm until serving.
  • Serve with Jamaican Barbecue Sauce, alongside fried plantains, rice, or bread of choice.

1 large white onion, chopped
1 large red onion, chopped
2 large green chile peppers, roasted and chopped, (optional)

1 (4.5 ounce) can chopped green chiles
2 jalapeno peppers, roasted and chopped, (optional)
4 tablespoons tamarind concentrate
2/3 cup molasses
4 tablespoons dark brown sugar
2 1/2 tablespoons ground allspice
4 teaspoons ground black pepper
4 teaspoons ground cayenne pepper
2 teaspoons ground cinnamon
2 teaspoons ground nutmeg
1 teaspoons ground thyme
3 teaspoons salt
3 teaspoons turbinado sugar
2 tablespoons soy sauce
2 tablespoons white wine vinegar

Steps:

  • Add all of the ingredients to a slow cooker. (Optional: You can saute the onions in a little olive oil before adding them.) Cook at a low temperature for 6 to 12 hours (until sauce reduces and thickens). A small amount of habanero pepper (chopped or sauce), can be added for additional heat, to taste, at the end of cooking. Serve warm with pork BBQ and white bread or hamburger buns.;
  • Note: Key ingredients are the fresh ginger, allspice, peppers, and tamarind. Also, the flavor is better (and a little milder) if it cooks longer.

6 skinless, boneless chicken breast halves - cut into chunks
4 limes, juiced
1 cup water
2 teaspoons ground allspice
½ teaspoon ground nutmeg
1 teaspoon salt
1 teaspoon brown sugar
2 teaspoons dried thyme
1 teaspoon ground ginger
1 ½ teaspoons ground black pepper
2 tablespoons vegetable oil
2 onions, chopped
1 ½ cups chopped green onions
6 cloves garlic, chopped
2 habanero peppers, chopped

Steps:

  • Place chicken in a medium bowl. Cover with lime juice and water. Set aside.
  • In a blender or food processor, place allspice, nutmeg, salt, brown sugar, thyme, ginger, black pepper and vegetable oil. Blend well, then mix in onions, green onions, garlic and habanero peppers until almost smooth.
  • Pour most of the blended marinade mixture into bowl with chicken, reserving a small amount to use as a basting sauce while cooking. Cover, and marinate in the refrigerator for at least 2 hours.
  • Preheat an outdoor grill for medium heat.
  • Brush grill grate with oil. Cook chicken slowly on the preheated grill. Turn frequently, basting often with remaining marinade mixture. Cook to desired doneness.

Make your own jerk seasoning to use as a marinade for chicken. Scotch bonnet peppers and spices bring heat and plenty of flavour

2 chicken thighs
2 chicken legs
2-3 tsp crushed/powered allspice (pimento)
1 tsp fine salt
4 spring onions, trimmed
1 medium white onion
1- 2 Scotch bonnet peppers
6-8 garlic cloves
2-3 tbsp picked thyme leaves
240ml lime juice or orange or pineapple juice
60ml white or malt vinegar
½ tsp mixed spice
1-2 tbsp dark sugar

Steps:

  • Whizz all the ingredients for the marinade in a blender to form a thick paste. It shouldn't be too runny, similar to the consistency of sweet chilli sauce. Taste and adjust seasoning if needed. Will keep in an airtight container in the fridge for up to three weeks.
  • Slit the chicken skin with a sharp knife, then put into a container. Pour over the jerk marinade, making sure the chicken is completely covered. You may not need all the marinade. Cover the chicken and place in the fridge for at least 4 hrs, but ideally 24 hrs.
  • Heat the oven to 220C/200C fan/gas 7. Put the chicken in an ovenproof dish, cover with foil and cook for 30-45 mins. Remove the foil and baste the chicken with the juices from the dish, then cook for a further 10 mins. The skin should start to crisp up. Check the meat is cooked by cutting into the deepest part of the chicken. If the juices run out red, return to the oven for 10 mins more, or until the juices run clear. Serve with rice & peas or any of your favourite side dishes.

1 tablespoon minced jalapeno peppers

  • Meanwhile, bring reserved marinade to a boil in a small saucepan. Reduce heat; simmer, uncovered, until slightly thickened, about 5 minutes. Drizzle over cooked chicken.

1 teaspoon ground cinnamon
1 teaspoon ground nutmeg
1 large onion, chopped
2 cups green onions, sliced
1 cup olive oil
1 cup fresh orange juice
1/4 cup fresh lime juice
1/4 cup soy sauce
1/4 cup red wine vinegar
2 tablespoons fresh ginger, peeled and minced
1 -2 habanero pepper, seeded and coarsely chopped
3 garlic cloves

1 cup purchased barbecue sauce
2 -3 lbs chicken breasts, and thighs

Steps:

  • Stir first 3 ingredients in small skillet over medium high heat until fragrant, about 30 seconds.
  • Add all ingredients accept for bbq sauce and chicken to food processor and blend until a puree forms.
  • Mix 1 1/2 cups of puree with the bbq sauce, cover and refrigerate.
  • Place chicken in large glass baking dish. Pour remaining puree over chicken; turn to coat.
  • Refrigerate overnight.
  • Prepare bbq (medium heat) sprinkle chicken with salt and pepper. Grill chicken until cooked through.
  • Meanwhile, bring bbq sauce to simmer. Serve chicken, passing bbq sauce separately.

  • For BBQ: Heat bbq to medium heat (about 350F). Place chicken on top rack (not directly on the grill), with the skin side up. Close the lid and let cook for 8-10 minutes, adjusting the flame on the BBQ to keep the internal temperature of the BBQ as close to 350F as possible. After 10 minutes, flip the chicken, and cook another 10 minutes. Flip the chicken one more time and cook an additional 5-10 minutes, or until cooked to an internal temperature of 165F. *You want the outside of the chicken to be a little charred in spots, but it shouldn't be completely black. Keep an eye on it and reduce the temperature if necessary, if it seems to be cooking too quickly.
  • For the oven: Preheat oven to 350F. Place chicken on a baking sheet and bake for 40-45 minutes, or until cooked to an internal temperature of 165F. If it needs a little colour, pop under the broiler for a bit.
