2 cups all-purpose flour, sifted
1 teaspoon salt
1 teaspoon baking soda
5 very ripe bananas, mashed
¾ cup brown sugar
½ cup butter, softened
2 eggs
3 drops almond extract
3 drops amaretto (almond-flavored liqueur)

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Spray a loaf pan with cooking spray.
  • Whisk flour, salt, and baking soda together in a bowl.
  • Mix bananas, brown sugar, butter, eggs, almond extract, and amaretto together in a separate bowl. Add flour mixture; mix just until flour is incorporated, about 1 minute. Transfer mixture to the prepared loaf pan.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 1 hour. Let cool before serving, about 30 minutes.

This super delicious banana bread recipe has just the right amount of sweet rum glaze on top! Perfect for parties or as a homemade gift!

1/2 cup white sugar
1/2 cup brown sugar, packed
1/2 cup of butter at room temperature
2 large eggs
2 cups mashed bananas (about 4 bananas)
1 teaspoon cinnamon
2 cups flour
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon salt
1 cup powdered sugar
1/4 cup dark or spiced rum

Steps:

  • Preheat the oven to 350 degrees. Spray a 9 x 5 x 3 loaf pan with cooking spray and set aside.
  • Cream the butter and both sugars together in a large bowl until light and fluffy. Add the eggs, mashed bananas and vanilla extract to the bowl and mix until combined.
  • In a separate bowl, mix together the flour, baking soda, baking powder and salt.
  • Add half of the flour mixture to the batter and mix until combined. Add the other half of the flour mixture and mix until all the flour is combined into the batter.
  • Pour the batter into the prepared loaf pan and bake for 55-60 minutes until a toothpick inserted into the center comes out clean. Let cool for a few minutes and then remove the pan and place on a baking rack to cool.
  • To make the glaze, whisk the powdered sugar and rum together in a small bowl. Pour over the slightly cooled banana bread. Let the glaze set for 15 minutes, slice and serve.

6 ripe bananas, peeled and sliced in half lengthways
2 tbsp dark brown soft sugar
2 tbsp maple syrup
3-4 tbsp rum or whisky
40g pecans, toasted and chopped
vanilla or salted caramel ice cream, to serve

Steps:

  • Heat the oven to 220C/200C fan/gas 8. Toss the banana halves in an ovenproof dish with the sugar, maple syrup and rum or whisky. Sprinkle with a small pinch of salt, if you like.
  • Bake for 15 mins, then remove from the oven. Heat the grill to high and grill the bananas for 3-5 mins, or until bubbling and caramelised. Spoon the bananas into bowls and scatter over the pecans. Serve with ice cream, and any of the caramelised syrup from the dish drizzled over the top.

1 loaf French bread
2 tablespoons vanilla extract, pure
4 bananas, mashed
4 cups milk
3 eggs
1 cup sugar
1 cup raisins
1 teaspoon nutmeg, freshly ground
1 teaspoon cinnamon
1 tablespoon rum (optional)

Steps:

  • Cut the bread into cubes, place in a bowl and pour the milk on it, put aside for an hour.
  • Preheat oven to 325 degrees F.
  • Grease 9 x 13 inch baking dish.
  • In a separate bowl mix the eggs, sugar and vanilla essence.
  • Pour this mixture onto the bread mixture.
  • Next add the mashed bananas and raisins.
  • Now add the rum, cinnamom and ground nutmeg.
  • Pour this mixture into the prepared baking dish and bake in the oven for 1 hour.
  • Let cool before serving.

14 ounces Eagle Brand Condensed Milk
1 (4 ounce) package instant vanilla pudding
16 ounces whipped topping
1 cup water
1/2 cup vodka or 1/2 cup rum, tropical flavor
2 -3 small bananas
11 ounces of mini vanilla wafers

Steps:

  • Mix condensed milk, pudding, water and vodka together. Chill for approximately 5 minutes. Fold in the whipped cream. Next layer in serving dish vanilla wafers, pudding, bananas. Repeat layers till bowl is filled. (I did 3 layers). Finish off with the pudding on top. Chill for a couple of hours and serve with additional whipped cream if desired.
  • For stronger pudding mix switch out equal amounts of vodka for water. You can also use the flavored whipped cream.

1 2/3 cups all-purpose flour (Not self-rising)
1 teaspoon baking soda

1/4 teaspoon baking powder
1 cup pecans (chopped)

Steps:

  • Heat oven to 350 degrees and grease bottom of a bread loaf pan
  • Mix sugar and butter until well blended in a large mixing bowl, stir in eggs and blend well
  • Add bananas, rum and water, and mix until well blended
  • Stir in flour, baking soda, salt, and baking powder until just moistened, fold in pecans
  • Pour into the loaf pan and bake for 50-60 minutes until a toothpick inserted in center comes out clean
  • Let cool for 5 minutes, remove from pans and cool on wire racks prior to slicing.

  • In a small saucepan place dates and rum. Bring to a slow simmer and continue to cook until most of the dates have absorbed most of the rum. It will resemble a boozy date jam. Set aside to cool.
