RANCH MAC AND CHEESE BALLS
Super cheesy mac 'n' cheese gets a boost from ranch seasoning, and then gets even better: It's deep-fried into crunchy and creamy golden-brown bites.

Steps:
- Put the milk and macaroni in a small saucepan and bring the milk to a boil over medium heat, stirring frequently to keep the macaroni from clumping. Simmer until the macaroni is tender and the milk has thickened to the consistency of heavy cream, 3 to 4 minutes. Remove the saucepan from the heat, add the Monterrey Jack, mozzarella, cream cheese, butter, 1 packet of the ranch seasoning (8 teaspoons) and 1 1/2 teaspoons salt and stir until smooth, thick and creamy. Transfer the mixture to a shallow bowl and cool to room temperature to stiffen up.
- Meanwhile, put the flour, eggs and breadcrumbs into 3 separate shallow dishes and season each with salt and pepper.
- Using a 1-ounce ice cream scoop or 2 tablespoons, scoop out balls of the cooled macaroni mixture and put them on a baking sheet. Roll each ball in your hand until smooth, then dredge in the flour, dip in the eggs to coat and roll in the breadcrumbs until completely covered. Put the balls back on the baking sheet and refrigerate until chilled, at least 1 hour.
- Pour enough oil into a large heavy pot to come 2 inches up the side and attach a deep-frying thermometer to the pot. Heat the oil over medium heat to 360 degrees F.
- Working in batches, fry the balls until golden brown on the outside and heated through inside, about 6 minutes. Using a slotted spoon, lift the balls from the oil and transfer to a paper towel-lined plate.
- Stir together the mayonnaise, buttermilk and remaining packet ranch seasoning in a small bowl until smooth. Transfer the mac 'n' cheese balls to a serving platter, drizzle with some of the dressing and serve with the remaining dressing on the side for dipping.

- Preheat oven to 400 degrees. In a medium bowl, combine cheese, butter, flour and cayenne with a fork until a dough-like form forms. Scoop up a tablespoon of the dough and enclose one olive with dough. Roll into a ball and place on baking sheet. Repeat process using up remaining dough. Sprinkle with paprika. Bake for 15 minutes or until golden. Serve warm.

- Combine the cream cheese, cheddar, Brie, Worcestershire sauce, hot sauce, garlic powder, and onion powder in a bowl. With an electric mixer, beat on medium speed until incorporated. Add the parsley and continue to beat on low speed until just combined. Form the mixture into a ball and refrigerate until set.
- While the cheese ball sets, coarsely chop the pecans and spread on a rimmed plate.
- About 30 minutes before serving, remove the cheese ball from the fridge. Roll the ball in the pecans, pressing them firmly to the ball, until completely covered. Let soften at room temperature for 30 minutes. Serve.
CHEESE BALLS
Steps:
- In a large pot of boiling salted water, cook the pasta to al dente according to the package directions.
- Meanwhile, bring the heavy cream to a simmer in a large saucepan and slowly add in the Cheddar, mozzarella, Swiss cheese, American cheese and white Cheddar, stirring, until smooth and creamy. Season with salt and pepper.
- Drain the pasta and add to the cheese mixture. Stir until all the pasta is well-coated. Place in the refrigerator for 10 to 15 minutes.
- Scoop the pasta into balls, rolling until uniform and about 3 inches in diameter. Set aside.
- Place the flour, beaten eggs and panko into separate shallow bowls. Roll each individual pasta ball first into the flour, then the eggs, then the panko.
- Fill a deep saucepan with 3 inches of canola oil and heat to 350 degrees F. Line a sheet pan or platter with paper towels. Carefully drop several pasta balls into the oil (do not crowd; fry in batches) and fry until golden, about 3 1/2 minutes. Remove and drain the balls on the paper towels. While still hot, sprinkle with the Parmesan and serve.

- Heat 2 inches of vegetableoil in a large pot or deep fryer, until a deep-fry thermometer registers 360 degrees.
- Mix together ricotta chesse, 11/2 c breadcrumbs and garlic powder. Roll cheese about the size of golf ball, toss in remaining 1/2 c breadcrumbs. Carefully place in oil. Fry a few at a time, about 1 minute 30 seconds.
- Drain on aplate lined with Viva towels. Let cool and eat away. These are sooooooooo good and filling. Dip in tomato sauce, if desired.

- Mix the cashew cheese, walnuts, chives, garlic granules and a pinch of seasoning together in a bowl, then cover and chill for 1 hr.
- Tip the parsley into a shallow bowl and the chilli flakes or sumac into a second shallow bowl. Roll the chilled mixture into 20 small balls, then roll in the parsley or the chilli flakes, or sumac, until fully coated. Transfer the cheese balls to a tray and chill for 3 hrs, or until ready to serve. Any leftovers will keep in a jar, topped up with olive oil, for a week.

These sausage balls were a hit at our Christmas party this year. I accidentaly used low-fat cheese in the recipe and couldn't tell the difference. No frying necessary, they bake beautifully.

- Cut bacon into small pieces and sauté until cooked. Once cooled, set aside 1/4 of the bacon for the topping.
- In a bowl, add 3/4 of the bacon, 1/4 cup sour cream, 16 oz cream cheese, 1/2 cup four-cheese blend, 1 cup cheddar cheese, 3 Tbsp green onions, 1/4 cup walnuts, 3 Tbsp Ranch seasoning, 1/2 tsp garlic powder, 1/4 tsp pepper, and 1 tsp poppy seeds. With a wooden spatula, mix all ingredients until well combined.
- Finely chop the remaining 1/4 of bacon, 1/4 cup cheddar cheese, 1 Tbsp green onion, and 1/4 cup walnuts. Mix together with the 1/4 tsp poppy seed. Spread this mixture onto a cutting board.
- Form a ball out of the cheese mixture and roll the cheese ball over the toppings to fully coat and shape into an even ball as it's coated. Serve right away or cover and refrigerate until ready to serve.

- Preheat the oven to 350°F. Spread the pecans out on a baking sheet and toast for 7-10 minutes, just until fragrant, watching carefully. Allow to cool, then chop finely in a food processor or by hand. Remove and set aside. Clean food processor.
