HAM BONE AND BEAN SOUP
Don't throw away the ham bone -- make bean soup! Plan a little bit ahead and use a ham bone to make this gluten-free soup. With just a few basic ingredients you can create a delicious comforting meal from leftovers.

Steps:
- Place bean mix into a large bowl and cover with several inches of water; soak for at least 24 hours. Drain completely.
- Bring chicken stock to a boil in a pot large enough to hold the beans and, eventually, the ham bone. Add the soaked beans; reduce heat and simmer until tender, about 1 hour.
- Bring stock and beans back to a boil. Add ham bone, onion, carrots, celery, garlic, and bay leaves. Reduce heat to low and simmer until vegetables are soft, about 1 hour. Add chopped ham, liquid smoke, and mustard powder. Stir and let simmer until flavors blend, about 30 minutes more.
- Remove ham bone from the soup. Season with salt and pepper.

NAVY BEAN SOUP

- Place the beans in a large saucepan and cover with cold water by about 2 inches. Bring to a boil and lower the heat to a simmer. Cook for 5 minutes; remove from the heat, cover, and let sit for one hour. Drain and reserve. Tie the parsley, thyme, and bay leaf together with kitchen twine.
- In a large soup pot or Dutch oven combine the beans, herb bundle, hocks, onions, and garlic with the water. Bring to a boil, cover, and adjust the heat so the soup cooks at a gentle simmer. Cook, stirring in the carrots after 1 hour, until the beans and hock are completely tender, about 1 1/2 hours total.
- Turn off the heat and remove the hocks. Cool slightly. Remove the meat from the hocks, discarding the bones, fat, and skin. Cut the meat into small cubes. Remove the herb bundle and discard.
- Puree about 3 cups of the beans with a some of the liquid in a blender. (For a smoother soup, puree all the beans.) Stir the puree and diced meat into the soup. Heat the soup and adjust the seasoning as needed with salt and pepper.
- Pour into heated bowls, place a small pat of butter on top of each soup, and serve.

- 1. Cook's Note: Technically all the ingredients are already cooked, really what you're doing is cooking the beans until tender and allowing the ham bone and bacon time to infuse the water for a rich and meaty taste.
- 2. PREPARE THE BEANS Wash and clean the beans, soak overnight according to package directions. The next day, drain the water, rinse the beans, and put them in a large pot with 6 cups of really hot water or enough to cover the beans. Simmer gently, covered with lid at a tilt, until very tender. It takes about 4 hours for beans to get done here. The package says 2 hours. So it depends on your altitude. Do not add salt to the water. Watch the beans carefully so they don't stick when they start to thicken, adding just enough water to cook them.
- 3. COOK THE BACON: Fry the bacon and remove to a paper towel to drain. Saute the celery and onions in the bacon grease until tender.
- 4. PREPARING THE SOUP: While the beans are cooking. Take the soup broth and pour it into a colander over a large soup pot. Remove the vegetables, chop them and set aside. Remove the ham from the bones and chop it, and add it to the pot of soup to simmer over low heat. Discard the bones. Add the marjoram and 1 tablespoon of chicken granules. Add the sauteed celery and onions and a tablespoon of bacon grease. Simmer a few minutes, then add the peas and cook until tender. Turn the pot to low heat to just simmer.
- 5. When the beans are tender and starting to thicken, it is time to add them to the soup. The beans are very hot, so carefully pour or ladle them into the soup pot. Heat until just hot. Garnish each serving bowl with a tablespoon of diced bacon when serving. Great with cornbread! Enjoy!
HAM BONE SOUP
Don't let that leftover bone from your holiday smoked ham go to waste! Put it to use in this hearty, delicious soup, which can be made with ingredients you probably have in your fridge and pantry. It's nice if you have a little meat left clinging to the bone after you've carved off all the ham, but even if you don't, the bone alone will add rich flavor and smokiness to the dish. You'll need to soak the dried beans overnight, so plan accordingly. Luckily this recipe makes a big batch as the soup keeps well in the freezer (see Cook's Note).

- The day before you want to make the soup. put the beans in a large bowl and add cold water to cover by several inches. Soak overnight (or at least 8 hours) in the refrigerator.
- Drain the beans and rinse. Heat the olive oil in a large Dutch oven over medium heat. Add the carrots, celery and leeks and season with 1 teaspoon of salt. Cook and stir until the vegetables are softened, about 5 minutes.
- Add the tomato paste and thyme and stir to coat the vegetables. Let the tomato paste toast for 1 minute, stirring, then add the bay leaves and 12 cups of water. Add the beans and nestle the ham bone in. Bring to a simmer and cook, uncovered, until the beans are almost tender, 45 minutes to 1 hour.
- Add the escarole, another 2 cups of water and 1 teaspoon salt. Return the soup to a simmer and cook until thickened and the beans and escarole are very tender, 20 to 30 minutes.
- Remove the bay leaves and ham bone from the soup and let cool until you can handle the bone. Shred any useable meat left on the bone and stir back into the soup. Season with salt and pepper before serving.

- 1. PREPARE HAMBONE: Use a leftover spiral hambone with meat. Trim any excess fat and discard it. Place the hambone in a extra large pot and cover with about a gallon of water.
- 2. ADDING THE INGREDIENTS:
- 3. Add the onions, garlic, chicken granules, McCormick seasoning, salt and pepper. Bring to a boil and slow simmer for about an hour.
- 4. Add the carrots, simmer for 1/2 hour, then add the potatoes. When the potatoes are just tender, add the green beans and simmer until tender. Avoid adding more seasoning until end of cooking time because flavors blend as it simmers.
- 5. TO SERVE: Using a slotted spoon, ladle potatoes, carrots, onions and green beans and the ham on a dinner plate or in a large bowl. Enjoy! Reserve the broth to be used for Hambone Bean Soup.

- Soak beans according to package directions, either overnight, or quick 1 hour soak. Drain and rinse beans.
- Add water, ham bone and broths to beans in stockpot. Cut 1 stalk of celery into 3 pieces and add to beans along with chopped onion and bay leaves. Bring to boil, cover partially, lower heat and simmer 90 minutes, or until beans are tender. Remove bay leaves and celery.
- Add tomatoes, chopped carrots and other two stalks of celery, chopped finely. Remove bone and take off any remaining ham and chop finely. Add additional ham if needed to make 2 cups and add to soup.
- Use a potato masher or immersion blender to blend slightly, thickening the soup with the mashed beans.
- Great served with a dolop of horseradish.
