Time P1DT3h

Yield 8

Number Of Ingredients 12

1 (16 ounce) package 15-bean soup mix
6 cups chicken stock
1 ham bone with some meat
1 cup chopped onion
1 cup chopped carrots
½ stalk celery, chopped
1 tablespoon chopped garlic
2 bay leaves
2 cups chopped ham
2 tablespoons liquid smoke flavoring
1 ½ tablespoons ground mustard powder
1 pinch salt and ground black pepper to taste

Steps:

  • Place bean mix into a large bowl and cover with several inches of water; soak for at least 24 hours. Drain completely.
  • Bring chicken stock to a boil in a pot large enough to hold the beans and, eventually, the ham bone. Add the soaked beans; reduce heat and simmer until tender, about 1 hour.
  • Bring stock and beans back to a boil. Add ham bone, onion, carrots, celery, garlic, and bay leaves. Reduce heat to low and simmer until vegetables are soft, about 1 hour. Add chopped ham, liquid smoke, and mustard powder. Stir and let simmer until flavors blend, about 30 minutes more.
  • Remove ham bone from the soup. Season with salt and pepper.

NAVY BEAN SOUP

Navy Bean Soup image

Cook dry beans at a gentle simmer with smoked ham hocks, fresh herbs and vegetables for a budget-friendly Navy Bean Soup recipe from Food Network Kitchen.

Provided by Food Network Kitchen

Time 2h15m

Yield 8 servings

Number Of Ingredients 11

1 pound navy beans, picked over, rinsed and drained
10 sprigs parsley
2 sprigs fresh thyme or rosemary
1 bay leaf
2 large smoked ham hocks, about 1 1/2 pounds
1 medium onion, coarsely chopped
1 clove garlic, coarsely chopped
8 cups of cold water
1 medium carrot, coarsely chopped
Kosher salt and freshly ground black pepper
Butter for garnish

Steps:

  • Place the beans in a large saucepan and cover with cold water by about 2 inches. Bring to a boil and lower the heat to a simmer. Cook for 5 minutes; remove from the heat, cover, and let sit for one hour. Drain and reserve. Tie the parsley, thyme, and bay leaf together with kitchen twine.
  • In a large soup pot or Dutch oven combine the beans, herb bundle, hocks, onions, and garlic with the water. Bring to a boil, cover, and adjust the heat so the soup cooks at a gentle simmer. Cook, stirring in the carrots after 1 hour, until the beans and hock are completely tender, about 1 1/2 hours total.
  • Turn off the heat and remove the hocks. Cool slightly. Remove the meat from the hocks, discarding the bones, fat, and skin. Cut the meat into small cubes. Remove the herb bundle and discard.
  • Puree about 3 cups of the beans with a some of the liquid in a blender. (For a smoother soup, puree all the beans.) Stir the puree and diced meat into the soup. Heat the soup and adjust the seasoning as needed with salt and pepper.
  • Pour into heated bowls, place a small pat of butter on top of each soup, and serve.

BONNIE'S HAMBONE BEAN SOUP

BONNIE'S HAMBONE BEAN SOUP image

This delicious Hambone Bean Soup is made from the leftover broth from Hambone Dinner recipe. (posted) Easy to prepare, and the perfect way to use up leftover ham. Categories     Other Soups

Time 3h15m

Number Of Ingredients 8

1 pot of broth and vegetables leftover from hambone dinner recipe.
1 pound of great northern beans, cooked until tender
1 small onion diced
3/4 cup celery diced
1/2 cup frozen peas
1/2 teaspoon marjoram
1 tablespoon chicken granules
4 slices of bacon cooked just until done, cut into pieces.

Steps:

  • 1. Cook's Note: Technically all the ingredients are already cooked, really what you're doing is cooking the beans until tender and allowing the ham bone and bacon time to infuse the water for a rich and meaty taste.
  • 2. PREPARE THE BEANS Wash and clean the beans, soak overnight according to package directions. The next day, drain the water, rinse the beans, and put them in a large pot with 6 cups of really hot water or enough to cover the beans. Simmer gently, covered with lid at a tilt, until very tender. It takes about 4 hours for beans to get done here. The package says 2 hours. So it depends on your altitude. Do not add salt to the water. Watch the beans carefully so they don't stick when they start to thicken, adding just enough water to cook them.
  • 3. COOK THE BACON: Fry the bacon and remove to a paper towel to drain. Saute the celery and onions in the bacon grease until tender.
  • 4. PREPARING THE SOUP: While the beans are cooking. Take the soup broth and pour it into a colander over a large soup pot. Remove the vegetables, chop them and set aside. Remove the ham from the bones and chop it, and add it to the pot of soup to simmer over low heat. Discard the bones. Add the marjoram and 1 tablespoon of chicken granules. Add the sauteed celery and onions and a tablespoon of bacon grease. Simmer a few minutes, then add the peas and cook until tender. Turn the pot to low heat to just simmer.
  • 5. When the beans are tender and starting to thicken, it is time to add them to the soup. The beans are very hot, so carefully pour or ladle them into the soup pot. Heat until just hot. Garnish each serving bowl with a tablespoon of diced bacon when serving. Great with cornbread! Enjoy!

HAM BONE SOUP

Ham Bone Soup image

Don't let that leftover bone from your holiday smoked ham go to waste! Put it to use in this hearty, delicious soup, which can be made with ingredients you probably have in your fridge and pantry. It's nice if you have a little meat left clinging to the bone after you've carved off all the ham, but even if you don't, the bone alone will add rich flavor and smokiness to the dish. You'll need to soak the dried beans overnight, so plan accordingly. Luckily this recipe makes a big batch as the soup keeps well in the freezer (see Cook's Note).

Time 9h40m

Yield about 3 quarts; 6 to 8 servings

Number Of Ingredients 11

1 pound dried navy beans
3 tablespoons extra-virgin olive oil
4 medium carrots, chopped (about 2 cups)
3 stalks celery, chopped (about 1 cup)
3 leeks, white and light green parts only, halved lengthwise, thinly sliced and washed well (about 1 1/2 cups)
Kosher salt and freshly ground black pepper
2 tablespoons tomato paste
1 tablespoon fresh thyme leaves, chopped
2 bay leaves
1 leftover ham bone
1 head escarole, coarsely chopped (about 6 cups)

Steps:

  • The day before you want to make the soup. put the beans in a large bowl and add cold water to cover by several inches. Soak overnight (or at least 8 hours) in the refrigerator.
  • Drain the beans and rinse. Heat the olive oil in a large Dutch oven over medium heat. Add the carrots, celery and leeks and season with 1 teaspoon of salt. Cook and stir until the vegetables are softened, about 5 minutes.
  • Add the tomato paste and thyme and stir to coat the vegetables. Let the tomato paste toast for 1 minute, stirring, then add the bay leaves and 12 cups of water. Add the beans and nestle the ham bone in. Bring to a simmer and cook, uncovered, until the beans are almost tender, 45 minutes to 1 hour.
  • Add the escarole, another 2 cups of water and 1 teaspoon salt. Return the soup to a simmer and cook until thickened and the beans and escarole are very tender, 20 to 30 minutes.
  • Remove the bay leaves and ham bone from the soup and let cool until you can handle the bone. Shred any useable meat left on the bone and stir back into the soup. Season with salt and pepper before serving.

BONNIE'S HAMBONE DINNER

BONNIE'S HAMBONE DINNER image

Bonnie's Hambone Dinner is a huge favorite in this house. It is made from leftover spiral ham on the bone, slow simmered to enhance the flavors, and paired with tender garden vegetables. This is a one-pot meal, simply delicious, and very easy to prepare. Best of all, this recipe is actually two meals in one! The rich and...

Categories     Pork

Time 2h45m

Number Of Ingredients 10

1 spiral hambone, preferably the end of the ham, trim excess fat from the meat and leave whole.
water to cover the bone, about a gallon
12 small, whole red potatoes of uniform size, scrubbed
2 onions peeled and quartered
8 whole carrots of uniform size, peeled with potato peeler
1 16 ounce package frozen petite green beans
2 heaping tablespoons mccormick garlic & onion medley
3 heaping tablespoons chicken granules
1 teaspoon garlic powder
salt and pepper to taste

Steps:

  • 1. PREPARE HAMBONE: Use a leftover spiral hambone with meat. Trim any excess fat and discard it. Place the hambone in a extra large pot and cover with about a gallon of water.
  • 2. ADDING THE INGREDIENTS:
  • 3. Add the onions, garlic, chicken granules, McCormick seasoning, salt and pepper. Bring to a boil and slow simmer for about an hour.
  • 4. Add the carrots, simmer for 1/2 hour, then add the potatoes. When the potatoes are just tender, add the green beans and simmer until tender. Avoid adding more seasoning until end of cooking time because flavors blend as it simmers.
  • 5. TO SERVE: Using a slotted spoon, ladle potatoes, carrots, onions and green beans and the ham on a dinner plate or in a large bowl. Enjoy! Reserve the broth to be used for Hambone Bean Soup.

2 carrots, chopped

  • Add tomatoes, chopped carrots and other two stalks of celery, chopped finely. Remove bone and take off any remaining ham and chop finely. Add additional ham if needed to make 2 cups and add to soup.
