- In a 6-qt. stockpot, cook beef over medium heat 6-8 minutes or until no longer pink, breaking into crumbles; drain. Add tomatoes, green peppers, onion, chilies and seasonings; bring to a boil. Reduce heat; simmer, covered, 20-25 minutes or until vegetables are tender., Prepare rice according to package directions. Serve with stew and, if desired, pepper sauce.

DR PEPPER BEEF MARINADE
This makes for some of the best meat I've ever had. I know a guy who has a secret Dr. Pepper marinade, but he won't give us the ingredients. After years of slowly putting it together, this is what I've come to conclude.

BLACK PEPPER BEEF

- Bring the beef to room temperature. Pat dry and sprinkle with salt. Dredge the beef lightly in flour, shaking off the excess.
- Heat about 1 tablespoon EVOO in a Dutch oven over medium-high heat. Brown half the beef and transfer to a plate. Add another 1 tablespoon EVOO to the pot and brown the remaining beef. Return all the beef to the pot and add the stock and enough water to cover the beef. Stir in the garlic and bay leaf and bring to boil. Reduce the heat to medium-low, partially cover the pot and simmer for 2 hours. Stir in the red wine, tomato paste and pepper and cook until the beef is tender enough to fall apart and the sauce is thick, 2 to 3 hours more.
- When the beef is almost finished cooking, cook the potatoes in a pot of boiling water until tender, 12 to 15 minutes. Drain and return to the hot pot. Cut the Taleggio into cubes and mash into the potatoes with enough milk to reach the desired consistency. Stir in the sage and season with salt and pepper.
- Divide the beef and sauce among bowls and sprinkle with parsley.
- Cook's Note: The beef stew can be covered and refrigerated for a make-ahead meal. Reheat gently, adding water as needed to thin the sauce.
PEPPER SPIKED BEEF STEW
This was the first time I've used whole wheat flour- the texture is great for stew! This has a little "kick". From the South Beach Diet.

- In a large ziplock bag, mix flour, 1 teaspoons chili powder, and salt. Add beef & shake well to coat.
- Heat oil in large saucepan over medium high heat. Add beef; cook & stir 7 minuted, until browned. Add onions, garlic, & oregano. Reduce heat to medium. Cook & stir 5 minutes.
- Add broth,undrained tomatoes, & 2 teaspoons chili powder. Bring to a boil. Cover, reduce heat, & simmer for 2 hrs., stirring occasionally.
- Add carrots & potatoes. Cover; cook 45 minutes, until tender.

SPICY BEEF STEW WITH BEANS & PEPPERS

- Heat 1 tbsp of oil in a large saucepan with a lid. Season meat, then cook about one-third over a high heat for 10 mins until browned. Tip onto a plate and repeat with 2 tbsp of oil and rest of the meat.
- Add a splash of water and scrape pan to remove bits. Add ½ tbsp oil. Turn heat down, fry onion and garlic until softened. Return meat to the pan, add flour and stir for 1 min. Add treacle, cumin, tomatoes and stock. Bring to boil, reduce heat, cover and simmer for 1 hr 45 mins. Stir occasionally and check that the meat is covered with liquid.
- Add peppers and beans, and cook for a further 15 mins. The stew can now be cooled and kept in the fridge for 2 days, or frozen for 1 month. Serve in bowls, with sour cream, coriander and cornbread.

- Sprinkle meat with the salt and pepper and dust with the flour.
- In a large stew kettle, brown meat in the 3 tablespoons shortening until very brown.
- Add beef stock or bouillon, Dr. Pepper, carrots, onions and celery.
- Cook at a low temperature until meat is very tender, about 2 hours.
- Add frozen peas and cook at least 10 minutes longer.

- Set Slow Cooker on high while you prep the food. I use a 7-quart slow cooker, but anything 5 quart and above would work well for this recipe.
- Put your roast in the slow cooker. Combine all other ingredients and stir gently to combine. Pour over the top of the roast. Place the lid on the slow cooker and reduce temperature to LOW.
- Cook on LOW for about 8 hours. Increase temperature to HIGH and cook an additional 2 hours. {I've heard wonderful things about slow cooking roasts on Low for 14-16 hours while you sleep. I'm trying it this way next!!)
