ROAST PORK LOIN
This simple roast solves three dilemmas: 1) you're nervous to cook a big hunk of meat 2) you want to impress on a budget and 3) your time is limited and precious. Whether this is your first holiday as host or you just don't want to stress about the main course, consider this dish a meat, sauce and side -- all in one!

- Preheat the oven to 400 degrees F. Stir together the mustard and thyme in a small bowl. Season the pork roast all over with a generous amount of salt and pepper, then rub the top with the mustard-thyme mixture (leave the bottom and sides bare).
- Heat the oil in a large, ovenproof skillet over medium-high heat. Add the onions and cook, undisturbed, until dark golden brown in spots, about 2 minutes. Turn the onion wedges over and cook for 2 minutes more. Pour in the cider, stirring to scrape up any bits stuck to the bottom of the skillet. Scatter the dried fruit evenly in the skillet and remove from the heat.
- Put the roast in the skillet mustard-side up, then bake until an instant-read thermometer inserted in the middle of the roast reads 145 to 150 degrees F, about 1 hour (the roast will continue cooking once you remove it from the oven). Transfer the roast to a cutting board, tent with foil and let rest for 15 minutes.
- Cut the roast into 1/2-inch-thick slices. Season the pan sauce, onions and dried fruit with salt and pepper and serve with the pork.

- Preheat the oven to 375 degrees. Heat the oil in a large ovenproof skillet over high heat. Season the pork with salt and pepper and sear on all sides until golden brown. Combine the mustard and vinegar and brush over the pork. Transfer to the oven and roast the pork until a thermometer inserted in the center reads 145 degrees, about 35 minutes.
- Transfer the pork to a cutting board and tent with foil for 10 minutes. Remove strings, slice and serve with Fall Vegetable Cobbler (recipe below)
- Preheat the oven to 375 degrees. Whisk the broth and 1/4 cup flour in a saucepan over medium heat. Add the mustard and vegetables; simmer until thickened, about 2 minutes. Whisk in 2 tablespoons butter and salt and pepper to taste; transfer to a 3-quart baking dish.
- Whisk the remaining 1 3/4 cups flour, the baking powder and a pinch of salt in a bowl. Rub in the cold cubed butter with your hands until the dough resembles coarse meal. Lightly stir in 3/4 cup cream with a fork. Place big spoonfuls of dough (about 6) on top of the vegetables and brush with the remaining 1/4 cup cream. Bake until golden brown and cooked through, about 45 minutes. Scatter parsley on top.

INCREDIBLE BONELESS PORK ROAST WITH VEGETABLES
This is one of, if not the most delicious recipes Ive ever made. The flavor is so rich and incredible. It is not dry, although the cooking time may lead you to think differently. You can cut it with a fork, it is just so moist and tender.

- 1. Place Pork Loin fat side down in a 9 x 13 pan and arrange vegetables around it.
- 2. In a small bowl mix Garlic powder, onion powder, seasoned salt and black pepper until combined and rub it onto the pork (top only, not the bottom).
- 3. Sprinkle the parsley on top, and then the garlic. Drizzle the olive oil over top of the pork. You can season the vegetables as well, I recommend to. Just sprinkle all of the same dry seasonings over top.
- 4. Add beef broth from one of the corners of the pan, do not pour over pork. Place foil, slightly vented, over the pork, and fitting the pan. Cook it on 325 for 2 1/2 hours. Midway through rotate the pork so it it fat side up and replace the foil so it is covered again.
- 5. After its done take the foil off and put the broiler on HIGH. Flip the pork again to meat side up and broil for 10 minutes. You will do this twice (meat side up, 10 mins, fat side up 10 mins, and then meat side up one last time for 10 mins.) For a total of 30 minutes You may need a few mins longer depending on your oven. Just look to see how browned its getting.
- 6. Let meat rest for 30 minutes.
- 7. Enjoy! The vegetables will have an incredible flavor and so will the meat.
- **You may add more veggies but You'll probably have to go with a bigger pan size.
- **If you'd really like to kick it up, make a roux and add PAN JUICES and some red wine and let it reduce, stirring often to make a nice gravy!

- Make 6 horizontal cuts down center of roast 3x3". Stuff each cut with a slice of onion, reserving remaining onion.
- Place roast in ovenproof dutch oven. Sprinkle with seasonings. Pour broth around roast.
- Place remaining onion slices, pepper, bay leaf, carrots, and potatoes around roast.
- Cover bake at 325°F for 2 1/2 hours.

- Preheat the oven to 375 degrees F.
- In a food processor, puree 1/2 of one of the onions, grainy mustard, marmalade, butter, salt and pepper.
- Place the pork roast (it can be tied or untied) in a roasting pan and slather with the mustard glaze.
- Slice the remaining onions and arrange, along with the pears, orange and fresh herbs, around the pork loin.
- Roast uncovered for 15 minutes, then reduce the oven temperature to 350 degrees F, roasting for about 75 minutes, until an internal temperature of 175 degrees F is reached.
- Remove the roast from the pan and let rest on a cutting board or platter for 15 minutes before slicing.
- For the sauce, remove the orange segments, thyme and sage sprigs, and discard.
- Place the pan over medium heat and add the white wine, stirring to pull up any caramelized bits for the bottom of the pan.
- Add the chicken stock and sage and simmer until reduced by half.
- Reduce the heat to low and stir in the cold butter just until melted.
- Season to taste and serve beside slices of the roast pork.

PERFECT PORK TENDERLOIN
My #1 way to cook a pork tenderloin or a boneless pork loin because it's ALWAYS moist and tender. It's easy and foolproof! If you like, marinate the roast and rub with any seasonings that please your palate! So many people have asked me how long to cook tenderloins if they have "more than one" to cook, I wanted to give a simple response. ANSWER: So long as the tenderloins are NOT touching each other, cook 3 or 4 individual tenderloins for the same amount of time as if you were cooking one. Remember, each tenderloin is cooking in its own separate space. EXAMPLE: If cooking three 1-pound tenderloins, cook them only 5-1/5 minutes TOTAL. This makes it a great entree recipe when having a dinner party for 8-12 people, or more. - NOTE: The success of this cooking method will depend upon how accurate the temperature of your oven is and how well your oven retains heat. Adjust cooking time +/- according to your individual oven.
- NOTICE: If you have a very old oven that is not well insulated, this recipe may not work for you, as heat retention/residual heat is important to the success of this recipe.
- Determine the EXACT weight of roast from the meat wrapper. Weight will determine how long to cook the roast.
- Preheat oven to 500 degrees. Remove tenderloin from refrigerator. Season meat as desired. Place seasoned meat in an uncovered roasting pan on a shelf in the bottom 1/3 of your oven.
- Bake EXACTLY 5 1/2 minutes PER POUND. Adjust +/- according to your oven's accuracy and heat retention. NOTE:.
- IF YOU HAVE AN OVEN PROBE OR THERMOMETER THAT HAS A WIRE THAT GOES THROUGH THE SIDE OF THE OVEN DOOR, BY ALL MEANS USE IT AND SET THE TEMPERATURE ALARM FOR 140 DEGREES. REMOVE MEAT FROM OVEN WHEN ALARM ALERT GOES OFF (probably before an hour has expired).
- Turn oven OFF and DO NOT open oven door for 45 to 1 hour, OR sooner IF you are using a probe thermometer and it alerts that internal meat temp is at 140 degrees. Remove pork from oven, lightly cover with foil, and let rest 5-10 minutes to redistribute internal juices. Roast should be done, very slightly pink in the center, and very moist.
- After resting 10 minutes, the roast should reach a safe 145-150 degrees.
- NOTE:******* For anyone questioning this method of cooking, it really does reach the proper internal temperature on a thermometer. According to Sara Moulton on FoodTV, trichinosos is killed at 138 degrees, and 145 is a safe temperature for pork, although the USDA recommends 160 degrees (meat will be much drier). If the center of the meat is not a little pink, it is overcooked!
- VARIATION: To make Roasted Veggies along with the tenderloin, peel carrots and potatoes, and cut into about 1-inch cubes. Season as desired and drizzle with a little oil. Add vegetables to pan around (but NOT touching) pork tenderloin. Cook tenderloin as instructed above. The roasted potatoes and carrots should be done when the roast is done. You may need to adjust the size of the potatoes and carrots depending upon the weight of your tenderloin and how long you cook it.
BONELESS ROAST LOIN OF PORK WITH AROMATIC VEGETABLES

- Preheat the oven to 400 degrees.
- Prepare the tomatoes: Core and peel with a vegetable peeler, halve each tomato lengthwise and squeeze lightly to remove the seeds.
- With a small spoon, remove the pulp.
- Set aside the outer shells of the tomatoes.
- Cook the onions: In a large skillet, heat three tbs of the butter over low heat.
- When hot add the onions but do not salt (this allows the onions to brown more easliy).
- cook the onions, shaking the pan from time to time, until nicely, evenly browned on one side, about 5 minutes.
- Turn carefully and cook on the other side until evenly browned, about 5 minutes more.
- The onions will have a tendency to fall apart, but try to keep them in a single piece as you turn them.
- Remove from the heat and season generously with salt and pepper.
- Drain and set aside.
- Cook the tomatoes: In a large skillet, heat the oil over moderatley high heat.
- When hot, add the tomato shells and cook, shaking the pan from time to time, until nicely, evenly browned, about 10 minutes.
- Remove from the heat and season generously with salt and pepper.
- Drain and set aside.
- Cook the carrots: In a large skillet heat the remaining 2 tbs of butter over low heat.
- When hot, add the carrots, seasoned generously with salt and pepper.
- Cook the carrots, shaking the pan from time to time, until nicely, evenly browned and soft and tender when pierced with a fork, about 15 minutes.
- Add the garlic and cook for 2-3 minutes more.
- Remove from the heat and season generously with salt and pepper.
- Drain and set aside.
- Select an oval baking dish that will hold the pork and vegetables without crowding.
- Arrange an overlapping layer of onions at one end of the dish, place an overlapping layer of tomatoes alongside the onions and do the same with the carrots on the other side.
- You will then have all the vegetables in one layer on the bottom of the baking dish.
- Mince half of the sage leaves and sprinkle over the vegetables, along with the thyme.
- Season the pork generously with salt and pepper.
- Tuck the remaining whole sage leaves beneath the string around the pork.
- Place the pork, fat side up, on top of the vegetables.
- Place the baking dish, uncovered, in the center of the oven and roast for 1 hour.
- Add 1/2 cup water, cover the pork loosely with aluminum foil, and roast for 15 minutes more.
- Leaving the foil covering in place, turn off the oven and leave the door slightly ajar.
- Let rest a minimum of 15 minutes or up to 1 hour.
- The pork will continue to cook as it rests.
- To serve, remove and discard the string.
- Carve the pork into thick slices and arrange on warmed dinner plates.
- Serve with the roasted vegetables alongside.
