BONELESS WINGS

Boneless Wings image

Provided by Food Network

Time 40m

Yield 4 to 6 servings

Number Of Ingredients 17

1 cup ketchup
1/2 cup honey
1/2 cup brown sugar
1/4 cup sriracha
2 tablespoons brown mustard
2 tablespoons cider vinegar
1 tablespoon cayenne pepper
3 pounds cornstarch
1 1/4 pounds all-purpose flour
1/2 cup granulated garlic
1/2 cup onion powder
1/2 cup paprika
1/4 cup ground black pepper
1/4 cup cayenne pepper
4 to 6 boneless, skinless chicken breasts
1/2 cup milk
12 large eggs

Steps:

  • For the sweet hot sauce: Combine the ketchup, honey, brown sugar, sriracha, mustard, vinegar, cayenne and 2 tablespoons water in a large bowl and whisk vigorously until everything is mixed well.
  • For the flour dredge: Mix together the cornstarch, flour, granulated garlic, onion powder, paprika, black pepper and cayenne in a large bowl.
  • For the chicken: Heat a deep-fryer to 350 degrees F.
  • Cut the chicken into strips approximately the size of your thumb, making each strip as even as possible. Whisk together the milk and eggs in a large shallow dish for the egg wash. Roll the chicken strips in the flour dredge until evenly coated, shaking off the excess. Then dip in the egg wash. Then dip in the flour dredge once again.
  • In batches, place the chicken strips in the fryer basket and drop it in the oil, giving it a good shake to make sure they don't stick together. Cook until they all begin to float, about 5 minutes. (To insure they have been cooked all the way, feel free to cut one in half.) Toss them in a large bowl with some sweet hot sauce until evenly coated. Repeat with the remaining chicken.

BAKED BUFFALO WINGS

Baked Buffalo Wings image

These easy to make hot wings are crispy without being fried. Always yummy to snack on. They only take 10 minutes for prep, but need to be refrigerated for about an hour so the flour coating is firm. You can add more cayenne or use a higher hot sauce to butter ratio if you like them spicier! Enjoy.

Time 2h

Yield 20

Number Of Ingredients 7

¾ cup all-purpose flour
½ teaspoon cayenne pepper
½ teaspoon garlic powder
½ teaspoon salt
20 chicken wings
½ cup melted butter
½ cup hot pepper sauce (such as Frank's RedHot®)

Steps:

  • Line a baking sheet with aluminum foil, and lightly grease with cooking spray. Place the flour, cayenne pepper, garlic powder, and salt into a resealable plastic bag, and shake to mix. Add the chicken wings, seal, and toss until well coated with the flour mixture. Place the wings onto the prepared baking sheet, and place into the refrigerator. Refrigerate at least 1 hour.
  • Preheat oven to 400 degrees F (200 degrees C).
  • Whisk together the melted butter and hot sauce in a small bowl. Dip the wings into the butter mixture, and place back on the baking sheet. Bake in the preheated oven until the chicken is no longer pink in the center, and crispy on the outside, about 45 minutes. Turn the wings over halfway during cooking so they cook evenly.

BONELESS BUFFALO CHICKEN WINGS

Boneless Buffalo Chicken Wings image

Homemade boneless wings? You bet. Nothing too crazy here, just tried and true buttermilk-dredged chicken with a buttery buffalo sauce. Add some cool blue cheese and ranch for dipping and you're set for game day.

Time 55m

Yield 4

Number Of Ingredients 10

3/4 cup Frank's hot sauce
1/4 cup water
1 tablespoon butter
1/4 teaspoon cayenne pepper
vegetable or peanut oil
1 pound skinless chicken breast
3 cups all-purpose flour
1 1/2 cup buttermilk
1 1/2 teaspoon salt
3/4 teaspoon black pepper

Steps:

  • Preheat the oven to 350 degrees F. Line a baking sheet with foil. Combine the hot sauce, water, butter, and cayenne in a saucepan over medium heat. Cook, stirring frequently, until the butter has melted and the sauce is heated through. Remove the pan from the heat and let cool. Heat the oil in a deep skillet or deep fryer to 360 degrees F. In a shallow bowl, combine the flour, salt and pepper. Place the buttermilk in another shallow bowl. Cut the chicken into 1 1/4 x 1 1/4 inch squares, about 1-inch thick. Dredge the chicken pieces in the flour mixture, shaking off any excess. Then dip them into the buttermilk, coating them completely. Let any excess drip off. Dip the chicken again in the flour and shake off excess. Add the chicken in batches to the hot oil and cook, turning as needed, until golden brown. Remove with a slotted spoon and let drain on paper toweling. Transfer the hot sauce mixture to a large bowl. Add the browned chicken and toss them with the sauce, coating them completely. Transfer the chicken to the foil-lined baking sheet. Place in the oven and bake at 350 degrees F for 20 minutes or until cooked through and the sauce is slightly caramelized. Serve the boneless wings hot with your favorite dipping sauce.

BONELESS BUFFALO WINGS RECIPE

Boneless Buffalo Wings Recipe image

This boneless wings recipe is easy to make with breaded chicken breast fried until crispy and golden, then slathered in homemade Buffalo Sauce. Better than any restaurant!

Provided by Mike Hultquist

Categories     Appetizer     Main Course

Number Of Ingredients 12

1 pound boneless chicken breast (sliced into bite-sized nuggets or chunks)
1 cup flour
1 tablespoon spicy seasoning blend (I use a Cajun blend. What's YOUR secret blend of choice?)
Salt and pepper to taste (about 1/2 to 1 teaspoon each)
1 large egg
1 cup buttermilk (or you can use milk)
Vegetable Oil for frying
1 stick butter - 1/2 cup or 8 tablespoons
½ cup Louisiana style hot sauce - Franks is very popular though I use Valentina HOT
2 tablespoons apple cider vinegar or white vinegar
1 teaspoon Worcestershire sauce
For Serving. Blue cheese dressing or ranch dressing (celery sticks)

Steps:

  • Stir together the flour, seasonings and salt and pepper in a large bowl.
  • In a separate bowl, beat together the egg and buttermilk until combined.
  • Dip each chicken piece into the egg mixture, then into the seasoned flour mixture. Repeat, then set onto a plate to rest for 10 minutes.
  • Heat several inches of frying oil heated to 350 degrees F in a large pot or Dutch oven. Do not boil.
  • Fry the boneless wings for 5-6 minutes, or until golden brown and cooked through. They should register 165 degrees F internally when measured with a meat thermometer.
  • Remove and set onto a paper towel lined plate to drain excess oil.
  • Heat the butter, hot sauce, vinegar and Worcestershire sauce in a sauce pan until the butter melts. Whisk vigorously until the sauce thickens up.
  • Slather the boneless wings with homemade Buffalo sauce and serve with blue cheese dressing or ranch dressing and celery sticks on the side.

  • Cut boneless skinless chicken breasts into strips. RECORD SCRATCH. FREEZE FRAME. Aren't we talking about boneless chicken wings here? What's with the chicken breasts sitch!?
  • Tenderize chicken with buttermilk. Like any good fried chicken recipe, this one starts with a nice buttermilk bath. Whisk together 2 cups buttermilk, 2 Tbsp.
  • Dredge the chicken in a seasoned flour mixture. While traditional Buffalo wings don't have a flour coating, giving the boneless version a dredge makes them more sturdy—plus it lends a satisfying crunch that mimics fried chicken skin.
  • Dredge chicken in buttermilk and flour again. Working in smaller batches this time, return the chicken pieces back to the buttermilk mixture and then toss again in the flour mixture.
  • Make the blue cheese dip. While your chicken is chilling in the fridge, make a couple sauces for your "wings." For the blue cheese dip, whisk 1/2 cup sour cream, 1/4 cup buttermilk, 1/4 cup crumbled blue cheese, 2 tsp.
  • Prep the hot sauce coating. In a small saucepan, stir together 1/2 cup hot sauce, 5 Tbsp. unsalted butter, and 2 Tbsp. pure maple syrup over medium heat until butter is melted and sauce is smooth.
  • Set up your frying station. When you're ready to fry, fill a large heavy pot with 2 inches of vegetable oil, attach a deep-frying or candy thermometer, and set over medium heat.
  • When the thermometer reaches 350°F, add chicken in batches. Don't throw all your chicken in at once. Work in batches so the frying temperature stays consistent and you can move the pieces around (using a slotted spoon or a spider) so that they cook quickly and evenly.
  • Toss the chicken with wing sauce and serve with all the fixings. Transfer all of the chicken to a large bowl and pour the wing sauce mixture over. Gently turn the chicken pieces with tongs until they're coated and glossy.

10 SECRETS BUFFALO WILD WINGS DOESN'T WANT YOU TO KNOW ...

From eatthis.com
  • They are running low on their signature item. It's something of an issue (as in a huge issue) when a restaurant cannot serve its customers its signature product, but many Buffalo Wild Wings locations have come close to hitting that low point, according to Market Realist.
  • Customer opinion of the chain is sliding. In recent months, customers seem to have soured on Buffalo Wild Wings, with many people taking to social media platforms like Twitter and Reddit to express discontent with the company.
  • The name used to be different. When B-Dubs was first opened, the restaurant was called Buffalo Wild Wings & Weck, the "Weck" referring to a roast beef sandwich served on a kummelweck roll that is also popular in Buffalo, according to Delish.
  • The most popular menu item is not a chicken wing. Buffalo Wild Wings sells a lot of chicken wings to be sure, but chicken wings are not the top-selling food on the company's menu.
  • As we said, the boneless "wings" are not actually wings. Remember how we talked about that best-selling product at Buffalo Wild Wings being the so-called "boneless wings?"
  • The same company that owns Arby's owns Buffalo Wild Wings. According to Restaurant Business Online, in the year 2017, facing serious financial troubles, Buffalo Wild Wings began to look for someone to buy it.
  • The company has been accused of racism multiple times. Many former Buffalo Wild Wings employees have complained of being treated unfairly due to their skin color, according to Mashed.
  • Employees usually have to pay for their uniforms. Buffalo Wild Wings only gives their employees one branded uniform shirt, the shirt servers are required to wear, says Mashed.
  • Almost none of the food is healthy. It's, of course, no surprise that fried wings slathered in sauce and dipped in creamy dressing—or fried pickles, fried mozzarella sticks, greasy burgers, and so on—are hardly health foods, but the extent of the unhealthiness of Buffalo Wild Wings' food is still impressive in the pejorative sense.
  • Very little food is cooked fresh at Buffalo Wild Wings. According to numerous employees who reported in on the kitchens at Buffalo Wild Wings restaurants, most of the "cooking" that takes place there consists of deep frying and microwaving foods, many of which are stored frozen for extended periods of time, via Mashed.
