BOLOGNA SALAD SANDWICH SPREAD II
This sandwich spread is a recipe from my mother and a favorite in our house.

Steps:
- Place eggs in a medium saucepan and cover with cold water. Bring water to a boil and immediately remove from heat. Cover and let eggs stand in hot water for 10 to 12 minutes. Remove from water, cool and peel.
- In a food processor, place eggs, bologna and sweet pickles. Blend to a spreadable consistency.
- Transfer mixture to a medium bowl. Mix in mayonnaise, increasing the amount as necessary to make the mixture smooth. Cover and chill in the refrigerator until serving.

From AllRecipes.com, this is really good. If you don't like the sweet taste of Miracle Whip use mayo and dill pickle relish instead of sweet pickle relish. It does not take a whole jar of salad dressing, at the most I use 1/2 jar.

- Refrigerate 2 to 3 hours, or until chilled.

FRIED BOLOGNA SANDWICH

- Spread one slice of bread with mayonnaise and the other slice with yellow mustard.
- Heat a medium skillet or griddle pan over medium-high heat. Make a 1-inch X in the center of each piece of bologna to keep it from curling up in the skillet. Wipe the skillet with a stick of butter until lightly greased. Add the bologna and fry a couple of minutes on each side until browned. Stack up the bologna in the skillet and top with the cheese. Cover with a large inverted bowl and heat until melted.
- Transfer the bologna to one of the slices of bread. Top with the chow chow, potato chips and lettuce. Top with the other slice of bread and give it a little push to crush the potato chips down a bit. Enjoy immediately.
BOLOGNA SALAD SANDWICH SPREAD I
A girlfriend's mom made this spread years ago for our Teen Club Luncheon back in Iowa in the 50's. I asked her to tell my Mom how to make it. I made the recipe for my kids while they were growing up & they still love it. Sweet relish and eggs round out the flavor of bologna in this simple but delicious spread. Serve it on cocktail toast, or use it in sandwiches. The amount of egg, creamy salad dressing and relish should be adjusted to taste.

My mother used to grind the bologna with her old-fashioned crank grinder. She would make large batches as we all loved this. Thinking back, I am sure it also helped stretch her food budget. It really is good and simple to make.

I remember this sandwich spread from when I was a kid. Mom and Dad would buy bulk bologna every time we traveled to Indiana to see family and this was the treat that was made from the ends of the log. BOLOGNA SALAD SANDWICHES
A throwback to when I was a kiddo, I haven't made this in quite a while. DS came home from college for the weekend this morning and put in a request for some...I had totally forgotten about it! After mixing it up I searched the site and while there are a few recipes on here, none are quite the same as this. Like others, my mom used to use her old hand-crank meat grinder to make this, but I just zing everything through the food processor for the same effect. Please note that the amounts are all "to taste", so adjust accordingly! We've always enjoyed this the most on super fresh white bread -- the really soft stuff that sticks to your teeth and the roof of your mouth -- but it also tastes great on toast or buttered and grilled as you would for grilled cheese. As a snack my kiddos love it on crackers. Add your own special touch and enjoy!

- Process bologna in food processor. I find this works best if I cut it into small chunks first, even if I'm using a packag of sliced bologna!
- Process onions and celery in processor, add to bologna in bowl.
- Dice the hard boiled eggs (processor mushes them up too much!) and add to above mixture.
- Add remaining ingredients and mix well.
- Enjoy on your favorite bread or buns with chips and raw veggies!

MY FAVORITE BOLOGNA OR HAM SALAD FOR SANDWICHES
I grew up only knowing this by Ham Salad which is what my Mom and local Deli's up North called it. She said it was the "Poor Man's Ham Salad" which never contained any ham, just bologna, but giving it the wonderful flavor and color of what could have been ham. We loved it. I made it for my children as they grew up and it is still requested though they are adults now. I am in my 50's and still make it for myself as a snack spread or sandwich. I've seen a variation of recipes for this, tried some and still think mine is my favorite. Let me know what you think?

- Do not use Velveeta for this recipe, it does not store well.
- I suggest a food processor for this recipe unless you prefer a meat grinder. Use a large bowl with tight lid for storing.
- Take all the bologna out of the packaging and quarter.
- Unwrap all the cheese slices (if in wrap) and quarter as well.
- Place half the meat and half the cheese in processor and pulse until semi-chunky. It should look spreadable. Scoop in bowl.
- Add remaining bologna and cheese, process.
- Place rest in large bowl and add relish, mix well.
- Add 1/2 of the mayo, stir. You can choose the consistency if you prefer. I like it a bit more mayonnaisy. Add rest if preferred.
- You can use either Miracle Whip or real Mayo, both are great. I like the real mayo because it works better with crackers.
- Serve on either a hamburger bun (kid's favorite), sandwich bread, or club crackers.
- Store remaining spread in fridge, it can last up to one week.

GOOEY BUNS (BOLOGNA SALAD)
Cheap, simple salad for sandwiches. I don't ever remember eating it on buns, but for some reason we always call it gooey buns? Sometimes I run the pickles through the food processor, other times I just chop it myself. I think that this recipe came from my Grandma, but I'm not sure :-) The serving size is just a guess.
