Time 20m

Number Of Ingredients 6

500ml (2 cups) double cream
500ml (2 cups) whole milk
10ml (2 tsp) vanilla paste or extract
125ml (1/2 cup) granulated sugar
5 large egg yolks
[optional] whipped cream

Steps:

  • Combine the cream, milk and vanilla in a saucepan. Bring to the boil then remove from the heat.
  • In a large bowl, whisk together the sugar and egg yolks, until the mixture has gone pale in colour and doubled in size.
  • Temper hot milky mixture into the sugar yolk mixture, by slowly adding hot milky mixture about 60ml (1/4 cup) at a time, whisking to distribute heat. Once half of the milky mixture has been added, transfer mixture back into the saucepan with the remaining milky mixture.
  • Place the saucepan over low heat. Stir continuously until mixture reaches nappé consistency, or 80°C (180°F) on a kitchen thermometer.
  • Remove from heat and pour the custard into a large mixing bowl. Place the bowl into icy water and stir until the custard has cooled.
  • Once it has cooled to a suitable temperature, it is ready to drink.
  • For an added touch, top with whipped cream and grate nutmeg over the top. Enjoy!

BOUILLIE CAKE (BOO-EE CAKE)

Bouillie Cake (Boo-ee Cake) image

My husband is from south Louisiana, Cut Off to be exact and I'm from deep east Texas. Over the years I've tried to learn all his favorite foods to make him feel at home here in Texas. A Bouillie custard is a Cajun staple but, rather than just in a pie (which is typical) his cousin told me about this cake. Basically you make the...

Time 1h20m

Number Of Ingredients 8

1 box butter cake mix
2 can(s) pet milk 12oz cans
2 can(s) water
6 Tbsp cornstarch
4 tsp vanilla extract
1 c butter
1 c sugar
2 eggs

Steps:

  • 1. Heat Oven to 350 and grease 9x13 pan. You will need another bowl for left over custard.
  • 2. In a large pot on medium low heat melt butter, add your milk and water. As that is melting, mix butter cake batter as directed on box and pour into cake pan.
  • 3. Mix sugar, eggs and cornstarch and set to the side. When butter is completely melted add your egg mixture and whisk until pudding like consistency, making sure to stir bottom of pot. DO NOT BOIL, the custard will burn very easily. Turn off heat stir in vanilla. Remove from heat.
  • 4. Ladle booyee over cake batter evenly to cover do not overfill cake pan. You will have a good bit left over. Bake cake as directed.(I like my cake a little gooey so I do not bake quite as long as directed. Taking it out 2 or 3 minutes before done)
  • 5. After cake is removed from oven and cooled for about 20 Minutes cut into squares, place on plate then ladle one booyea-custard over baked cake. This cake is a little labor intensive but well worth it. Refrigerate leftovers, if you have any.

OLD FASHION SOUTHERN BOILED CUSTARD

Old Fashion Southern Boiled Custard image

I have had this recipe for years. I make it every Christmas and give it to my neighbors as gifts. It is always a big hit. I use a candy thermometer to help judge when milk is scalded and when the custard is done.

Provided by Patsy A.

Categories     Beverages

Time 45m

Yield 2 quarts, 8 serving(s)

Number Of Ingredients 4

6 cups whole milk
6 large eggs
1 1/2 cups sugar
1 1/2 teaspoons pure vanilla extract

Steps:

  • Rinse top of double boiler with hot water to keep milk from scorching. Scald whole milk (approx. 180°). Blend eggs and sugar in blender. Slowly add to scalded milk in top of double boiler stirring constantly. Cook until mixture thickens and coats spoon well (appox. 180º). Remove from heat. Add pure vanilla. Let cool a little then strain into containers. The straining is important to make sure there are no lumps in the custard.

CUSTARD - WIKIPEDIA
Custard is usually cooked in a double boiler (bain-marie), or heated very gently in a saucepan on a stove, though custard can also be steamed, baked in the oven with or without a water bath, or even cooked in a pressure cooker. Custard preparation is a delicate operation, because a temperature increase of 3–6 °C (5–10 °F) leads to overcooking and curdling
