NANA'S SWEET AND SOUR CABBAGE
The cabbage cooks with the sugar and vinegar to make a nice mellow flavor. My Nana would serve it with potato dumplings and sour bratten. One of my favorite recipes. To make this recipe lighter just substitute the sugar for 1 1/2 times it's amount in Splenda.

Steps:
- Saute onion in butter until golden brown.
- Add the sugar, vinegar, caraway, pepper and salt. Mix.
- Add the purple cabbage and toss well with the wet ingredients.
- Cook covered (dutch oven works best) over medium heat about 40 minutes or until cabbage is tender.
VEGETARIAN SWEET AND SOUR CABBAGE SOUP
Modified from the NY Times by ofallytasty.com, who adapted it from The National. I put my spin on it by using vegetable broth, and adjusting some of the measurements. If you have smoked salt, by all means sprinkle some over the soup when you serve it.

Steps:
- Heat oil in a large pot over medium heat; add garlic and cook until soft.
- Add the onion and sauté until transluscent.
- Add 3 c vegetable broth, carrots, tomatoes and purée, tomato paste, ketchup, sugar and the bay leaf.
- Bring to a boil then reduce to a simmer and cook for 10 minutes.
- Crush the whole tomatoes and continue to simmer until carrots are tender (10 more minutes).
- Discard bay leaf and, using an immersion blender, blend until slightly chunky (this step is not necessary, texture is good).
- Add lemon juice and cabbage and remaining 3 cups vegetable broth (there will be a LOT of cabbage, but it will cook down).
- Again, bring to a boil, then reduce heat and simmer until the cabbage is done however you like it (1 hour for al dente,2 hours for soft, or anywhere in between).
- Add 3-6 cups water, until the soup reaches your desired consistency.
- Add the raisins 10 minutes before serving.
- Season with salt and pepper.
- Serve with sour cream.

- Put the bacon and onion in a covered casserole and cook in microwave oven 5 minutes.
- Stir in the flour and then the vinegar and water.
- Add the salt, pepper and sugar and stir. Add the cabbage and caraway seed and stir well to coat the cabbage evenly.
- Cook, covered, in the microwave oven for 8 to 10 minutes, stirring several times.
- Add enough water to almost cover the cabbage and cook 1 minute more to heat through.

- Boil cabbage in salt water until soft, drain and put into a frying pan with some butter.
- Add the cut up ham or fried bacon.
- Add onion, vinegar, salt, pepper and sugar.
- Simmer 1/2 hour.
- I added 3 slices of bacon and the rest ham.

- add shredded cabbage to boiling water, cover and boil about 15 minutes until crisp tender, drain.
- fry bacon until crisp, crumble and reserve 1 tbsp drippings.
- stir in brown sugar, water, salt pepper and onion.
- cook until thick, add to cabbage and stir in bacon.

- Preheat the oven to 350º F. Spread the bread cubes in a single layer on a baking sheet and bake until golden and crisp, about 12 to 15 minutes. Remove from the oven and set aside.
- Heat the oil in a large soup pot. Add the onions and garlic and sauté over medium heat until golden, about 8 minutes.
- Add the water, carrots, potatoes, cabbage, bell pepper, tomatoes, wine, paprika, and cumin. Bring to a slow boil, then lower the heat. Cover and simmer gently for 30 minutes, or until the vegetables are tender.
- Stir in the lemon juice and sugar, as well as the optional Balsamic vinegar. Add more lemon juice and/or sugar until you get the sweet/sour balance that pleases your palate.
