Here's a great scalloped potato recipe that's so easy and absolutely delicious. The leftovers are just as good, maybe even better, the next day. This is one of my favorite and most prepared recipes, from my 1971 Florence Junior Welfare League cookbook.

4 cups thinly sliced potatoes
3 tablespoons butter
3 tablespoons flour
1 1/2 cups milk
1 teaspoon salt
1 dash cayenne pepper
1 cup grated sharp cheddar cheese
1/2 cup grated cheese, to sprinkle on top
paprika

Steps:

  • In a small sauce pan, melt butter and blend in flour.
  • Let sit for a minute.
  • Add all of cold milk, stirring with a whisk.
  • Season with salt and cayenne.
  • Cook sauce on low until smooth and boiling, stirring occasionally with a whisk.
  • Reduce heat and stir in cheese.
  • Place a half of the sliced potatoes in a lightly greased one quart casserole dish.
  • Pour half of cheese sauce over potatoes.
  • Repeat with second layer of potatoes and cheese sauce.
  • Sprinkle the remaining cheese on top.
  • Top with some paprika for color.
  • Bake uncovered for about 1 hour at 350°F.

6 potatoes, peeled and cut into 1/2-inch rounds
1 tablespoon olive oil
1 small onion, chopped
1 (10.75 ounce) can condensed cream of mushroom soup
1 cup grated Cheddar cheese
1 (5 ounce) can evaporated milk

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place potatoes into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until slightly tender, about 5 minutes. Drain.
  • Heat olive oil in a skillet over medium heat; cook and stir onion until lightly browned and tender, 10 to 15 minutes.
  • Mix onion, cream of mushroom soup, Cheddar cheese, and evaporated milk in a bowl. Arrange potatoes in a 9x13-inch casserole dish. Pour sauce over potatoes.
  • Bake in the preheated oven until potatoes are tender and sauce is bubbling, 20 minutes.

4 tablespoons (1/2 stick) butter
1 large white onion, diced
1/2 cup all-purpose flour (or rice flour to make the dish gluten-free)
1 1/2 cups milk
White pepper
Dash salt (be careful because there is salt in the cheese)
3/4 cup shredded white Cheddar
4 to 5 potatoes, peeled and thinly sliced
1/8 cup finely sliced white parts scallions, for garnish
1/8 cup bread crumbs for topping (omit for a gluten-free dish)

Steps:

  • Preheat oven to 350 degrees F. Lightly grease an oven-to-table baking dish with some of the butter.
  • Melt the rest of the butter in a saucepan or small skillet and saute the onion until it becomes translucent. Gradually add the flour to make blond roux, then slowly add the milk and allow the mixture to thicken. Season with white pepper and just a dash of salt and remove from heat. (Be careful to avoid overdoing the salt, because there is salt in the cheese.)
  • Layer 1/3 of the potatoes in the baking dish, followed by 1/3 of the milk sauce, and 1/4 cup of the shredded white Cheddar. Repeat the sequence twice for a total of 3 layers. You can top with the breadcrumbs before baking, but omit if making the dish gluten-free. Bake covered for about 45 minutes to 1 hour, removing the cover for the last 10 minutes. (You can speed up the cooking time by pre-microwaving for 10 to 15 minutes before baking, or even par-boiling the potatoes.) The scalloped potatoes are done when the potatoes are tender. Let rest a few minutes before serving. Garnish with sliced scallions and bread crumbs.
  • All kids seem to love this dish (adults too). I keep this dish visually simple using only light colored ingredients, because kids seem to prefer it without green things (like the green parts of scallions), or black stuff (like ground pepper). However, you can jazz up the color if you like. In the episode, we topped this with bread crumbs - which you can do - but I keep the basic recipe gluten free.

3 lbs. of yukon gold potatoes, peeled and thinly sliced to 1/8″ thick pieces (I used a madoline)
1 1/2 cup 2% milk
2 tablespoon unsalted butter
2 tablespoons flour
3 garlic clove, minced
1 tablespoon fresh thyme
1 1/2 cup shredded aged white cheddar cheese
1/2 cup grated parmesan cheese
pinch of nutmeg
salt & pepper

Steps:

  • Preheat oven to 400°F.
  • Spray a 13×9″ baking dish with cooking spray. (I used the butter PAM)
  • To a small saucepan, add butter. Melt and add in garlic, sauté for 30 seconds then add in flour. Stir milk, nutmeg and fresh thyme.
  • Bring to a boil. Once mixture is thickened, remove from heat and add in 1/2 cup aged cheddar cheese. Whisk together until smooth. Set aside.
  • Arrange half of the potatoes to the prepared baking dish. Season with salt and pepper.
  • Cover with half the cream mixture, half the shredded white cheddar cheese and half the parmesan cheese.
  • Arrange the remaining potatoes. Season with salt and pepper.
  • Pour the rest of the milk mixture over the potatoes and finish with remaining white cheddar cheese and parmesan cheese.
  • Bake, uncovered, for 40 minutes or until potatoes are tender the top is slightly browned.

8 slices OSCAR MAYER Bacon
3 Tbsp. flour
1 cup milk
1 cup sour cream
3 Tbsp. chopped fresh chives, divided
1 cup KRAFT Shredded Triple Cheddar Cheese with a TOUCH OF PHILADELPHIA

Steps:

  • Cook potatoes in boiling water in saucepan 25 min. or just until tender; drain. Cool. Meanwhile, cook bacon as directed on package.
  • Heat oven to 350°F. Crumble bacon; reserve 1/4 cup. Cut potatoes into 1/4-inch-thick slices. Whisk flour and milk in large bowl until blended. Stir in sour cream. Add potatoes, remaining bacon and 2 Tbsp. chives; stir to evenly coat potatoes.
  • Pour into 2-qt. casserole sprayed with cooking spray; top with cheese.
  • Bake 30 to 35 min. or until heated through. Sprinkle with remaining chives and reserved bacon.

2 1/2 cups heavy cream
3 Idaho or other large, waxy potatoes, peeled and sliced thin
Salt and freshly ground pepper

Steps:

  • Preheat oven to 350 degrees. In an 8 by 8-inch baking dish, arrange a fourth of the potatoes, season to taste with salt and pepper and pour a fourth of the cream over all. Repeat with the remaining potatoes and cream, forming 4 layers. Bake for 50 minutes to 1 hour, or until the cream has been absorbed and the potatoes are browned. Remove from the oven and let sit 10 minutes before serving.

Steps:

  • In a 2 quart casserole combine butter and onion and microwave at high for approx 2-3 minutes or until butter melts and onion is slightly tender
  • Blend in flour, salt and pepper
  • Blend in milk and microwave uncovered for approx 5 - 7 minutes or until thickened (stir twice during this step)
  • Cut potatoes in half lengthwise then crosswise into thin slices. Add as many slices to the thickened sauce until you get the consistency you want. I like there to be some sauce so don't always use all of the potatoes. Experience will help you decide in the future
  • Cover and microwave at high for at least 15-20 minutes (Stirring twice) until the potatoes are as tender as you want. Let stand covered for 5 minutes
  • AU GRATIN
  • Follow the recipe above, stir in at least 1 cup of cheddar cheese to the thickened sauce until melted (taste and add more if you want it cheesy er) then add potatoes and follow the rest of the recipe

8 -10 medium potatoes, thinly sliced
2 medium onions, sliced
2 green peppers, diced
1/2 lb longhorn cheese
1/2 lb Velveeta cheese
1 can cream of mushroom soup
1 cup milk
salt and pepper

Steps:

  • Grease 13 x 9 pan.
  • Alternately layer potatoes, peppers, onions and cheeses.
  • Salt and pepper each layer until all ingredients are used.
  • Mix soup and milk; pour over top.
  • Bake covered at 350 degrees for 1 hour, then uncover and bake until done.
