BOB'S PIGS IN BLANKETS

Bob's Pigs in Blankets image

This is an old holiday favorite of my best friend's family. They make it every year. His family calls them pigs, but I think it is some variation of beef rouladen anyway, it's certainly delicious! I throw them in the slow cooker for about 5 hours instead of cooking them on the stove top for 3.

Provided by Amy H.

Categories     Other Appetizers

Time 3h35m

Number Of Ingredients 10

2 lb round steak
1 lb bacon
ground black pepper to taste
onion salt to taste
3 Tbsp kitchen bouquet
1 medium onion, sliced
1/4 c flour
2 c water
reserved pan drippings
round tooth picks

Steps:

  • 1. Partially freeze round steak. Trim off fat
  • 2. Cut up meat into 3/4" to 1" strips about 3 inches long. Pound strips to 1/8" thickness.
  • 3. Lay out strips on table, springle lightly with pepper and onion salt. Cut bacon in half legnthwise and then about 2 to 3 inches long. Lay a piece of bacon on each strip of round steak. Roll each strip up, end to end fairly tightly and push toothpick through to secure.
  • 4. Brown pigs in grease over medium high heat. (I use bacon grease)
  • 5. Dice onion and cook in pot until slightly glassy and add sifted flour. Add water stirring slowly to start gravy.
  • 6. Then put pigs back in pot. Add water to cover pigs and simmer 2 to 3 hours. Add flour or cornstarch to thicken gravy and kitchen bouquet to darken.

EASY PIGS IN A BLANKET

Easy Pigs in a Blanket image

Even as adults, we're always craving this kid favorite. Use puff pastry to encase chunks of gourmet sausage. Using sausage (as opposed to franks) really lets you play with flavor; try an array of types, from chicken and apple to spinach and feta.

Time 45m

Yield 8-10

Number Of Ingredients 6

1 12-oz package cocktail franks
2 tubes refrigerated crescent roll dough
2 tbsp. Dijon mustard
1 large egg
1 tsp. caraway seeds
Mustard, for serving

Steps:

  • Heat oven to 375°F. Line baking sheet with parchment. Unroll dough and brush with mustard. Cut each triangle in half lengthwise to create 2 skinnier triangles.
  • Place 1 frank on each wide end of dough, then roll up and arrange on prepared sheet in two concentric circles, making sure dough on both circles touches.
  • Beat egg with 1 Tbsp water, brush over dough and sprinkle with caraway seeds. Bake until golden brown, 18 to 22 min. Serve with mustard.

CARROT PIGS IN A BLANKET

Carrot Pigs in a Blanket image

Swapping a hot dog for a carrot takes a bold dose of spices to tame the vegetal sweetness and transform the carrot into a savory treat. Bake the puff pastry until really brown and crisp, so it is fully-cooked through and contrasts with the soft carrot.

Provided by Food Network Kitchen

Categories     appetizer

Time 1h30m

Yield about 18 carrot pigs in a blanket

Number Of Ingredients 12

6 to 7 medium carrots (about 12 ounces)
1 tablespoon unsalted butter
1 tablespoon pure maple syrup
1 tablespoon white miso paste
1/2 teaspoon ground coriander
1/4 teaspoon garlic powder
1/4 teaspoon smoked paprika
Kosher salt and freshly ground pepper
1 sheet frozen puff pastry (half of a 17-ounce package), thawed
Heavy cream or beaten egg, for brushing
Poppy seeds, for sprinkling
Dijon mustard and/or ketchup, for dipping

Steps:

  • Preheat the oven to 425˚ F. Trim and peel the carrots. If any sections are significantly wider than the others, peel them so the carrot is fairly even in width. Cut into 2-inch lengths and put in a large skillet. Add the butter, maple syrup, miso, coriander, garlic powder, paprika, a pinch each of salt and pepper and 1/2 cup water. Bring to a simmer, stirring occasionally to melt the butter and miso, then cover and reduce the heat to maintain a steady simmer. Cook, stirring occasionally, until the carrots are just tender in the center when pierced with a sharp knife and the liquid has reduced to a thick glaze, 12 to 15 minutes. Remove from the heat and let cool.
  • Roll out the puff pastry into a thin 11-inch square (dust your surface with flour if the pastry is sticking). Cut into 1/2- to 3/4-inch-wide strips (you'll need as many strips as you have carrot sticks). Wrap a strip of pastry around each carrot stick, overlapping the pastry as needed and leaving the ends of the carrot exposed. Put on an unlined baking sheet, seam-side down. Brush the tops with heavy cream or beaten egg and lightly sprinkle with poppy seeds and salt. Bake until the pastry is golden brown and crisp, 20 to 25 minutes. Serve warm or at room temperature with mustard and/or ketchup for dipping.

Provided by Bob Cooney

Categories     Beef

Time 3h30m

Number Of Ingredients 17

2 lb angus ground beef
1 lb pork, ground - spicy
1 1/2 c wild rice, cooked
1 1/2 c yellow onions - diced small
2 large cabbage heads - cored, and spines removed
2 large bags sour kraut - divided
16 oz cream cheese, room temperature - divided
8 large tomatoes, beef steak - skins removed, seeded, and diced
1 large tomato juice
1 Tbsp red pepper flakes - crushed
1 bunch fresh parsley - chopped
2 tsp course sea salt, or to taste
2 tsp fresh cracked black pepper
4 beef bouillon cubes
2 Tbsp paprika, hot - or your choice
2 tsp celery seeds
water, cold

Steps:

  • 1. Begin by removing the core from the cabbage heads, cut heads in half, place cabbage in a LARGE stock pot and simmer on low heat till cabbage becomes par-boiled and pliable. DO NOT OVER COOK the cabbage. Remove from water and set aside.
  • 2. In a LAGRE Dutch Oven, place ground beef, ground pork, onions, paprika, red pepper flakes, 2 beef bouillon cubes, celery powder, salt, black pepper, and parsley, sauté till meat is browned and onions are translucent. When meat is browned, pour 1 cup tomato juice and all the cooked rice into mixture. Take half of a bag of the sour kraut and add to the meat mixture.
  • 3. Allow entire mixture to reduce. Remove from the heat and allow to cool. Once reduced, and cooled, add 8 ounces of the cream cheese and combine to stiffen the mixture.
  • 4. At this point, You want the mixture to be a thick consistency mixture in order to place in the cabbage.
  • 5. Begin assembling the " Pigs " by placing 1 to 2 tablespoons of mixture on a cabbage leaf and rolling and folding the meat inside and, if needed, push a toothpick through to hold closed.
  • 6. Once You have all the meat mixture in cabbage leaves and rolled, set aside.
  • 7. Place the rest of the sour kraut and remaining cream cheese in a bowl and combine thoroughly. Take your LARGE Dutch Oven and place enough sour kraut on the bottom to give a thin layer for the " Pigs " as a " nesting " bed. Place the " Pigs " on top of the sour kraut " bed " one layer deep at a time, add more sour kraut/cream cheese mixture on top of each layer,. Place the diced tomatoes on each layer as You " build ", continue to layer in the Dutch Oven till You have all the " Pigs " placed.
  • 8. If You haven't already done so, pour the rest of the tomato juice in the Dutch Oven, and add enough water to cover entire contents with 1 inch above the last layer of " Pigs " !!
  • 9. Cover the Dutch Oven, place in the oven and cook for 3 hours at 350 degrees. Serve with a nice Salad and your favorite Crusty Bread. ENJOY !!!

  • 1. Whizz the black pudding in a food processor until smooth then add the egg and cream, and blend to a rich paste. Scrape into a bowl, stir in the sage, cover and refrigerate for up to one day.
  • 2. With a sharp knife, carefully stretch out the bacon rashers as if you’re going to wrap sausages for pigs in blankets at Christmas. Lay a sheet of cling film on your worktop and line up about four pieces of streaky bacon next to each other to form a rectangle. Spoon a quarter of the blended black pudding on to the bacon at a short end and, with a palette knife, spread it out to cover half the bacon.
  • 3. Peel the sausage skin from the sausages but keep them in a sausage shape. Place one on top of the black pudding then carefully roll the black pudding and bacon over the top of the sausage, using the cling film as a guide – a bit like how you might use a sushi mat to wrap up pieces of sushi. Wrap the whole thing in the stretched bacon and roll it up tightly in the cling film. Secure the ends by twisting the cling film and tying it into a knot. Repeat with the 3 remaining sausages. Refrigerate for at least 2 hours, but preferably overnight.
  • 4. To make the Cumberland sauce glaze, melt the butter in a saucepan over a medium–low heat, add the shallots and sweat gently for about 10 minutes until soft, stirring from time to time. Add the port and redcurrant jelly, raise the heat and bring to the boil. Turn the heat down to a simmer and cook for 10–15 minutes until the jelly has dissolved and the liquid has reduced a little. Add the ginger and mustard. Pour in the orange and lemon juices and add the zests. Stir, bring back to the boil and simmer until reduced by half. Stir in the green peppercorns and remove from the heat.
