RICOTTA PANCAKES WITH LEMON SYRUP

1 cup all-purpose flour
2 tablespoons sugar
1 teaspoon baking powder
3/4 cup whole milk
1 large egg, lightly beaten
Zest of 3 lemons, grated, plus more for garnish
1/2 cup (4 ounces) ricotta
Unsalted butter for the skillet
Lemon Syrup, recipe follows
1 cup sugar
1/3 cup water
Zest of 1 lemon
2 lemons, juiced
Pinch of kosher salt

Steps:

  • For the ricotta pancakes: Whisk together the flour, sugar, and baking powder in a large bowl. Whisk in the milk, egg, and zest until incorporated. Using a rubber spatula, gently fold in the ricotta.
  • Preheat a large, well-seasoned cast-iron or nonstick skillet over medium-high heat and add enough butter just to coat. When a drop of water thrown into the skillet bounces across the surface vigorously, add heaping tablespoon-sized dollops of batter, allowing enough room between each for them to spread slightly. Cook until the bubbles begin to pop and hollow out on the surface of the pancakes, adjusting the heat as necessary, about 2 minutes. Flip and cook for about 1 minute more.
  • Serve with Lemon Syrup.
  • In a small saucepan, add the sugar, water, lemon zest, lemon juice, and salt.
  • Bring to a boil and then simmer for 10 minutes. Let cool and strain.

1 cup fresh ricotta cheese
3/4 cup whole milk
3 eggs, separated
1/2 teaspoon vanilla extract
Finely grated zest of 1 orange
Butter or nonstick cooking spray, for cooking
Fig and Pistachio Compote, recipe follows
Confectioners' sugar, for garnish
Fresh mint sprigs, for garnish
12 ounces fresh figs, quartered
4 tablespoons unsalted butter
1/4 cup clover honey
1/4 cup lightly packed dark brown sugar
1/2 cup lightly toasted pistachios, coarsely chopped
Kosher salt and freshly ground black pepper

Steps:

  • Cook's Note: If you can't find fresh ricotta cheese, use the carton variety and strain through a fine mesh strainer for 1 hour before using.
  • Whisk together the flour, sugar, baking powder and salt in a bowl. Combine the ricotta, milk, egg yolks, vanilla and zest in a separate bowl and whisk until smooth.
  • Beat the egg whites in an electric mixer until stiff. Add the dry ingredients to the ricotta and milk, stirring gently until just combined. Whisk in a small amount of the egg whites to lighten the batter, then fold in the remaining whites.
  • Heat a cast-iron griddle or large nonstick saute pan over medium-high heat and brush the surface with butter or spray with nonstick cooking spray. Spoon a scant 1/3 cup of the batter onto the pan and cook the pancakes for 3 or 4 minutes. Flip, cooking until both sides are golden brown. Stack the pancakes and serve topped with the Fig and Pistachio Compote. Dust with confectioners' sugar and garnish with mint sprigs.
  • Add the figs, butter, honey, brown sugar, pistachios, and a pinch of salt and pepper to a cast-iron skillet set over high heat. Cook for about 2 minutes, stirring frequently, until the syrup begins to bubble and the figs just soften. Transfer to a plate to cool slightly.;

Quick Berry Jam, for accompaniment, recipe follows
1 pound fresh strawberries, tops cut off and halved
1/2 pint blackberries
1/2 pint raspberries
1/2 to 3/4 cup sugar, depending on sweetness
1 tablespoon fresh lemon juice

Steps:

  • Heat 2-inches vegetable oil in a large, wide, heavy saucepan until it registers 370 degrees F. Whisk together the flour, baking powder, zest, and salt in a bowl. Whisk together the ricotta cheese, eggs, granulated sugar, and vanilla in another bowl, then whisk into the flour mixture. Working in batches, gently drop in tablespoons of batter and fry, turning occasionally, until deep golden, about 3 minutes per batch. Transfer with a slotted spoon to paper towels to drain. Dust generously with confectioners' sugar, garnish with lemon zest and serve with Quick Berry Jam.
  • Combine the berries and 1/2 cup of the sugar in a bowl and coarsely mash with a potato masher. Let the berries sit at room temperature for 15 minutes to allow the berries to release some of their juice. Taste for desired sweetness and add remaining sugar if necessary. Transfer berries to a medium saucepan, add lemon juice and cook until thickened, about 5 minutes. Transfer to a bowl, cover and refrigerate until chilled or serve immediately: transfer to a bowl and set the bowl over an ice bath, stirring until jam is cooled.

2 tablespoons granulated sugar
1 tablespoon light brown sugar

1/2 teaspoon baking soda
3/4 teaspoon fine sea salt
2 large eggs
1 1/2 cups, plus 3 tablespoons buttermilk
3 tablespoons unsalted butter, melted and cooled, plus more for griddle
1/2 vanilla bean, split lengthwise and seeds scraped
1 teaspoon pure vanilla extract
Bourbon Molasses Butter, to top, recipe follows
Pure maple syrup, warmed
Confectioners' sugar, for garnish
Coarsely chopped toasted pecans, for garnish, optional
1/2 cup good quality bourbon, or more to taste
1 tablespoon sugar
1 cup (2 sticks) unsalted butter, slightly softened
3 tablespoons molasses
Kosher salt, to taste

Steps:

  • Preheat the oven to 200 degrees F.
  • Whisk together the flour, pecans, granulated sugar, light brown sugar, baking powder, baking soda, and salt in a medium bowl. Whisk together the eggs, buttermilk, butter and vanilla extract and vanilla bean in a small bowl. Add the egg mixture to the dry mixture and gently mix to combine. Do not overmix. Let the batter sit at room temperature for at least 15 minutes and up to 30 minutes before using.
  • Heat a cast iron or nonstick griddle pan over medium heat and brush with melted butter. Once the butter begins to sizzle, use 2 tablespoons of the batter for each pancake and cook until the bubbles appear on the surface and the bottom is golden brown, about 2 minutes, flip over and cook until the bottom is golden brown, 1 to 2 minutes longer. Transfer the pancakes to a platter and keep warm in a 200 degree F oven.
  • Serve 6 pancakes per person, top each with some of the bourbon butter. Drizzle with warm maple syrup and dust with confectioners' sugar. Garnish with fresh mint sprigs and more toasted pecans, if desired.
  • Bourbon Molasses Butter:
  • Combine the bourbon and sugar in a small saucepan and cook over high heat until reduced to 3 tablespoons, remove and let cool.
  • Put the butter, molasses, salt and cooled bourbon mixture in a food processor and process until smooth. Scrape into a bowl, cover with plastic wrap and refrigerate for at least 1 hour to allow the flavors to meld. Remove from the refrigerator about 30 minutes before using to soften.

1/2 teaspoon ground nutmeg
1/4 teaspoon salt
2 tablespoons sugar
1 cup ricotta cheese
2 eggs
2/3 cup milk
1 lemon, zested and juiced
Butter, for griddle

Steps:

  • Combine flour, baking powder, nutmeg, salt, and sugar in a small bowl.
  • Whisk together the ricotta, eggs, milk, lemon juice and zest in a large bowl.
  • Add the flour mixture into the wet ingredients and mix until just combined.
  • Meanwhile, heat a pan or griddle over medium heat. When you more ready to start, Brush the pan with butter.
  • Pour 1/4 batter into the pan in as many spots as you can fit. Spread each portion into a 4-inch round.
  • Cook until the edges are set and the bottom is golden brown, about 2 minutes. Flip and repeat.

Meyer Lemon Ricotta Crepes with Candied Almonds image

1 cup slivered almonds
1/4 cup granulated pure cane sugar
1 cup fresh ricotta, drained
Finely grated zest of 1 Meyer lemon (or a combination of orange and lemon zest)
Finely grated zest of 1 Meyer lemon (or a combination of orange and lemon zest)
3 tablespoons confectioners' sugar
1/4 cup heavy cream, very cold
4 large eggs
1 1/2 cups whole milk
1/2 teaspoon finely grated Meyer lemon zest
1/2 stick unsalted butter, melted and cooled
Pinch fine sea salt
1 cup all-purpose flour, sifted
Nonstick cooking spray or clarified butter, for the pan
Confectioners' sugar

Steps:

  • For the candied almonds: Line a baking sheet with parchment paper. Heat a medium nonstick skillet over medium heat. Add the almonds, sugar and a splash of water and stir to combine. Cook until the sugar has melted and the nuts begin to caramelize, stirring occasionally, about 10 minutes. Spread the nuts out on the parchment and cool on a baking rack until the sugar hardens, about 15 minutes.
  • For the ricotta: Stir together the ricotta, zest, sugar and cream in a bowl until light and fluffy.
  • For the crepes: Whisk the eggs in a medium bowl until smooth. Add the milk, zest, butter and salt and whisk until combined. Add the flour and whisk until smooth. Cover and refrigerate for at least 30 minutes and up to 1 day.
  • Preheat the oven to 200 degrees F.
  • Heat a 6- to-8-inch nonstick pan over medium heat; spray with nonstick cooking spray or brush with clarified butter. Ladle in a scant 1/4 cup of the crepe batter; swirl the pan and cook until the bottom sets and turns light golden brown, 30 to 45 seconds. Flip and continue cooking until the bottom is light golden brown, another 20 seconds or so. Transfer to a plate. Repeat and stack, keeping the cooked crepes warm in the oven.
  • Spoon a heaping tablespoon of the ricotta on each crepe, roll up the crepes and serve with a sprinkling of candied almonds.

Cassis
1 tablespoon chopped fresh mint leaves
1 1/2 cups unbleached all-purpose flour
3 tablespoons cane sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
2 large eggs, separated
2 tablespoons vegetable oil
1 1/3 cups buttermilk
1 tablespoon plus 1 teaspoon lemon zest
1/8 teaspoon vanilla extract
Pinch cream of tartar
2 cups fresh blueberries
1 cup fresh ricotta
2 tablespoons whole milk
1 stick butter, (8 tablespoons) cut into pats

Steps:

  • For the syrup: In a medium saucepan add blueberries, maple syrup, sugar, cinnamon stick, and lemon zest. Bring to a simmer over low heat, and cook for about 15 minutes. Remove from the heat and chill overnight. Strain; serve warm or at room temperature.
  • For the compote: Combine blueberries, sugar, butter, cinnamon stick and vanilla bean in a small saucepan and bring to a boil over high heat. Reduce heat and simmer to dissolve the sugar. Remove from the heat and stir in the cassis. Discard the vanilla bean and cinnamon stick. Serve at room temperature, folding in the chopped mint just before serving.
  • For the pancakes: Mix together the flour, sugar, baking powder, baking soda and salt in a large bowl and set aside. In a separate bowl, combine the egg yolks, oil, buttermilk, lemon zest and vanilla extract.
  • Make a well in the center of the dry ingredients and pour in the liquid mixture. Mix together until flour is just incorporated.
  • In a small bowl, using a hand-held electric mixer, beat egg whites and cream of tartar until soft peaks form. Fold the egg whites into the batter just until incorporated. Let sit for 15 minutes, then gently fold in the blueberries.
  • In a small bowl mix the ricotta and milk. Reserve for garnish.
  • Preheat oven to 200 degrees F.
  • Heat a nonstick pan or cast iron griddle over medium heat. Add a pat of butter and heat until the butter just begins to sizzle. Scoop a scant 1/4 cup of the batter into the pan or onto the griddle and cook until bubbles appear on the top surface and the bottom is golden brown, about 1 to 1 1/2 minutes. Flip over and cook until the bottom is lightly golden brown, about 45 seconds. Remove to a baking sheet and keep warm in a low oven. Repeat with remaining batter. Serve with syrup and compote and garnish with a dollop of ricotta.

4 granny smith apples or 4 braeburn apples, peeled, cored and quartered
1 cup granulated sugar
1/4 cup water
3/4 cup heavy cream
1 cinnamon stick
3 tablespoons calvados or 3 tablespoons apple jack brandy
1 teaspoon grated lemon zest

Steps:

  • Preheat oven to 450 degrees F.
  • Whisk together the eggs, sugar and salt until smooth.
  • Whisk in the milk, heavy cream and vanilla extract.
  • Add the flour and whisk until smooth.
  • Heat butter in a 9-inch nonstick pan or a cast iron pan, until melted.
  • Stir in the brown sugar and cinnamon and cook until the sugar has completely melted.
  • Add the apples and cook until slightly soft, about 8 minutes.
  • Remove from the heat and stir in the lemon zest.
  • Pour the batter over the apples and place the pan in the oven.
  • Bake until the edges are brown and puffy, about 16-18 minutes.
  • Carefully invert the pancake onto a serving platter.
  • Dust with confectioners' sugar and drizzle with some of the caramel sauce.
  • Caramel Sauce:.
  • Place sugar and water in a medium saucepan and bring to a boil over high heat (do not stir), swirling the pot occasionally to even out the color, until amber in color, 10 to 12 minutes.
  • While the caramel is cooking, place the heavy cream and cinnamon stick in a small pan and bring to a simmer over medium heat.
  • Remove from heat and keep warm.
  • When the caramel has reached the desired color, remove the cinnamon stick from the heavy cream and slowly begin adding the warm cream to the caramel and whisk until smooth.
  • Remove from the heat and stir in the brandy.

I've been having this love affair with Ricotta Cheese lately. After watching Bobby Flay make some yummy Blueberry & Ricotta Pancakes, I thought I'd incorporate it in my favorite pancake....that my husband and kid hate (they don't like the lemon).

1 cup frozen raspberries
1/4 cup sugar
1 tablespoon lemon juice, freshly squeezed
1 lemon, zested
1 1/3 cups flour
1 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
8 ounces ricotta cheese, the freshest you can find
1/2 cup milk
1 large egg
1 tablespoon canola oil
2 tablespoons mint, freshly chopped

Steps:

  • To make the raspberry sauce, combine the Raspberries, 1/4 cup sugar, and 1 TBS Lemon Juice in a sauce pan over medium heat. Cook until a sauce forms. I like mine chunky!
  • To make the pancakes, combine the flower, baking powder, baking soda, and salt in a large bowl. Add the milk, oil, egg, and lemon zest.
  • Heat a non-stick griddle with non-stick cooking spray over medium heat. Pour 1/4 cupfuls of the batter onto the griddle. Add a few spoonfuls of the Ricotta cheese to the pancakes.
  • Cook until the pancake bubbles (about 2-3 minutes) and flip. Cook until golden brown (another 2-3 minutes). The recipe should make about 12 small pancakes.
  • Serve with the Raspberry Sauce and a sprinkle of fresh mint.
