I received this recipe from an elderly Southern Lady that worked for me 20 years ago, long before Sausage Gravy became popular around here. I have received many compliments when I serve this. I would definitely use a sage sausage. We like Bob Evans the best.

Ingredients

1 lb ground sausage (we prefer sage sausage)
2 tablespoons flour
1 cup milk
1 cup water
1/4 cup brewed coffee
salt and pepper

Steps:

Place Sausage in a skillet (cast iron is best) and brown.
Add flour and brown.
Add milk and water.
Simmer until it is the thickness you desire.
Stir in the coffee to the mixture.
If to thick, add more milk.
Serve over your favorite biscuits.

I found this one on a complimentary recipe card at a Bob Evans restaurant. It's a little different and the kids enjoyed it.

Ingredients

1 lb sausage
1/2 cup grated monterey jack cheese
1/2 cup oatmeal
1/2 cup ketchup, divided
1/4 cup finely diced onion
1 egg

Steps:

Preheat oven to 350 degrees.
In medium bowl, add sausage, cheese, oatmeal, 1/4 cup ketchup, onion and egg.
Mix thoroughly until well combined.
Shape into a loaf and place in a greased 9"X4" loaf pan.
Spread remaining 1/4 cup ketchup on top.
Bake 60-70 minutes, or until done.

1 large onion, diced
3 stalks celery, diced
1 (14 ounce) package cubed stuffing
1 teaspoon poultry seasoning
2 1/2 cups chicken broth
1/2 cup melted butter

Steps:

In a large skillet over medium heat, crumble sausage. Add onion and celery and cook, stirring occasionally until sausage is brown. In a large bowl, place cubed stuffing. Add sausage mixture. Sprinkle with poultry seasoning. Pour broth and butter over the top and toss to combine. Spoon mixture into a 9x13 inch baking dish; cover. Bake at 350 degrees F for 45 minutes.;
