FRESH BLUEBERRY PIE
Steps:
- Preheat the oven to 400 degrees F. Line a sheet pan with parchment paper.
- Mix the blueberries, the 1/2 cup of sugar, the flour, lemon zest, lemon juice, and cassis in a large bowl. Carefully ease one pie crust into a 9-inch pie plate, making sure not to stretch the dough at all, or it will shrink as the pie bakes. With a sharp knife, cut the excess dough off at the edge of the pie plate. Spoon the blueberry mixture into the pie shell, scraping the bowl with a rubber spatula to be sure you have all the juices.
- Brush the edge of the crust with the egg wash. Carefully lay the second crust on top, again easing -- not stretching -- it onto the pie. Cut the excess dough off at the edge of the pie plate. Press the two edges together with a dinner fork. Brush the top crust with the eggs wash, cut three slits for steam to escape, and sprinkle with sugar.
- Place the pie on the prepared sheet pan and bake in the middle of the oven for 45 to 50 minutes, until the filling is very bubbly and the crust is nicely browned. Allow to cool and serve warm or at room temperature.
- Cut the butter in 1/2-inch dice and return it to the refrigerator while you prepare the flour mixture. Place the flour, sugar, and salt in the bowl of a food processor fitted with a steel blade and pulse a few times to mix. Add the butter and shortening. Pulse 8 to 12 times, until the butter is the size of peas. With the machine running, pour the ice water down the feed tube and pulse the machine until the dough begins to form a ball. Dump out onto a floured board and roll into a ball. Wrap in plastic wrap and refrigerate for 30 minutes.
- Cut the dough in half. Roll each piece on a well-floured board into a circle at least 1 inch larger than the pie pan, rolling from the center to the edge, turning and flouring the dough so it doesnt stick to the board. (You should see bits of butter in the dough.) Fold the dough in half, ease it into the pie pan without stretching at all, and unfold to fit the pan. With a small sharp paring knife, cut the dough 1 inch larger around than the pan. Fold the edge under and crimp the edge with either your fingers or the tines of a fork.

- To make crust: Stir together 1 cup flour, 1 tablespoon sugar, and salt in a medium bowl.
- Melt 1 tablespoon butter in a small saucepan over low heat.
- Cook, swirling the pan, until the butter turns a nutty brown, about 30 seconds.
- Cover loosely with with foil and set in the middle of the oven, with a baking sheet placed on the rack below to catch any drippings.
- Bake for 55 to 65 minutes, or until the berries are juicy and bubbling.
- Frozen berries will take 10 minutes longer to cook.
- Uncover the pie, sprinkle evenly with the reserved streusel topping and bake for 12 to 15 minutes longer, or until the streusel is golden.
- Cool on a wire rack for 30 minutes, then cool completely in the refrigerator, about 2 hours.

- Preheat the oven to 350 degrees F. Unfold one of the pie crusts and press into a 9-inch pie dish.
- Combine the berries with the flour in a large bowl and toss to coat. Add the sugar, a squeeze of lemon and a dash of salt. Toss to combine. Pour the berries into the prepared pie dish.
- Cut the remaining pie crust into 1-inch-wide strips. Arrange the strips on top of the pie in a criss-cross pattern to form a lattice. Bake until the filling is bubbly, 45 to 60 minutes. Serve.
BLUEBERRY WALNUT PIE
This takes a couple hours to chill. The crust on this pie is really good, and thick. It will fill up your pie plate so press down as much as you can. I used a 9.5 inch pie plate so I was left with about a cup of filling that wouldn't fit...I saved it for a later breakfast topped with some granola. Two 15 oz cans of blueberry's work perfectly for this. :) You can easily get 16 slices from this pie, it is very thick and rich.

- Preheat oven to 350 degrees.
- Combine graham cracker crumbs, 1/2 cup finely chopped walnuts, butter, honey and cinnamon in large bowl and mix well. Press into 10-inch deep dish pie pan.
- Bake 10 minutes. Let cool while preparing filling.
- Filling:.
- Combine egg yolks, 1 cup blueberry juice, 1 cup whipping cream, sugar and cinnamon in 2-quart saucepan.
- Cook over medium heat, whisking constantly, until mixture coats back of spoon or registers 180*, about 8 to 10 minutes, do not boil.
- Immediately pour into large bowl of electric mixer.
- Add lemon juice and vanilla and beat on low speed until yolk mixture begins to cool, approximately 3 to 5 minutes.
- Meanwhile, combine 1/4 cup blueberry juice and gelatin in small saucepan and stir over low heat until gelatin is dissolved, about 2 minutes.
- Add small amount of cooling yolk mixture and blend well.
- Slowly add gelatin mixture to yolk mixture and blend well.
- Refrigerate, stirring frequently, until mouse just begins to thicken and set.
- Whip 1 cup cream in large bowl of electric mixture until stiff peaks form.
- Fold cream and blueberries into mousse.
- Spoon into prepared crust. Cover entire top of pie with toasted walnuts.
- Refrigerate until completely set, about 2 to 3 hours. Top each serving with whipped cream.

ANGEL'S SOUR CREAM STREUSEL BLUEBERRY PIE
Southeast Alaska has tons of wild blueberries and I love to pick them. I'm not a fan of traditional blueberry pie but my friend Angel shared this recipe and now I'm hooked.

- Preheat oven to 400 degrees.
- Mix filling ingredients except blueberries.When smooth, gently fold in blueberries.
- Pour into pie shell. Place pie on cookie sheet and put into oven for 25 minutes.
- Mix dry Streusel topping ingredients. Cut butter into topping ingredients with a pastry blender or cut butter into dime size pieces and mix. Topping should be crumbly not a paste.
- Sprinkle topping over pie and return to oven for 10 - 15 minutes until bubbly and golden brown.
- Allow to cool before serving.
- Notes: Taste your blueberries before adding sugar to filling. If they are sweet, cut back if they are sour add a tablespoon or two. I use a deep dish pie pan. Filling will puff up so filling should be above top of crust. Most people chill this overnight but I prefer it warm so chill if desired.

- Set oven to 350 degrees.
- Butter a 13 x 9-inch baking dish.
- For the topping; whisk together the flour, sugar, lemon zest and cinnamon.
- Add in 1/2 cup plus 2 tablespoons cold butter pieces; using fingertips mix together until moist clumps form.
- Add/mix in the nuts (can be made ahead and chilled in a covered container until ready to use).
- For the filling; place the berries in a large bowl.
- Drizzle the lemon juice over the berries, then toss berries lightly to coat with lemon juice.
- In a small bowl mix together the sugar, cornstarch, cinnamon and nutmeg; sprinkle over the berries; toss gently to blend.
- Transfer/spread the berry mixture to prepared baking dish.
- Sprinkle the topping mixture over evenly.
- Bake for about 45-50 minutes, or until the filling is bubbly and thick and topping is golden brown.
- Cool slightly before serving.
- Delicious!

STREUSEL TOPPED PEAR AND BLUEBERRY PIE
Steps:
- For crust:
- Blend all purpose flour, sugar and salt in processor. Add chilled butter pieces and cut in using on/off turns until mixture resembles coarse meal. Add 3 tablespoons ice water and process until moist clumps form, adding more ice water by teaspoonfuls if dough is dry. Gather dough into ball; flatten into disk. Wrap in plastic and refrigerate 30 minutes. (Can be prepared 2 days ahead. Keep refrigerated. Let soften slightly at room temperature before rolling out.)
- Roll out dough on lightly floured surface to 12-inch round. Transfer to 9-inch-diameter glass pie dish. Fold edges under, forming high-standing rim 3/4 inch above dish sides; crimp edges decoratively. Freeze crust 25 minutes.
- Preheat oven to 350°F. Bake crust until light golden brown, about 30 minutes. Cool while preparing filling. Maintain oven temperature.
- For filling:
- Combine pear pieces, 3 tablespoons sugar, 2 tablespoons orange juice and salt in large nonstick skillet. Cook over medium heat until pears are tender but still hold their shape, stirring often, about 6 minutes. Transfer pear mixture to large bowl; cool to room temperature. Add blueberries, flour and remaining 6 tablespoons sugar to pears; toss gently to blend.
- Transfer filling to cooled pie crust, mounding filling slightly in center. Sprinkle with Walnut-Streusel Topping. Bake pie until juices bubble thickly, fruit is tender and streusel topping is golden brown, about 1 hour 5 minutes. Cool pie on rack until lukewarm. Cut pie into wedges and serve.
