1/2 cup refried beans
1 can (4 ounces) chopped green chilies, drained
1/2 teaspoon dried oregano
1/2 teaspoon ground cumin
1/4 teaspoon salt
4 flour tortillas (8 inches)
2 tablespoons butter, melted
1-1/3 cups shredded Mexican cheese blend
Paprika

Steps:

  • In a large skillet, cook the beef over medium heat until no longer pink; drain. Stir in the beans, chilies, oregano, cumin and salt. Cook over medium-low heat for 3-4 minutes or until heated through. , Brush one side of each tortilla with butter. Spoon 1/2 cup of the meat mixture over half of unbuttered side. Sprinkle with 1/3 cup cheese; fold in half. , Place on a lightly greased baking sheet. Sprinkle with paprika. Bake at 475° for 10 minutes or until crisp and golden brown. Cut into wedges.

These super delicious sheet pan ground beef quesadillas are the perfect dinner. It is extremely easy to make and full of fantastic flavor.

1 pound ground beef
1 onion (diced)
1 green bell pepper (diced)
15 ounces black beans (1 can, rinsed and drained)
1 ounce taco seasoning (1 packet)
1 cup salsa
8 large flour tortillas
2 cups shredded Mexican cheese blend

Steps:

  • Preheat oven to 425 degrees.
  • In a large skillet, brown ground beef, onion, and green bell pepper until beef is no longer pink (about 8 minutes). Drain, then add in beans, taco seasoning, and salsa. Let simmer for about 5 minutes to let the flavors meld together.
  • Lightly spray a cookie sheet with non-stick cooking spray. Place 6 tortillas around the edges of the pan so that half of each tortilla hangs off the pan and the edges are completely covered. Place another tortilla in the center of the pan so that the baking sheet is completely covered by tortillas.
  • Top tortillas with ground beef mixture and sprinkle with cheese, making sure that the meat and cheese goes all the way to the edges of the pan.
  • Place another tortilla in the center of the pan, on top of the meat and cheese filling. Now fold each tortilla into the center, completely covering all of the meat and cheese filling. Spray top of tortillas with non-stick cooking spray.
  • Place a second cookie sheet on top of quesadilla (to help it hold it's shape while it bakes).
  • Cook in preheated oven for 20 minutes, then remove top baking sheet and continue to cook for another 10-15 minutes or until top is golden and crispy
  • Slice into pieces and serve with desired toppings.

1-1/2 cups shredded lettuce
Chopped fresh tomatoes, optional

Steps:

  • In a small bowl, combine the sour cream, cilantro and lime juice; set aside. Heat barbecued beef according to package directions. I did use just a little more cumin and chill powder than called for but I like those two flavors together. I also spray the outside of my quesadillas with cooking spray so they get nice and crispy.

1 cup frozen corn or 1 cup corn, from a can
1/4 cup chopped green onion
2 teaspoons chili powder
1/2 teaspoon salt

4 (8 -10 inch) flour tortillas
5 ounces shredded monterey jack pepper cheese
1/4 cup thick'n chunky salsa
1/4 cup sour cream

Steps:

  • In medium skillet, cook ground beef, corn and onions over medium-high heat until beef is thoroughly cooked, stirring frequently. Drain.
  • Stir in chili powder, salt and cumin. Cook 1 minute.
  • Spray large skillet with nonstick cooking spray. Heat over medium heat until hot. Place 1 tortilla in skillet. Layer tortilla with 1/3 cup cheese and 1/4 cup of beef mixture. Fold tortilla over. Cook over medium hear for 2 minutes. Carefully turn quesadilla; cook an additional 2 minutes.

  • In a large skillet, cook ground beef over medium heat until no longer pink. Drain any excess grease. Stir in fried beans, green chilies, oregano, cumin, chili powder, and salt. Cook over medium-low heat for 3-4 minutes or until heated through.
  • Heat another skillet to medium-low heat. Brush one side of a tortilla with butter, place butter side down into the pan. Evenly sprinkle cheese over the top of the entire tortilla. On one half on top of the tortilla, add some of the meat mixture.
  • Cook until the bottom has browned and the cheese has melted. With a spatula fold the half of the tortilla without the meat mixture over the half with the meat mixture and press down. Remove from the pan.
  • Repeat with remaining tortillas.
  • Cut into wedges and serve.
