SUGAR-FREE CINNAMON BLUEBERRY SAUCE

All purpose sugar free blueberry sauce with a hint of cinnamon! Add to pancakes, waffles, yogurt, ice cream or use it as a filling for pie!

13 ounce fresh blueberries (about 3 cups)
1/4 cup water
2 tablespoons Truvia (or another sugar alternative)
1 teaspoon cinnamon
1 tablespoon lemon juice, fresh
1/2 teaspoon almond extract
1-2 Tablespoons cornstarch (optional)
1-2 Tablespoons juice from blueberries

Steps:

  • Place clean blueberries in a medium saucepan with 1/4 cup of water over medium heat. Fold in Truvia, cinnamon and lemon juice. Bring to a boil. In a separate small dish whisk together until smooth the berry juice and cornstarch (optional). Add the slurry to the berry mixture and cook until the sauce thickens up (3-4 minutes). Remove from heat and stir in almond extract.

1 1/2 pints fresh blueberries, rinsed
1 cup vanilla sugar
1 tablespoon fresh lemon juice

Steps:

  • Combine the blueberries and vanilla sugar in a large heavy saucepan. Add 1 cup water and the lemon juice and bring to a boil over high heat, stirring occasionally. Reduce the heat and simmer for 15 minutes, or until the mixture begins to thicken.
  • Remove from the heat and strain through a fine sieve. Cool to room temperature, cover and refrigerate.

This two ingredient blueberry sauce gets all its sweetness from the berries. If you desire a sweeter sauce, use your choice of fruit juice instead of the water. Do not continue to cook the sauce after adding the arrowroot powder, as this will breakdown the thickening power of the arrowroot.

Yield Makes about 2 cups

Number Of Ingredients 4

2 cups fresh or frozen blueberries (no need to thaw before use if frozen)
¼ cup water OR apple juice/orange juice, if you want a sweeter sauce
2 tsp. arrowroot powder, find it here
1 Tbs. water

Steps:

  • Place the berries and ¼ cup water (or juice) in a small saucepan over medium heat. Cook for 5-10 minutes, until bubbling. Slightly smash some of the blueberries with the back of a fork.
  • In a small bowl, stir together the arrowroot powder and 1 Tbs. of water. Remove the saucepan of berries from the heat. While stirring constantly, add the arrowroot mixture into the blueberry mixture. Let cool until no longer hot and serve. The sauce with become even thicker when chilled.
  • Store the sauce in the fridge for a few days.

NO ADDED SUGAR BLUEBERRY SAUCE



No Added Sugar Blueberry Sauce image

2 cups fresh or frozen blueberries
1/2 cup water
2 tablespoons stevia or monk fruit (can use coconut sugar )
1 teaspoon cinnamon
1/2 teaspoon vanilla or almond extract
2 teaspoons arrowroot powder
1-2 tablespoons cold water

Steps:

  • In a medium saucepan over medium heat, add blueberries, 1/2 cup of water, and sweetener. Stir frequently, cook for 5-10 minutes until bubbling.
  • Smash some of the blueberries with a fork if desired
  • In a small bowl, whisk the arrowroot with 2 tablespoons of cold water.
  • Remove the saucepan from heat and slowly stir the arrowroot mixture into the blueberries.
  • If needed, simmer the sauce for about 5 minutes to thicken.
  • Remove from heat and gently stir in extract and serve.

1/2 cup water
1/3 cup honey
1 tablespoon lemon juice

Steps:

  • In a saucepan, combine blueberries, 1/2 cup water, honey, lemon juice, cinnamon and nutmeg, if using, to taste.
  • Bring to a boil; reduce heat to a simmer and cook for 5 minutes, stirring occasionally.
  • Mix cornstarch with the 2 Tablespoons water.
  • Stir cornstarch mixture into the blueberry mixture; simmer gently, stirring occasionally, until sauce thickens.
