1/2 cup blueberry preserves
1 1/2 cups lowfat plain Greek yogurt

Steps:

  • Put the blueberry preserves into a quart-size heavy resealable plastic food bag and squeeze it into one corner. Put the yogurt into the bag and squeeze it gently with your hands to lightly mix; swirls of blueberry throughout the yogurt are fine.
  • Arrange 6 mini paper drink cups on a small baking sheet. Using scissors, cut about 1/2 inch off the corner of the bag and squeeze the swirled yogurt mixture into the cups, filling them about two-thirds full. Gently insert a 6-inch lollipop stick into each cup. The thickness of the yogurt should help the sticks stand upright.
  • Freeze for at least 2 hours before peeling off the paper cups and serving.

Steps:

  • In a blender, puree blueberries with water, sugar, and fresh lemon juice. Strain mixture through a fine-mesh sieve, pressing with a rubber spatula to release as much liquid as possible; discard solids. Add water if needed to yield 3 cups.
  • Divide among ten 2 1/2 ounce molds; insert wooden sticks, and freeze until solid, about 3 hours (and up to 1 week). To remove, dip bottom of molds in warm water for 2 to 3 seconds.

⅓ cup fresh basil (optional)
⅓ cup honey

Steps:

  • In a blender or a food processor, add the blueberries, basil and honey. Turn on high and blend until the mixture is smooth, about 1-2 minutes.
  • Pour the mixture into popsicle molds and place the wooden popsicle sticks in about ¾ way down. If you want the popsicles to be completely smooth, you can pour the mixture through a thin sieve before pouring into the molds.
  • Place in the freezer for at least 3 hours to set. To easily remove them from the molds, run the outsides of the molds under hot water for a few seconds to loosen them.

This is all very easy to throw together, but the freezing time is 10 hours. So it's a great make ahead dessert. The suggested moulds are silicone baking moulds or paper cups. Makes 6 - 8oz pops or 8 - 6 oz pops.

10 graham crackers

  • Freeze for 2 hours.
  • Pour the cheesecake mixture into each mould leaving 1/2 inch at the top of each mold for the crust,.

  • Press the crust into the pop mould (if the crust is not sticking add more water).
  • Freeze for at least 4 hours.
  • Remove from the freezer and let stand for 5 minutes before removing the pops from the moulds.

1 fresh rosemary sprig
1 lemon zest strip (2 inch)
1 tablespoon lemon juice

2-1/4 cups frozen whipped topping, thawed
10 freezer pop molds or 10 paper cups (3 ounces each) and wooden pop sticks

Steps:

  • For lemon syrup, place first 4 ingredients in a small saucepan; bring to a boil, stirring occasionally. Remove from heat; let stand, covered, 10 minutes. Remove rosemary and lemon zest. Stir in lemon juice; cool completely., Place blueberries and sugar in another saucepan; cook and stir over medium heat until berries pop, 5-7 minutes. Cool completely., Add whipped topping to the lemon syrup, whisking to blend. Transfer half the mixture to a pastry bag. Pipe into molds. Layer with blueberries. Pipe the remaining whipped topping mixture over top. Close molds with holders. If using paper cups, top with foil and insert sticks through foil., Freeze until firm, about 4 hours.
