This is an excellent way to can blueberries for a quick and easy pie. It's virtually identical to the costly canned pie filling found in the grocery store.

7 quarts fresh blueberries
4 ½ cups white sugar
3 tablespoons lemon juice
1 tablespoon salt
10 cups water, divided
1 cup cornstarch

Steps:

  • Place the blueberries, sugar, lemon juice, salt, and 8 cups of water into a large, non-reactive pot, and bring to a boil over high heat. Dissolve the cornstarch in the remaining 2 cups of water, and stir into the boiling blueberries until thickened. Cook and stir for 2 minutes more.
  • Ladle into 7 sterilized quart jars with lids and rings. Process in a pressure canner for 5 minutes at 5 pounds of pressure. Remove jars from the canner and place on cloth-covered or wood surface, several inches apart, until cool. Once cool, press top of each lid with finger, ensuring that seal is tight (lid doesn't move up or down at all). Sealed jars can be stored for up to a year.

1/2 cup bottled lemon juice
1 lemon, rind of, cut into thin strips
1 teaspoon nutmeg
1 teaspoon mace
5 1/2 cups sugar
6 1/2 cups water

Steps:

  • Clean the blueberries carefully and drain.
  • Combine the lemon juice, lemon rind, nutmeg, mace, sugar, and water; cook until the mixture begins to boil.
  • Fold in the blueberries and cook 1 minute more.
  • Ladle mixture into hot jars. Release the air bubbles by running a knife along the side.
  • Clean the rims of the jars, seal, and process in a water bath for 30 minutes.

1 (21 oz.) can of blueberry pie filling
3 to 3½ cups of fresh or frozen blueberries
1 tablespoon of lemon juice
½ teaspoon of almond extract (optional)
½ teaspoon of ground cinnamon
pinch of nutmeg
pinch of allspice
¼ teaspoon of salt
½ to 1 cup of sugar (brown, granulated, or a mixture of the two)
¼ cup of tapioca flour (or tapioca pearls ground into powder)
2 tablespoons of unsalted butter
2 (9-inch) pie crusts for double-crust or 1 crust for open-top pie
2 egg whites
1 tablespoon of water
finishing sugar (optional)

Steps:

  • PREHEAT the oven to 400° F (200° C). Heat an additional 10 minutes after the oven reaches 400° F (200°C).
  • DUMP a can of blueberry pie filling into a medium bowl.
  • STIR in the fresh or frozen blueberries.
  • JUICE the lemon and pour the lemon juice and almond extract (if using) into the berries.
  • SPRINKLE in the spices and salt.
  • ADD half the sugar and stir until everything is combined. Taste and add additional sugar if needed.
  • GRIND the tapioca pearls into powder and mix into the pie filling.
  • SET ASIDE for 15 minutes so the tapioca can soften.
  • PREPARE the pie crust. Carefully unroll the premade crusts. Place one crust in the pie tin. Place the pie pan on a cookie sheet to catch any blueberry juice overflow as the pie bakes.
  • POUR the blueberry pie filling into the pie shell. Smooth it until it is evenly distributed in the pie pan.
  • DOT the filling with several pats of butter.
  • TOP the pie with the second refrigerated pie crust. Press the edges of the top and bottom crust together with a fork. Prick a few holes in the top crust for ventilation.
  • MAKE an egg wash by whisking 1 tablespoon of water into 2 egg whites OR 1 whole egg.
  • BRUSH the egg wash on the top pie crust. Sprinkle with finishing sugar (optional).
  • COVER the edges of the pie with aluminum foil so the crust does not burn during baking.
  • BAKE the pie for 40 to 50 minutes or until the pie filling is bubbly and the crust is lightly browned.
  • REMOVE the hot blueberry pie from the oven and allow it to cool for 15 minutes before cutting.
  • SERVE with a scoop of vanilla ice cream.

This Blueberry Crumble Pie Recipe is easy to make, and uses Lucky Leaf Pie Filling! It's simple, delicious, and perfect for the holidays!

1 1/4 cups flour
1/2 teaspoon salt
1/4 cup butter (chilled and cut into small bits)
1/2 cup shortening (chilled)
1/4 cup ice water
31 ounces Lucky Leaf Blueberry Pie Filling ((1 1/2 cans))
1/2 teaspoon cinnamon
1/2 teaspoon ground cloves
1/2 teaspoon nutmeg
1/2 cup brown sugar
1/2 cup flour
3/4 cup oats
1 1/2 teaspoons cinnamon
1/2 cup butter (slightly melted)

Steps:

  • Combine the flour and salt together in a medium size mixing bowl. Using a fork, mash in the butter and shortening. Continue to cut into the butter and shortening, creating large chunks of pastry dough. (It's okay if there are a few visible butter chunks, they will bake well with the crust).
  • Slowly pour in your 1/4 cup of water into the dough and continue to stir, making it a smoother dough.
  • Transfer the pie dough to a prepared surface, sprinkled with flour. Fold the dough a few times on the floury surface, so that it is not sticky, but you don't want it dry and crumbly. A good cookie dough consistency is what you are going for.
  • Wrap the dough in saran wrap, in a ball shape, and place in your fridge for about 2-3 hours.
  • After the dough has refrigerated, roll it out to the size of your pie pan (usually 8 or 9 inches.) You can make a decorative edge, but the crumble goes out to the sides, that it won't really be seen. Set your prepared dough, in the pan, aside until you are ready to fill it.
  • In a large bowl, combine your Lucky Leaf Blueberry Pie Filling, cinnamon, cloves and nutmeg seasoning.
  • Mix until well combined. Set aside.
  • In a small bowl, combine the brown sugar, flour, oats, and cinnamon until well combined.
  • Add your slightly melted butter and mix until you have a crumbly substance.
  • With your prepared pie crust, pour your Blueberry Crumble Pie filling on top of the crust, spreading it out into an even layer. (I used a rubber spatula to evenly spread it).
  • Sprinkle on the prepared crumble over the evened out out Blueberry Pie Filling.
  • Lightly cover the entire pie with a piece of foil.
  • Place your prepared pie in the pan, on a cookie sheet. Place the pie in the oven.
  • Bake at 400 Degrees F. for 45 minutes.
  • Enjoy warm with ice cream on top, if desired.

If you're not as into the health-ified blueberry pie recipe I have up (Recipe #430494) and prefer it sweet instead of tart, you might like this one as it also calls for frozen blueberries-- they're really a MUST for this because of that defrosted blueberry juice! I estimated 20 ounces because the last time I made this, one bag didn't seem to be enough so I added about 1/3-1/2 cup more frozen blueberries from an open bag I had. Light or dark brown sugar can be used, I used light.

20 ounces frozen blueberries, defrosted
1/2 cup brown sugar
3 tablespoons cornstarch
1 teaspoon cinnamon (approx, I shook some in)
1 pinch ground cloves

Steps:

  • Make sure your 16-oz bag of blueberries is good and defrosted! If you need extra, it's okay if you use ones that are still frozen-- I made it that way, the rest need to be thawed with that blueberry juice floating around in the pot.
  • Empty the blueberries, juice and all, into a heavy-bottom saucepan for easy dispersion with the brown sugar on medium heat. It's okay if your brown sugar is lumpy/hard.
  • Stir around until the sugar is mostly dissolved.
  • Add the spices to your liking to the mix, namely cinnamon.
  • Add the cornstarch and stir in well.
  • Keep the heat on low and let simmer for about 5 minutes, and stir well again, it should have a nice thick glue-like consistency.
  • It's ready to serve over something like white cake and ice cream! Can also be refridgerated for about a week. For pie baking, simply pour into a pre-baked or homemade 9 or 10 inch pie shell and pat down evenly and add your own pie crust or streusel topping.

1 cup all-purpose flour
1 cup brown sugar
1 ½ cups quick cooking oats

1 (15 ounce) can sweetened blueberries, drained

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a medium bowl, cream together the butter and brown sugar. Stir in flour, salt and oats. Mix until well combined.
  • Pat 2/3 of the mixture into an ungreased 9-inch pie pan to form the bottom crust. Spread blueberries evenly into crust. Pat the remaining oat mixture onto top of blueberries.
  • Bake in preheated oven until topping is golden brown and filling is bubbly, 40 to 50 minutes.
