These oatmeal waffles are so light and fluffy, you won't believe that they are healthy! No eggs, no flour, and no sugar needed, they are made with just 3 ingredients!

Number Of Ingredients 3

3 cups rolled oats (gluten free, if needed)
3 large bananas (about 1 1/2 cups mashed)
2 1/4 cups unsweetened almond milk (any plant based milk can be used)

Steps:

  • In a high speed blender or food processor, add your oats and blend until a flour-like consistency remains. Gently shake the blender to loosen it up. Add the bananas and milk and blend again, until a smooth batter remains. Transfer into a bowl and let the batter sit for 10 minutes.
  • Grease a waffle iron and heat up. Once hot, pour portions of the batter onto it. Cook until the edges are crispy and the center is cooked. Repeat the process until all the batter has been used up.
  • Enjoy immediately or let the waffles cool completely.

Number Of Ingredients 12

2/3 cup all-purpose flour
1/2 cup quick-cooking oats
1 tablespoon brown sugar
1 teaspoon baking powder
1/2 teaspoon salt
1 large egg
2/3 cup 2% milk
1/4 cup canola oil
1/2 teaspoon lemon juice
1/4 cup ground pecans
1/2 cup fresh or frozen blueberries
Optional: Additional blueberries, chopped pecans, maple syrup and butter

Steps:

  • In a bowl, combine flour, oats, brown sugar, baking powder and salt. In another bowl, combine egg, milk, oil and lemon juice; stir into dry ingredients just until combined. Fold in ground pecans and blueberries. Let stand for 5 minutes. , Bake mixture in a preheated waffle iron according to manufacturer's directions until golden brown. If desired, top with additional blueberries and chopped pecans, and serve with maple syrup and butter.

Steps:

  • Heat waffle iron and spray with cooking spray.
  • Combine pancake mix, oats and sugar. Mix in water, egg and oil.
  • Fold in blueberries.
  • Pour 1/3 cup batter into each waffle space. Bake 5 minutes or until golden brown.

A whole grain waffle that is actually light and fluffy felt as likely as unicorns being real... until this recipe! These are a favorite in our house because they feel like a treat (which makes the boys happy) but are packed with whole grains and some fruit (which makes me happy). We love to have them with syrup on the first day and then make cream cheese sandwiches with them throughout the week for an easy, portable breakfast.

Number Of Ingredients 10

1 1/4 cups rolled oats (use wheat/gluten-free,if needed)
1 cup whole wheat flour (I like the white whole wheat from King Arthur Flour, use wheat/gluten-free, if needed)
3 Tbsp. sugar
1 tsp. baking powder
1 tsp. salt
1/2 tsp. baking soda
3 eggs (beaten)
2 cups low fat plain yogurt (or use any variety)
4 Tbsp. unsalted butter (melted)
1 cup blueberries or wild blueberries, fresh or frozen

Steps:

  • Preheat and grease your waffle iron. Preheat oven to 200.
  • Grind the oats in your food processor or blender until they are the consistency of whole-wheat flour.
  • In a medium bowl, whisk together the oat flour, other flour, sugar, baking powder, salt, and baking soda.
  • In another bowl, melt the butter and then whisk in the eggs. When well combined, whisk in the yogurt.
  • Add the wet ingredients to the dry and stir until just combined. Gently mix in the blueberries.
  • Ladle the recommended amount of waffle batter into the hot waffle iron, close the lid, and cook until the waffle is golden. Put cooked waffle in the oven to keep warm and repeat the process until all waffles are baked. Serve with extra blueberries and maple syrup.

I used many recipes and have been changing this recipe over time to make it more healthy and still delicious. It makes 2 of the big round belgian waffles. I use old fashioned oats but quick oats would be fine as well. My picky roommate eats these no problem. Hope you enjoy!

1 cup rolled oats
1/4 cup white flour
2 teaspoons baking powder
1/2 teaspoon salt
2 tablespoons powdered sugar
4 tablespoons unsweetened applesauce
3/4 cup water
1/3 cup fresh blueberries
1 dash cinnamon (if you like)

Steps:

  • Put oats, flour, baking powder, salt, sugar in food process and process until oats are fine, almost flourlike. (it is ok if they are a bit bigger, depending on what texture you like).
  • Put dry ingredients in a bowl and add applesauce and water. Mix. add blueberries. Stir.
  • Put half batter in a HOT waffle iron (you can spray it first to prevent the berries sticking) and cook until steam stops. If waffle isnt staying together when you open the lid, give it another minute or two and try again!
  • If your iron isn't hot, the waffles won't crisp.
  • Enjoy :D.

These are my 2 blueberry lovin' guys most favorite waffle. They will even eat them with blueberry syrup! I always double this and if there are any left they go in the freezer. DBF Rick will eat these like a cookie and likes them hot and crispy with a scoop of ice cream on top!

1 cup blueberries
3 teaspoons baking powder
2 eggs, separated
1 tablespoon sugar
2 cups sifted flour
1 1/2 cups milk
1/2 teaspoon salt
1/4 cup melted butter

Steps:

  • Preheat the waffle iron.
  • Beat egg whites til stiff and set aside.
  • Sift together dry ingredients.
  • Slowly stir in milk, beaten egg yolks and melted butter.
  • Fold in blueberries.
  • Fold in egg whites which were stiffly beaten.
  • Bake in hot waffle iron.
