- Combine all the ingredients in a large bowl.
- Form into 4 patties, then grill.
- I have served this on regular burger buns with tomatoes and mayo, and on pita with tahini, tomatoes and lettuce.

MY BIG FAT GREEK BURGERS

- In a small bowl, stir together the yogurt, oil, lemon juice, garlic, dill, and salt and pepper.
- Heat 2 teaspoons of oil in a nonstick skillet over medium-high heat. Add the onion and cook until soft and translucent, about 3 minutes. Add the spinach and cook until wilted, about 1 minute. Remove the pan from the heat. Add the feta cheese, dill and 1/4 teaspoon black pepper and stir to combine.
- Divide the turkey into 4 equal sized rounds. Make 2 equal sized patties out of each round so you have 8 patties total. Put 2 tablespoons of the spinach-feta mixture onto half of the patties. Top with remaining patties working the turkey around the edges to seal burgers closed. Season the burgers on both sides with the salt and remaining 1/4 teaspoon pepper.
- Spray a nonstick grill pan with cooking spray and heat over medium-high heat, or prepare the grill. Grill the patties until cooked through, about 5 minutes per side.
- To serve, place a burger on the bottom half of each bun, top with about 2 tablespoons of yogurt sauce, then 2 or 3 cucumber slices and a lettuce leaf. Top with the other half of the bun and serve.

- Combine the mayonnaise and 2 tablespoons pepperoncini brine in a small bowl. Toss the tomatoes with the chopped pepperoncini, the remaining 1 tablespoon brine, 2 tablespoons olive oil, half of the scallions and half of the mint in a medium bowl. Season with 1/4 teaspoon salt and a few grinds of pepper. Refrigerate the mayonnaise and the tomato salad while you make the burgers.
- Combine the turkey, grated zucchini, feta, oregano, the remaining scallions and mint, 1/2 teaspoon salt and a few grinds of pepper in a large bowl and mix well with your hands. Form into 4 oblong patties, about 4 inches wide and 1/2 inch thick.
- Heat the remaining 1 tablespoon olive oil in a large nonstick skillet over medium heat. Add the patties and cook until browned and cooked through, 4 to 5 minutes per side. Cut off a piece of each pita to open. Serve the burgers and zucchini sticks in the pitas and drizzle with the mayonnaise sauce. Serve with the tomato salad.

- Heat small amount of oil in 12-inch skillet over medium-high heat, or heat gas or charcoal grill.
- In large bowl, mix turkey, oregano, salt, grill seasoning and cheese; do not over mix. Shape mixture into 5 patties, about 1 inch thick.
- Place patties in skillet or on grill over medium-high heat. Cook 6 to 8 minutes on each side or until thermometer inserted in center of patties reads 165°F. If desired, toast rolls. Place patties on bottom halves of rolls. Add desired toppings; cover with top halves of rolls.

- Prepare charcoal grill for direct heat cooking.
- Remove cooking rack from grill and spray with non-stick cooking spray.
- In medium bowl combine turkey, olives, parsley, garlic, cinnamon, nutmeg, salt and pepper.
- Evenly distribute mixture into four burgers (approximately 4 1/2 inches in diameter). Grill burgers 2 to 3 minutes per side until meat thermometer registers 160 to 165 degrees F.

- Preheat the oven to 250 degrees F.
- Place the turkey, egg yolk, oregano, salt and pepper in a large bowl. Grate half the red onion and add it to the bowl. Mix with your hands, then form into four 1/2-inch-thick patties. Place on a sheet pan or plate lined with parchment paper.
- Put the pitas on a baking sheet and place in the oven to warm.
- Heat the olive oil in a large cast-iron or other nonstick skillet over medium-high heat. When the oil is hot, add the patties and cook until they are brown on the outside and no longer pink in the center, approximately 5 minutes on each side.
- Remove the pitas from the oven and cut the tops off. Slice the remaining 1/2 red onion. Spread some tzatziki inside each pita. Fill each with lettuce, a patty, some chopped cucumber, red onion and feta, then serve with chips on the side.

- In a medium bowl, stir to combine all ingredients. Add 1-2 tablespoons water to thin sauce if needed.
- For the burgers:.
- Equipment: Nonstick skillet and mixing bowls.
- In a large bowl, mix to combine ground turkey, olives, parsley, dried oregano, garlic, 1/2 cup crumbled feta cheese, salt and pepper. Divide into 4 portions and shape into burger patties.
