Blueberry waffles meet muffins! This twist on two breakfast favorites will be a win in your kitchen!

1/2 cup vegetable oil
1 cup whole milk
2 large eggs
1 cup sugar
1 3/4 cups flour
1 teaspoon baking powder
1 cup blueberries (fresh or frozen)

Steps:

  • Preheat the waffle iron to medium high heat.
  • In a large bowl, whisk together the oil, milk, eggs, and sugar Add the flour and baking powder and stir until well combined.
  • Fold in the blueberries.
  • Spray the waffle iron with cooking spray. Fill the waffle iron with about 3/ cup of batter (this will vary depending on your maker) and cook until golden, about 2-3 minutes.
  • Carefully wipe off any blueberries that stuck to the iron before adding more batter for your next waffle.
  • Serve with butter and maple syrup.

Steps:

  • Preheat waffle maker. Mix muffins according to the directions. Pour muffin mix in waffle maker and cook as usual to your desired doneness. Serve with butter, syrup and jelly. Enjoy! **Note you can use any waffle mix for this. We have tried Lemon Poppyseed and Cinnamon Streusel and they were also fab.**

1 package Betty Crocker™ wild blueberry muffin mix
1 1/4 cups water
1/3 cup vegetable oil
2 eggs, separated
3/4 cup maple-flavored syrup

Steps:

  • Heat waffle iron. Drain Blueberries, reserving liquid; rinse blueberries and set aside. Stir muffin mix (dry from muffin mix), water, oil and egg yolks in medium bowl just until blended.
  • Beat egg whites in small bowl with electric mixer on high speed until soft peaks form. Fold blueberries and egg whites into batter. Pour batter from cup or pitcher onto center of hot waffle iron.
  • Bake until steaming stops. Carefully remove waffle with fork. Heat reserved blueberry liquid and syrup. Serve syrup with waffles.

These muffins are extra large and yummy with the sugary-cinnamon crumb topping. I usually double the recipe and fill the muffin cups just to the top edge for a wonderful extra-generously-sized deli style muffin. Add extra blueberries too, if you want!

1 ½ cups all-purpose flour
¾ cup white sugar
½ teaspoon salt
2 teaspoons baking powder
⅓ cup vegetable oil
1 egg
⅓ cup milk, or more as needed
1 cup fresh blueberries
½ cup white sugar
⅓ cup all-purpose flour
¼ cup butter, cubed
1 ½ teaspoons ground cinnamon

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Grease muffin cups or line with muffin liners.
  • Combine 1 1/2 cups flour, 3/4 cup sugar, salt and baking powder. Place vegetable oil into a 1 cup measuring cup; add the egg and add enough milk to reach the 1-cup mark. Mix this with flour mixture. Fold in blueberries. Fill muffin cups right to the top, and sprinkle with crumb topping mixture.
  • To Make Crumb Topping: Mix together 1/2 cup sugar, 1/3 cup flour, 1/4 cup butter, and 1 1/2 teaspoons cinnamon. Mix with fork, and sprinkle over muffins before baking.
  • Bake for 20 to 25 minutes in the preheated oven, or until done.

This is my adopted recipe Feb 2005 I didn't change the recipe ingredients because 11 members found it good the way it was. I did add 1 teaspoon vanilla as suggested by 1 reviewer. I used 1/2 cup canola oil instead of butter. 2 heaping cups frozen blueberries mixed with a little of the flour mixture to make sure they didn't stick together. I made 6 giant muffins. Very good muffins. I had to bake mine for 35 minutes, they were so big.

1/2 teaspoon baking soda

1 teaspoon vanilla (optional)

Steps:

  • Sift dry ingredients together in a large bowl.
  • In another bowl, whisk eggs, buttermilk and butter that has been melted and browned slightly.
  • Make a well in dry ingredients and pour in liquid ingredients, mixing quickly.

  • Sift together dry ingredients.
  • Slowly stir in milk, beaten egg yolks and melted butter.
  • Fold in blueberries.
  • Fold in egg whites which were stiffly beaten.
  • Bake in hot waffle iron.
