- Preheat oven to 350 degrees F.
- Combine ingredients in a large bowl. Whisk thoroughly and transfer to a baking pan sprayed with nonstick spray; bake in the oven until a knife inserted into the center comes out clean. (Refer to cake-mix box for pan size and approximate bake time.)
DIET SODA CAKE
I found this recipe and gave it a shot - and was amazed! The recipe didn't specify any specific size of cake cake mix, but I just used the basic size you find at the grocery store. So far, I've made lemon cake mix w/ Diet Sprite & Chocolate cake mix w/ Diet Coke. This is truly amazing- no eggs, oil, etc.

- To make the blueberry compote: Add the blueberries, lemon juice and granulated sugar to a small saucepan and heat over medium heat. Cook, stirring occasionally, until the blueberries begin to soften and release their juices, about 3 minutes. Use the back of a wooden spoon to slightly smash some of the berries. Turn the heat down to low and continue to cook until saucy, 2 to 3 minutes. Turn the heat off and let cool to room temperature.
- For the lemon cake: Preheat the oven to 350 degrees F. Spray a 9-by-13-inch cake pan with nonstick cooking spray and set aside.
- Add the flour, baking powder, baking soda and salt to a mixing bowl. Whisk the mixture to break up any lumps of flour and to evenly incorporate the ingredients. Set the dry ingredients aside.
- Add the milk, lemon juice and vanilla extract to a measuring cup. Whisk to evenly incorporate the ingredients. Set the wet ingredients aside.
- Add the butter and granulated sugar to the bowl of a stand mixer fitted with the paddle attachment. Turn the mixer to medium and cream the butter and sugar together, scraping down the bowl as needed, until light and fluffy, about 3 minutes. Add the eggs, one at a time, allowing each egg to be fully incorporated before adding another. Add the lemon zest and beat until just combined.
- With the mixer on low, add the dry and wet ingredients, alternating between the two, starting and ending with the dry ingredients. Mix until just incorporated, being sure not to overmix the batter.
- Transfer the batter to the prepared cake pan. Spoon on the blueberry compote. Use a butter knife to fold and swirl the compote into the batter. Transfer the cake to the oven and bake until a toothpick inserted in the center comes out clean, 30 to 35 minutes. Cool the cake completely in the pan on a wire rack.
- Spoon the Frosting onto the cooled cake and use an offset spatula to smooth the frosting over the cake. Garnish with the fresh blueberries.
- Slice and serve immediately or cover and leave at room temperature until ready to serve.
- Add the cream cheese, butter, lemon zest and vanilla to a mixing bowl. Use a hand mixer to beat the ingredients together until smooth and well combined. Add 2 cups of the confectioners' sugar to the bowl and beat, starting the hand mixer on low and turning the speed up as the sugar is incorporated, until completely smooth. Add the remaining 2 cups confectioners' sugar and once again beat until completely smooth, about 30 seconds.
BLUEBERRY DIET SODA CAKE
From Lillie Ross, another variation of the ever popular "diet soda" cakes. This recipe, calling for blueberries, only adds 15 calories per serving to the original Diet Soda Cake's 150 calories. It's very important to not mix the layers together.

BLUEBERRY SODA

- Place the blueberries and the water into a medium saucepan, set over medium-high heat and bring to a boil. Reduce the heat to low and simmer for 15 minutes. Remove the saucepan from the heat and pour the mixture into a colander lined with cheesecloth that is set in a large bowl. Allow to cool for 15 minutes. Gather up the edges of the cheesecloth and squeeze out as much of the liquid as possible. Discard the skin and pulp. Return the blueberry juice to the saucepan along with the sugar and lime juice. Place over medium high heat and stir until the sugar has dissolved. Bring to a boil and cook for 2 minutes. Remove from the heat and transfer to a heatproof glass container and place in the refrigerator, uncovered, until completely cooled.
- To Serve: Combine 1/4 cup of the liquid with 8-ounces of carbonated water and serve over ice.

- Place frozen fruit in bottom of dish. Sprinkle cake mix over the top, making sure there are no lumps in the cake mix.

- Preheat oven to temperature on cake mix box.
- Grease a 9x13 pan.
- Combine cake mix and Diet Coke in large mixing bowl. Mix according to directions on box. (For example, my favorite brand says to mix at medium speed for 2 minutes!).
- Pour into 9x13 pan. Bake 5 minutes less than the recommended time on the box. For example, if the box says to bake a 9x13 cake for 28 minutes, bake your Diet Coke Cake for 23. Cake is done when a fork or toothpick inserted in the middle of the cake comes out clean.
- Cool in pan on wire rack.
- When cooled, frost with Cool Whip topping.
- Refrigerate leftovers. (I never have any!).
- Enjoy!
WW 4 PT. DIET SODA CAKE
I got this recipe from a WW group a few years ago. I have made it so much that it is often requested (even by men). I like to match the color of the drink with the color of the cake (ie: Sprite with yellow, coke with chocolate, etc.) I really like the diet cherry coke with a devils food cake. Be creative! I think that it is 4 pts. per slice, and the slices are big.

- While cake is baking, make pudding mixture using ff milk.

- Preheat oven to 350 degrees.
- Lightly grease bottom of 13 x 9 pan with cooking spray or use shortening and a flour dusting.
- Blend cake mix, water, oil and eggs in a large bowl until moistened. Or, make as your cake mix directs if using different cake mix.
- Beat with mixer on medium speed for 2 minutes.
- Bake cake for 34 to 38 minute Remove from oven and cool.
- Dissolve jello in hot water.
- Add soda to jello mixture.
- When cake has cooled but still warm, poke full of holes with fork. If cake pieces come with fork, just put back on cake.
- Pour jello mixture over cake.
- Let cool completely.
- Mix pudding and milk together until thick. Fold in cool whip.
- Spread on cake.
- Cover and refrigerate overnight.

- Preheat the oven to 200C/fan 180C/gas 6. Butter a 22cm cake tin, line the bottom with baking parchment. Put a third of the frozen blueberries aside, sprinkle the rest with flour, set aside (do not defrost).
- In a large bowl, beat the sugar and eggs until smooth, add the vegetable oil, lemon zest and juice and yogurt. Combine the wet ingredients with the flour, baking powder and a pinch of salt using a whisk. Don't worry if a few lumps remain. Add the blueberries mixed with flour.
- Pour the cake mixture into the prepared tin. Sprinkle the remaining berries on top. Put the tin in the oven, reduce the temperature to 180C/fan 160C/gas 4. Bake for 1 hr 10 mins-1hr 20 mins or until a skewer inserted into the cake comes out clean. Remove from oven and set aside to cool. After removing from the baking tin, sprinkle the cake with icing sugar, if you like.
