- Combine graham cracker crumbs, melted butter and sugar. Press into bottom and up sides of a 9 inch springform pan. Bake at 350 degrees for 5 minutes. Remove and let cool.
- Beat softened cream cheese and add 1 cup sugar, flour and salt until blended. Add eggs, one at a time and blend.
- Add sour cream, vanilla and lemon extracts. Gently stie in blueberries. Pour mixture into cooled crust.
- Bake at 325 degrees for approximately 50 minutes. (Cheesecake will be done when it still jiggles in the middle.) Turn off oven and let remain in oven with door open for 20 minutes. Remove and let cool. Cover and chill cheesecake in refrigerator.
- Lightly mix Cool Whip and 1/4 cup of sour cream. Spread over cheesecake and refrigerate for at least 6 hours before cutting.

- Make the dough: Pulse the flour, granulated sugar, vinegar and salt in a food processor until combined. Add the butter and pulse until the mixture looks like coarse meal with pea-size pieces of butter. Whisk the egg with 2 tablespoons water; add to the food processor and pulse until a dough just starts to form. Turn out onto a piece of plastic wrap; shape into a disk, wrap tightly and refrigerate until firm, at least 1 hour.
- Mist a baking sheet with cooking spray. Roll out the dough into a 12-inch round between 2 sheets of floured parchment paper. Remove the top piece of parchment and invert the dough onto the prepared baking sheet; remove the other piece of parchment. Refrigerate until ready to assemble.
- Make the filling: Toss the blueberries, 1/3 cup granulated sugar, the lemon juice and cornstarch in a bowl. Whisk the cream cheese, egg yolk, the remaining 2 tablespoons granulated sugar and the nutmeg in a separate bowl.
- Spread half of the cream cheese mixture over the dough, leaving a 2-inch border. Top with the blueberries. Fold the edge of the dough over the filling. Drizzle the remaining cream cheese mixture over the berries; refrigerate 30 minutes.
- Put an inverted baking sheet in the lower third of the oven and preheat to 425 degrees F. Brush the crust with the beaten egg and sprinkle with coarse sugar. Put the baking sheet with the galette directly on the hot baking sheet in the oven. Bake until the crust is golden, 20 to 25 minutes. Let cool slightly before slicing.

- BASE-----------.
- Preheat oven to 350 F degrees.
- In a mixing bowl, combine graham wafer crumbs, vanilla wafer crumbs, 1/4 cup of sugar and almonds.

- In a small saucepan, combine blueberry puree', sugar and lemon juice; cook over medium heat to just boil and the sugar is dissolved.
- In a cup, mix together tapioca starch with 3 teaspoons of cold water until smooth.
- While sauce mixture is boiling slightly, add tapioca mixture stirring continuously until sauce thickens slightly.
- TO SERVE-----------.
- Remove sides of spring form pan before cutting cheesecake.
- Spoon some sauce on each serving plate; place a piece of cheesecake in pool of sauce, then spoon more sauce over top of cheesecake.

BLUEBERRY SOURED CREAM CAKE WITH CHEESECAKE FROSTING
The blueberries in this recipe will burst in your mouth as you bite into your slice. The cake is delicious with a cup of tea, or served as an impressive dessert

Steps:
- Preheat the oven to fan160C/ conventional 180C/gas 4 and butter and line the base of a loose-based 22cm round cake tin with non-stick baking paper or reusable Bake-o-glide.
- Put the butter, sugar, eggs,flour, baking powder and vanilla in a bowl. Beat with a wooden spoon for 2-3 minutes, or with a hand electric beater for 1-2 minutes, until lighter in colour and well mixed. Beat in 4 tbsp soured cream, then stir in half the blueberries with a large spoon.
- Tip the mixture into the tin and spread it level. Bake for 50 minutes until it is risen, feels firm to the touch and springs back when lightly pressed. Cool for 10 minutes, then take out of the tin and peel off the paper or lining. Leave to finish cooling on a wire rack.
- To make the frosting, beat the soft cheese with the icing sugar and the remaining soured cream in a bowl until smooth and creamy. Spread over the top of the cooled cake (don't be impatient as the frosting will melt if the cake is too warm) and scatter with the remaining blueberries. The cake will keep in the fridge for a couple of days. Bring it to room temperature for about an hour before serving.

- Preheat the oven to 350°F with a rack in the middle.
- Crust:
- In a medium bowl, stir the cookie crumbs, sugar, butter, and salt to combine. Press the mixture evenly onto the base of a 9-inch springform pan.
- Transfer the pan to the oven and bake the crust until lightly golden, 10 to 12 min. Let the crust cool to room temperature, then wrap aluminum foil around the bottom and side of the springform pan. Place springform pan in a large roasting pan. (You'll be baking it in a hot water bath later.) Turn down the oven to 325°F.
- Heat a large kettle of water to a simmer. (You'll use this for the waterbath.)
- Filling:
- In a medium saucepan, combine the blueberries, lemon juice, ¼ cup granulated sugar, the scraped seeds of the vanilla bean, and salt. Cook over medium heat, stirring occasionally, until the berries have broken down and are very soft, 4 to 5 min. Let the mixture cool slightly, then transfer to a food processor and blend until the mixture forms a relatively smooth purée. Cool to room temperature.
- Add the cream cheese and the remaining 1-1/4 cups granulated sugar and process until the mixture is very smooth. Add the eggs, one at a time, and process just until each is combined, scraping the bowl a few times throughout the process.
- Pour the filling over the cooled crust. Carefully pour enough hot water from the kettle into the roasting pan to come about halfway up the side of the springform pan. Transfer the roasting pan to the oven and bake until the edge of the cheesecake is set but the center still jiggles slightly when you shake the pan, 60 to 75 min.
- Turn the oven off and leave the cheesecake inside the oven with the door propped open for 20 to 30 min. Remove the pan from the oven and remove the cheesecake from the water bath. Cool to room temperature, about 1 hour, then refrigerate for at least 4 hours.
- Gently run a knife around the edge of the chilled cheesecake, then remove the outer ring. Gently slide a large spatula around the outside edge of the cake to remove from the base, if desired.
- In the bowl of an electric mixer fitted with the whip attachment, whip the whipping cream and powdered sugar until medium peaks form. Spoon over the top of the cheesecake, then spread into an even layer. Garnish with blueberries.

- Heat oven to 325°F.
- Combine 1-1/2 cups flour, 1/3 cup sugar and cinnamon in medium bowl. Cut in butter with pastry blender or 2 knives until mixture resembles coarse crumbs. Reserve 1/2 cup crumb mixture; press remaining onto bottom of 9-inch springform pan. Bake 25 min. or until lightly browned.
- Meanwhile, beat cream cheese, remaining flour, remaining sugar and vanilla with mixer until blended. Add sour cream; mix well. Add eggs, 1 at a time, beating on low speed after each just until blended.
- Pour cream cheese batter over crust; top with berries and reserved crumb mixture. Bake 1 hour 25 min. to 1 hour 30 min. or until center is almost set. Run knife around rim of pan to loosen cake; cool before removing rim. Refrigerate 4 hours.
