BLUEBERRY-CINNAMON COFFEE CAKE
Studded with bright, juicy blueberries, this spiced coffee cake has a hefty dose of cinnamon in the cake and the crumble, and a cinnamon ribbon running through the center. You can use blackberries or raspberries in place of the blueberries, or even chocolate chips for an extra-sweet treat. Serve warm slices of cake with a cup of coffee for the perfect weekend brunch or afternoon pick-me-up.

Steps:
- Heat oven to 350 degrees and set a rack in the center. Spray an 8-by-8-inch square pan with cooking spray and line the pan with a strip of parchment paper that hangs over two sides.
- Make the crumb topping: In a medium bowl, combine the flour, light brown sugar, oats, cinnamon and salt. Add the butter and squish it together with your fingertips until it's evenly moistened, and pebble-size crumbs form.
- Make the cinnamon swirl: In a small bowl, combine the granulated sugar and ground cinnamon; set aside.
- Make the cake: In a large bowl, beat the sugar and butter together with an electric mixer on medium-high speed until light and fluffy, about 4 minutes. Add the eggs one at a time, mixing in one egg completely before adding the next. Add the sour cream, cinnamon, vanilla and salt, and beat to combine.
- Stop the mixer and add the 1 1/2 cups/195 grams flour, the baking powder and baking soda; mix on low speed until just combined. Toss the blueberries with the remaining 1 tablespoon flour, then gently fold them into the batter.
- Assemble the cake: Spoon half the batter into the pan and smooth it to cover the bottom of the pan in an even layer. Sprinkle the cinnamon sugar evenly over the top of the batter. Spoon the remaining cake batter over the top and gently smooth it to cover the cinnamon sugar. Sprinkle the crumb topping over the top.
- Bake the cake for 45 to 55 minutes until puffed and golden, and a tester inserted into the center comes out clean. Serve warm or at room temperature. Store the cake loosely wrapped at room temperature for up to 3 days.
CINNAMON SWIRL BUNDT CAKE

- Preheat oven to 350°F (325° for dark or coated pans).
- Combine cake mix, instant pudding, sour cream, eggs, and oil and beat together well, batter will be thick. Grease with spray oil a 10" bundt pan. In a separate bowl, combine sugar, cinnamon and pecans, if using.
- Pour half of the batter into prepared pan and sprinkle with the sugar mixture, reserving a little to sprinkle on top. Pour the rest of the batter into the pan and sprinkle with the rest of the sugar. Bake 45-1 hour, until toothpick comes out clean or a few crumbs. Invert onto cooling rack and let cool for about 10 minutes on rack, then remove from pan. If your cake sticks see post for tips on how to release.
- Glaze Instructions
- Melt butter and brown sugar in small saucepan, cook stirring for 1 minute. Add cream and salt, bringing to simmer, cooking for 2 minutes. Cool for 10-20 minutes (longer for thicker glaze). Drizzle over top of warm or cooled cake. Drizzling over warm cake will yield a moist sticky glaze, allowing to cool and drizzling over cooled cake will yield more of a drizzle.

- Position oven rack in the center of oven; preheat oven to 325°; grease the inside of a 10-inch bundt pan; dust the pan with flour.
- To make the cinnamon swirl: in a small bowl, whisk the flour, brown sugar, cinnamon, and salt together; break up any large clumps of brown sugar.
- Add in melted butter and stir until blended and crumbly.
- To make the pound cake: sift together the flours, baking powder, baking soda, salt, and cardamom into a bowl; whisk to combine; set aside.
- In the bowl of an electric mixer, using the paddle attachment, beat the butter on medium speed until very creamy, about 2 minutes.
- Gradually add in the sugar; beat at med-high speed until well blended and light, about 4 minutes.
- On medium speed, add the eggs one at a time, beating well after each addition and scraping down the sides of the bowl as needed.
- Beat in the vanilla extract and orange zest.
- On low speed, add the dry ingredients in three additions, alternating with the buttermilk in two additions and mixing just until combined.
- Scrape half the batter into the prepared pan and smooth it into an even layer.
- Sprinkle the streusel mixture evenly over the batter; scrape the remaining batter on top and smooth it into an even layer.
- Bake the cake for 65-75 minutes, until a cake tester comes out clean.
- Cool the cake in the pan on a wire rack for 15 minutes.
- Invert cake onto the rack, turn cake right side up, and cool completely.
- Dust cake lightly with powdered sugar just before serving.

- Preheat oven to 400 degrees F (205 degrees C). Grease a 10-inch bundt pan.
- Beat butter and sugar with an electric mixer in a large bowl until light and fluffy. The mixture should be noticeably lighter in color. Add eggs one at a time, allowing each egg to blend into the butter mixture before adding the next. Mix in vanilla.
- Combine flour, baking soda, and baking powder. Pour flour mixture into batter alternately with the sour cream, mixing until just incorporated. Fold in walnuts, mixing just enough to evenly combine. Pour half the batter into the prepared pan.

- Set oven to 350 degrees.
- Set oven rack to second-lowest position.
- Grease a Bundt pan.
- In a small bowl sift the flour, baking powder, baking soda and salt.
- In a large bowl, cream butter and sugar until fluffy (about 4 minutes).
- Add in eggs; beat well until combined.
- Add in peanut butter and vanilla; beat well.
- Beat in sour cream until blended.
- Reduce the mixer to low speed, and gradually add in the flour mixture until combined.
- Spoon HALF of the batter (about 3 cups) into prepared Bundt pan.
- Dollup about half of the jelly over the batter (avoiding the edges of pan).
- Partially stir/swirl the jelly over the batter with a knife.
- Spoon the remaining batter into the pan.
- Then swirl the remaining jelly into batter.
- Bake for about 1 hour, or until cake is done (check after about 50 minutes).
BLUEBERRY CINNAMON-SWIRL BUNDT CAKE
Slightly different, this one begins with 2 boxes of blueberry muffin mix. NOTE: You will use the two small cans of blueberries included in the packaged muffin mixes; there are no fresh blueberries in this recipe. This breakfast cake comes from one of my old "card libraries" but don't remember which one. so can't give credit where credit is due. It's a family favorite.

- Heat oven to 350°.
- Grease a 12-cup Bundt pan.
- Drain and rinse blueberries; set aside.
- Mix brown sugar, nuts and cinnamon; set aside.
- In a large bowl blend eggs, sour cream and water. Blend in muffin mix with a fork. Spread 1/3 of batter in pan; top with half the sugar mixture and half the blueberries.
- Repeat, ending with last 1/3 of muffin batter.
- NOTE: I've found that if I twist a knife through the batter a few times just before baking that it disperses the cinnamon/nut mixture more evenly and makes a better swirl throughout the entire cake.
- Bake 50 minutes.
- Mix confectioners' sugar and milk until smooth. Drizzle on warm cake.
- A great breakfast treat for the whole family.
