This banana bread recipe made the Test Kitchen smell amazing! The dense, nutty bread is oh-so-moist and will win over even the non-banana lovers in your life. Delicious for breakfast for an afternoon snack.

1 2/3 cup(s) all-purpose flour
3/4 teaspoon(s) salt
1 3/4 teaspoon(s) baking soda
3/4 cup(s) and 4 teaspoons of butter
1 2/3 cup(s) white sugar
1 2/3 cup(s) mashed overripe bananas
3 - eggs beaten
3/4 cup(s) and 4 teaspoons chopped walnuts

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease and flour two 9x5 inch loaf pans.
  • SIft the flour, salt, and baking soda into a large bowl. In a separate bowl, mix together the butter or margarine and sugar until smooth. Mix in the bananas, eggs, and walnuts until well blended.
  • Pour the wet ingredients into the dry mixture, and stir until blended.
  • Divide the batter evenly between the two loaves.
  • Bake for 60 to 70 minutes in the preheated oven, until a knife inserted into the crown of the loaves comes out clean. Let the loaves cool in the pans for at least 5 minutes. Then turn out onto a cooling rack and cool completely.
  • Wrap in aluminum foil to keep in the moisture. Ideally, refrigerate the loaves for two hours or more before serving. TIP: Do not taste or cut the loaves in advance.

  • Stir and coat blueberries with 2 tablespoons cake flour in a bowl.
  • Mix coated blueberries, oats, pecans, 1 1/2 cups plus 3 tablespoons cake flour, baking soda, and salt in a bowl.
  • Beat white sugar, 1/2 cup brown sugar, Greek yogurt, and applesauce together in a large bowl until light and fluffy. Add eggs, one at a time; beat after each addition. Add vanilla extract and mashed banana; beat lightly until well blended.
  • Stir blueberry-flour mixture into yogurt mixture until just moistened. Spoon batter into prepared pan. Cut butter into 1/4 cup brown sugar in a small bowl until crumbly; sprinkle over batter.
  • Bake in the preheated oven until a toothpick inserted in the center of the bread comes out clean, about 55 minutes. Cool in the pan for 15 minutes; remove from pan and cool on wire rack for 1 hour.

This is my mom's dense, excellent, and definitely unhealthy banana nut bread recipe. It's always completely gone in minutes. This is great at parties, but hazardous at home. HEALTH WARNINGS: EBNB may be habit forming. A very flexible recipe that will accommodate changes based on what you have on hand. Use any type of fat in place of the butter, such as shortening or oil. It works with either brown or white sugar too.

1 cup mashed ripe bananas
2 cups sifted cake flour

1 cup sweetened shredded coconut, divided
CREAMY NUT FILLING:

3/4 cup chopped pecans, toasted
1 teaspoon vanilla extract
CREAMY WHITE FROSTING:
1/2 cup shortening
1/2 cup butter, softened

1 teaspoon almonds extract
4 cups confectioners' sugar
3 to 4 tablespoons whole milk

Steps:

  • In a large bowl, cream butter and sugar until fluffy. Add eggs, beat 2 minutes. Add bananas; beat 2 minutes longer. Set aside. Sift together flour, baking soda and salt; add to creamed mixture alternately with buttermilk and vanilla. Beat well. Stir in pecans. , Pour into two lightly greased 9-in. round baking pans. Sprinkle with 1/2 cup coconut. Bake at 350° for 25-30 minutes. Remove cakes from the pan and cool, coconut side up, on wire racks., For filling, combine sugar, flour, cream, salt and butter in a saucepan. Cook over medium heat until thickened. Stir in pecans and vanilla. Cool. Spread filling over the bottom (plain side) of one cake layer. Place remaining cake layer, coconut side up, on top of filling. , In a bowl, combine frosting ingredients; beat until smooth. Place a 3-in. circle in the center of the cake top. Frost sides and top edges of cake. Remove the circle to expose coconut.

1/2 cup plain yogurt (low-fat is fine)

Steps:

  • Adjust the rack in the lower third of the oven and heat the oven to 350 degrees F. Spray a 9 x 5 x 3-inch loaf pan with nonstick cooking spray. Sift the flour, sugar, baking powder, baking soda and salt into a large bowl. Stir in the walnuts. Combine the banana, eggs, yogurt, oil and vanilla; add to the flour mixture. This is a recipe of my 82 year old mother in laws and she has made for decades from a newspaper clipping that is now tattered and torn but she knows from heart now .The original recipe does not call for an egg but she adds one " because I just thought it should have one . It is full of flavor and the consistency is perfect. I love it. I have never made it with almonds and neither does she and most of the time I make it with no nuts at all. I dont think this recipe is an uncommon one but it is a consistently good one.
