SPINACH CON QUESO
Styled after a similar appetizer at The Blue Moose in East Grand Forks, Minnesota, this is a very addicting creamy appetizer that goes well with tortilla chips. It has a little kick, but not enough to make your eyes water. Of course, for the heat lovers, you can kick it up a notch if desired. This has become an instant family-favorite and one of my most requested appetizers.

Steps:
- Heat olive oil and butter together in a 3-quart saucepan over medium heat; cook and stir onion until translucent, about 10 minutes. Add garlic and cook until fragrant, about 1 minute. Stir red bell pepper and jalapeno pepper into onion mixture; cook until softened, about 5 minutes.
- Reduce heat to low and mix pepperjack cheese and spinach into onion mixture; cook, stirring constantly, until cheese is melted and mixture is thick, 5 to 10 minutes. Slowly pour enough evaporated milk into cheese mixture, stirring constantly, until desired consistency is reached; season with salt. Continue to cook and stir over low heat until warmed through, at least 5 minutes more.

HOT SPINACH AND CRAB DIP

- Preheat the oven to 425 degrees F.
- Melt the butter in a medium pot over medium heat. Add the onion and garlic, season with salt and pepper and cook, stirring occasionally, until softened, about 6 minutes. Add the cream cheese, Worcestershire, dry mustard, paprika and cayenne, and stir until melted. Add the spinach and crabmeat, and stir until warm and bubbling. Stir in the cheeses and season with salt and pepper.
- Transfer the dip to a small baking dish and top with the panko. Place the baking dish on a baking sheet and bake until bubbling and golden, about 15 minutes.
- Serve hot with crackers.
DUMP SPINACH AND ARTICHOKE DIP FROM FROZEN
This is the easiest spinach artichoke dip you'll ever make! Everything goes into a baking dish and straight into the oven all at once-even the frozen spinach and artichokes. We like to finish the dish with a sprinkle of panko and a quick run under the broiler for a crispy top. But you can skip it if you're short on time. Serve this with sturdy chips or baguette slices for dipping.

- Preheat the oven to 400 degrees F. Drizzle the olive oil on the bottom of a 2-quart baking dish. Scatter the artichokes over the oil, set the cream cheese in the center and top with the spinach. Sprinkle with the Havarti and mozzarella and top with the heavy cream, mayonnaise and garlic. Sprinkle with the Parmesan. Bake until browned and bubbling, 33 to 36 minutes.
- Preheat the broiler. Use a pair of kitchen scissors to cut the artichokes and spinach into small pieces. Stir the dip with the scissors until creamy and smooth. Sprinkle with the panko and broil until crispy, about 1 minute. Serve hot.

SPINACH BLEU CHEESE DIP
This spinach dip is a bit different than most, because of the bleu cheese which I think gives it a wonderful flavor. Prep time does not include overnight chilling time.

- Combine cottage cheese, yogurt and skim milk in a blender or food processor.
- Process until smooth.
- Add the remaining ingredients (except bread) and process until thoroughly combined.
- Taste, and adjust amount of bleu cheese and worcestershire sauce to your preference.
- Pour into a bowl and chill in the refrigerator for several hours or overnight to allow dip to thicken and flavors to mellow.
- Hollow out a round loaf of pumpernickel bread (making a"bowl"), leaving at least 1/2 inch thick on bottom and sides of loaf.
- Cut up the bread"insides" that you removed from the loaf into cubes/chunks for dipping.
- Fill the bread"bowl" with the chilled dip to serve.
- *You can add more bleu cheese and/or worcestershire sauce to your taste.

This is my mother's recipe. I have no idea where she got it from, but everyone always raves about it and begs for the recipe. You can use vegetables, tortilla chips, or crackers to dip. I love this recipe because all the ingredients are fresh, not frozen. I hope you love it!

- Thaw and drain the spinach.
- Squeeze the spinach with paper towels to remove excess water.
- Mix all ingredients together in a bowl.
- Let set in the fridge for a couple hours before serving.
- I like to serve it inside a hollowed out round loaf of bread.
- Scoop out the loaf and place dip inside.
- I use what I scoop out for making croutons.
- Serve with fresh vegetables.

- In a large skillet, melt butter over medium heat; add onions and cook, stirring frequently, for 5 minutes or until onions are tender.
