These little toasts can be served by themselves as appetizers or sometimes I like to serve them as croutons on salad.

1 French baguette, cut into 1/3 inch thick slices
¼ cup butter, melted
4 ounces crumbled blue cheese
¼ cup butter, softened
salt and pepper to taste
½ cup chopped walnuts
½ cup chopped fresh parsley

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Brush one side of each slice of bread with melted butter, and place butter side up on a baking sheet. Bake for 7 minutes, or until lightly toasted.
  • In a small bowl, stir together the blue cheese, softened butter, salt and pepper. Spread this mixture over the tops of the toasted bread slices, then sprinkle with chopped walnuts.
  • Bake for 6 minutes in the preheated oven, or until the topping is melted and bubbly. Arrange on a serving tray and garnish with chopped parlsley.

DANISH BLUE CHEESE TOASTS

Serve these toasts hot out of the oven. They're a real crowd-pleaser and the recipe is easy to multiply to serve lots of people. If you make three panfuls at a time, position the oven racks so that they are evenly spaced and bake all three at once.

Yield makes about 8 servings (3 pieces each)

Number Of Ingredients 7

1/2 cup crumbled blue cheese
1/2 cup grated mozzarella
2 tablespoons toasted pine nuts, chopped walnuts, or slivered almonds
1 garlic clove, minced
Freshly ground black pepper
Twenty-four 1/2-inch slices coarse-textured Italian or French bread
1/4 cup olive oil or melted butter

Steps:

  • Position the oven racks so that the top rack is in the center of the oven or, if you are tripling the recipe, position the oven racks so they are evenly spaced, with the second rack in the center of the oven. Preheat the oven to convection roast at 500°F.
  • While the oven is preheating, combine the blue cheese, mozzarella, pine nuts, garlic, and pepper in a bowl. Brush each slice of bread with olive oil and place on a rimless cookie sheet. Roast the bread on the center rack for 3 to 5 minutes, until toasted on one side. Remove the bread from the oven and turn over. Spread each slice with the cheese mixture, pressing down slightly with a fork.
  • Return the bread to the oven and roast until the cheese mixture has melted. Serve immediately.

1 cup mayonnaise
2 large garlic cloves, minced
1/2 teaspoon ground black pepper
1/8 teaspoon cayenne pepper
1 1/2 cups freshly grated Parmesan cheese (about 5 ounces)
3/4 cup finely crumbled blue cheese (about 3 ounces)
28 1/3-inch-thick diagonal bread slices cut from 2 sourdough baguettes
Olive oil
3/4 cup finely chopped green onions

Steps:

  • Combine mayonnaise, garlic, ground pepper, and cayenne pepper in medium bowl and whisk to blend. Mix in cheeses; season with salt. (Can be made 2 days ahead. Cover and refrigerate.)
  • Preheat oven to 400°F. Brush 1 side of each bread slice with oil. Place oiled side down on large rimmed baking sheet. Bake bread slices until almost golden, about 5 minutes. Spread 1 generous tablespoon cheese mixture on each bread slice on sheet. Bake until cheese topping starts to bubble and toasts are golden at edges, about 10 minutes.
  • Transfer toasts to large platter. Sprinkle with chopped green onions and serve warm.

2 cups grated Monterey Jack
1/2 cup mayonnaise
1/2 cup grated Parmesan
1/2 stick (4 tablespoons) butter, softened
1 teaspoon salt
1 teaspoon pepper
1/4 teaspoon seasoned salt
1 crusty French loaf

Steps:

  • In a medium bowl, combine the Cheddar, Monterey Jack, mayonnaise, Parmesan, butter, salt, pepper and seasoned salt.
  • Cut the loaf in half lengthwise, then into thirds or fourths. Evenly spread the cheese mixture onto the bread pieces. Wrap each piece in a foil "purse," leaving a little room at the top between the cheese and the foil.
  • The bread can either be frozen for later, or baked right away. If baking right away, place on a baking sheet and bake at 350 degrees F for 10 minutes. If cooking from frozen, bake on a baking sheet at 350 degrees F for 20 minutes.

1/2 red onion, grated
200 g blue cheese, crumbled
75 g walnut pieces

A very easy & tasty recipe which I first devised for using up the Post-Christmas Stilton Cheese, but now I will actually buy Stilton, when I can, or any other good quality blue cheese in order to make this supper dish! The only requirements are: good blue cheese and good "Country" style bread or home-made bread. I have used Walnut bread, Multi-grain Granary bread, French Baguette & Ciabatta bread in the past for this dish. There are numerous options and additions too - tomatoes go well on top as does a finely sliced spring onion. This recipe is great for a light supper dish with a crispy salad on the side & a good glass of Red wine too. I have also used this recipe for pre-dinner nibbles - you need to stamp out small rounds of bread if you wish to serve them that way.

8 ounces Stilton cheese or 8 ounces blue cheese
3 tablespoons cream or 3 tablespoons creme fraiche
1 teaspoon Worcestershire sauce
1/2 teaspoon English mustard or 1/2 teaspoon Dijon mustard
2 ounces walnut pieces
8 slices bread
2 ounces butter
1 teaspoon cayenne pepper
black pepper
salt (optional)

Steps:

  • Pre-heat the grill the the highest setting and line a grill pan with kitchen foil.
  • Put the cheese into a mixing bowl and mash with a fork.
  • Add the cream or creme fraiche, Worcestershire sauce, mustard, black pepper, salt, (optional as the cheese is already quite salty) & the walnut pieces.
  • Mix well & set aside.
  • Place all the slices of bread on to the lined grill pan and toast until just golden brown.
  • Take out and spread the UNTOASTED side with butter.
  • Spread the cheese mixture over the top ensuring it is spread to the edges, otherwise they will burn!
  • Sprinkle with the Cayenne pepper.
  • Place under the grill and grill for about 2-4 minutes until the cheese is melted, bubbling & tinged with brown.
  • Serve 2 slices per person with a crisp seasonal salad and a good glass or two of Red wine!
  • The ultimate supper dish!
  • If you wish to serve these as aperitif nibbles, stamp out rounds from the slices of bread and continue to assemble & grill as above. Serves about 8 people that way.

I *love* these. With a nice rich white wine... these are delicious, and easy breezy to make! This is another recipe that I make from the school of 'some'; there's really not amount to how much to use, just a 'bit' of everything. This recipe is great because your oven temp is not very important. Making a pie while making these? just stick it in the oven! All you need is for the cheese to melt and the bread, cheese, and honey to warm through.

Steps:

  • Place your bread on a sheet pan in a single layer.
  • In the center of each piece of bread sprinkle a pinch (about 1 Tablespoon) of blue cheese.
  • Drizzle honey over the blue cheese on the bread (about 1 Tablespoon again).

This was the first recipe that the chef and writer Gabrielle Hamilton brought to The Times as an Eat columnist for the Sunday magazine in 2016, a snack-tray-sandwich version of a celery-and-fennel salad served at her restaurant, Prune, in the East Village. It calls for thick, white toasted Pullman bread spread wall to wall with unsalted butter, with slices of blue cheese neatly laid on top, below a mound of shaved celery and thinly sliced scallions dressed in garlic, olive oil, lemon juice and salt, and the whole shebang dusted in ground black pepper before being cut in halves or quarters. "The ingredients come from the grocery store," she wrote in her column. "These toasts are not expensive or intimidating, but they are outstanding."

2 slices country white Pullman bread, 1/2-inch thick
Sweet butter
4 ounces Cambozola triple-cream blue cheese, sliced, divided evenly between two toasts
1 cup shaved celery, from the inner head, toughest outer stalks removed, thinly sliced on the bias
2 scallions, thinly sliced on bias all the way up from the white through the green
1 large clove garlic
Extra-virgin olive oil
Lemon juice
Kosher salt

Steps:

  • Toast the bread to golden. Butter generously, "wall to wall." Lay cheese slices on top of buttered toast, neatly, evenly.
  • In a small bowl, stir together the celery and the scallions. Microplane the garlic into the celery mixture.
  • Dress with olive oil, lemon juice and salt, and stir very well, until completely dressed, almost wet with dressing.
  • Mound the shaved celery salad evenly on top of the blue-cheese toasts, and grind black pepper over them very generously. Cut each in half or quarters.

Steps:

  • Heat oil in heavy large skillet over medium heat. Add onions; cook until just beginning to color, stirring often, about 20 minutes. Add sugar and cook until onions are deep golden brown and very soft, stirring occasionally, about 25 minutes. Remove from heat. Mix in vinegar and raisins.
