Easy Devils on Horseback with Blue Cheese image

Devils on horseback are one of my favorite finger foods when I am entertaining and, stuffed with blue cheese, they are simply the best. Make sure you don't cut the date all the way through when pitting.

20 dates, pitted
3 ounces crumbled blue cheese
10 thin bacon slices, halved
20 toothpicks

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Line a baking sheet with parchment paper.
  • Stuff each date with 1/2 to 1 teaspoon of blue cheese and wrap date with half a slice of bacon; secure with a toothpick. Arrange on the baking sheet.
  • Bake in the preheated oven until bacon is crispy, 15 to 20 minutes.

A family favorite my uncle makes. They are a wonderful balance between salty and sweet, with a combination of crispy, chewy, and crunchy textures. My family destroys a tray of these in fifteen minutes.

20 wooden toothpicks
¼ cup reduced-sodium soy sauce
½ teaspoon ground ginger
¾ cup dark brown sugar
20 dates, pitted and left whole
20 whole smoked almonds
10 bacon slices, cut in half crosswise

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Soak the toothpicks in a bowl of water. Grease a 9x13-inch baking dish.
  • In a bowl, mix together the soy sauce and ground ginger. Place the brown sugar into a shallow bowl. Spread open a pitted date, then stuff it with a smoked almond. Wrap the date with half a bacon slice, secure it with a toothpick, dip the bundle in soy sauce mixture, and then dip it into brown sugar. Place the wrapped dates into the prepared baking dish. If desired, sprinkle a little more brown sugar over the bundles.
  • Bake in the preheated oven until the bacon is brown and crisp, 15 to 25 minutes. Allow to cool for about 15 minutes before serving; serve warm or at room temperature.

These bites are always a hit at a party and the fresh goat cheese with the hot honey drizzle is a perfect pairing. They are almost impossible not to finish before they make it to the table.

24 dates, pitted
1/4 cup goat cheese
12 slices thick-cut bacon, halved crosswise
Hot honey, for drizzling

Steps:

  • Preheat the oven to 375˚ F. Cut a slit into each date and stuff each with 1/2 teaspoon goat cheese. Wrap a half strip of bacon around each date, then secure with a toothpick.
  • Arrange the stuffed dates on a rack set on a rimmed baking sheet. Bake until the bacon is crisp, about 25 minutes. Drizzle with hot honey.

20 pitted Deglet Noor dates
1 cup dry sherry
2 ounces blue cheese
7 slices bacon (not thick-cut), cut into 3-inch lengths

Steps:

  • Soak the dates in the sherry for 2 hours, making sure they're fully submerged.
  • Meanwhile, place the blue cheese in a small zip-top bag, then snip one corner off the bag, leaving about a 1/2-inch opening. Leave at room temperature until ready to fill the dates.
  • Heat a toaster oven to 450 degrees F and place a rack in a quarter sheet pan or use the pan that came with your toaster oven, if applicable (see Cook's Note).
  • Drain but do not rinse the dates. Use a pair of scissors to open each date lengthwise.
  • Pipe roughly 1/2 teaspoon of the cheese into each date, then wrap with a piece of bacon. Place the wrapped dates on the rack, bacon ends down, and gently press to anchor.
  • Bake until the bacon is brown and crispy, about 15 minutes. Cool for 5 minutes before serving.

Prunes, stoned
Rashers of streaky bacon, cut in half

Steps:

  • Gently saute the livers in butter, then cut into thin slices and dust lightly with cayenne pepper. Stuff the prunes with chicken livers. Stretch the bacon pieces with a flat knife. Wrap a piece around each prune and secure with a wooden cocktail stick. Grill until the bacon is crisp.

8 slices white or sourdough bread
6 ounces sweet onion jam
6 ounces blue cheese, sliced
6 slices Irish or Canadian bacon, cooked
Unsalted butter, for pan

Steps:

  • Preheat oven to 300 degrees. Spread each of 4 bread slices with 2 tablespoons onion jam. Top each with a quarter of the cheese, 1 1/2 slices bacon, and 1 slice bread.
  • Melt 1 to 2 tablespoons butter on a griddle or in a heavy skillet over medium heat. Add sandwiches in batches, and cook until golden brown on both sides, about 6 minutes total, flipping once and adding more butter as needed. Transfer to a baking sheet, and bake until cheese is melted, about 5 minutes. Cut in halves or quarters, and serve hot.

1 lb 90% lean ground beef
1/4 cup blue cheese, crumbled
4 slices bacon, cooked and crumbled
1/2 cup scallion, minced
1/4 teaspoon hot pepper sauce
1 teaspoon Worcestershire sauce
1 teaspoon black pepper, coarsely ground
1 1/2 teaspoons salt
1 teaspoon dry mustard
4 hamburger buns
4 leaves lettuce
4 slices tomatoes
1/2 avocado, sliced
4 tablespoons mayonnaise

Steps:

  • In a large bowl, mix the ground beef, blue cheese, bacon, scallions, hot pepper sauce, Worcestershire sauce, black pepper, salt, and mustard.
  • Cover and refrigerate for 2 hours.
  • Preheat grill for high heat. Gently form the burger mixture into 4 patties.
  • Grill patties to your desired doneness.
  • Serve on rolls with lettuce, tomato, avocado and mayo.
