Steps:
- Put a pizza stone or inverted baking sheet on the lowest oven rack and preheat to 475 degrees F for at least 15 minutes. Meanwhile, roll out the dough into a 9-inch round on a lightly floured surface. Lightly dust a pizza peel or another inverted baking sheet with flour; lay the round of dough on top and set aside. Cook the bacon in a large skillet over medium heat, stirring, until crisp, about 6 minutes. Remove with a slotted spoon and drain on paper towels. Combine the tomato sauce, olive oil, garlic and oregano in a medium bowl; season with salt and pepper. Slide the dough directly onto the hot stone or baking sheet and bake until lightly golden and puffy, about 7 minutes. Remove from the oven and let cool slightly, then carefully slice the crust in half horizontally with a serrated knife to make 2 thin crusts. Turn the crusts cut-side up. Spread with the sauce mixture, then top evenly with the mozzarella, cheddar and bacon. Slide the pizzas back onto the hot stone or baking sheet; bake until the cheese melts and the crust is golden, about 8 more minutes. Sprinkle with the parmesan.
CHICKEN & BLUE CHEESE PIZZA
The blue cheese in place of the expected mozzarella gives this pizza a surprising and sophisticated taste. It's excellent as an entree or appetizer-it can be prepared in a round pizza pan as well. -Beverly Lynch, Sugar Grove, Illinois

Steps:
- Defrost the pizza dough and follow instructions on package for making a 12" pizza crust. Make sure ball is thoroughly defrosted and has had time to rest (about 1/2 hour in a bowl) as it will make the dough more elastic and easier to form into a pizza crust.
- Dust with flour and roll out dough into a circle. Put on a pizza pan and brush whole crust with a layer of olive oil.
- Sprinkle dough with garlic salt and Parmesan cheese.
- In a preheated oven (400°F) put the pizza crust into the oven and let bake for 5 minutes.
- Meanwhile, melt butter and about 1 tablespoon of olive oil in a non-stick skillet on medium heat.
- Slice pear into thin slices. Gently sauté pear slices and walnuts for about 3-5 minutes until the pears begin to caramelize.
- Take crust out of the oven after baking for 5 minutes and sprinkles with mozzarella.
- Arrange pears and walnuts all over the top of the pizza and crumble the entire wedge of blue cheese on top of the pear and walnut mixture.
- Bake for an additional 8-10 minutes or until the cheese melts and the crust is browned.
- Lightly drizzle honey over the whole pizza and serve.
- Garnish with a sprinkle of finely chopped flat leaf parsley (optional).
- ***Added flavor: Fry some bacon until crispy and crumble real bacon bits over the top! My family loves the addition of the bacon.

BLUE CHEESE AND BACON PIZZA
Try an elegant dish with blue cheese and pears that still keeps things informal: Blue Cheese and Bacon Pizza. The pears and blue cheese might lead you to believe this is a very elegant dish, but bacon and ready-to-use pizza crusts ensure this Blue Cheese and Bacon Pizza isn't too full of itself.

- Drizzle a 14" pizza pan with 1 tbsp olive oil. Shape pizza dough into a circle, stretching with your knuckles or holding one side, letting it stretch with gravity, and rotating your hands around the edge of the circle so it stretches in all directions. Lay pizza crust on pan and stretch to fit. If it shrinks back, let it rest for 5 minutes while you slice the figs and mozzarella.
- Slice mozzarella into about 1/4 inch slices. Remove tough stems from figs and slice each one lengthwise into about 4 slices.

- *Note - I had roasted beetroot which gives a nice flavor & texture; I had approx 1/2 of the quantity listed for comparison with photos, but about double would be better. I'd recommend roasting the beetroot ahead of time when you have the oven on for something else - just roast it whole, wrapped in foil or just in a dish, until tender. It may take an hour, the exact time depends on temperature of oven (in approx 375-425F range) and size of the beet. It should be tender to knifepoint when done. Once cool, you can keep it refrigerated for a day or two and peel before using.

- Coat the bottom and sides of a 12-inch cast-iron skillet with the olive oil. After the prepared pizza dough has finished its first rise*, gently press the dough into the bottom and 1 inch up the sides of the skillet. Cover skillet loosely with plastic wrap or a tea towel; let dough sit 20 minutes until slightly puffy (alternatively, if using a storebought dough, you don’t need to let it sit until puffy; you can move right on to the toppings).
- Meanwhile, heat a skillet over medium-low heat. Add sliced onions and butter. Cook onions, stirring occasionally, 15 to 20 minutes until soft and caramelized.
- Sprinkle pizza dough with mozzarella cheese and blue cheese. Top with sliced apple, chopped bacon, caramelized onions and chopped rosemary.
