- In a small bowl, mix the first five ingredients. Spread over four slices of bread; top with lettuce, tomatoes, bacon and remaining bread.

FRIED GREEN TOMATO BLT WITH SWEET BASIL MAYO

- For the mayo: In a food processor, puree the basil, mayonnaise, lemon juice and mustard. Season with salt and pepper and set aside. For the sandwich: Place the pancetta slices in a large nonstick saute pan set over medium heat and saute on both sides until crispy, about 3 minutes per side. Set aside on a paper towel-lined plate until ready to assemble the sandwich. For the tomatoes: In a large shallow dish, add 1/4 cup flour. In a separate baking dish, beat the egg, buttermilk, baking powder and baking soda. In a separate large shallow dish, add the remaining 3/4 cup flour, cornmeal, salt and cayenne pepper. Dredge the tomatoes in the flour, followed by the egg mixture and finally coat with the cornmeal mixture, shaking off any excess in between dredges. Place the tomatoes on a wire cooling rack set inside a rimmed baking sheet. Repeat the process with all the tomatoes. Pour a 1-inch layer of vegetable oil into a cast-iron skillet. Heat the oil over high heat until it reaches 350 degrees F. Carefully add 4 tomato slices to the oil and fry until the tomatoes are golden brown, about 2 minutes on each side. Transfer the fried tomatoes to a baking sheet or plate lined with paper towels, season with salt and cool. Repeat with the remaining slices. To assemble the sandwich: Slather each slice of bread with a generous amount of the basil mayo. Top 4 of the bread slices with 4 pieces of crispy pancetta, 2 fried green tomatoes and top with arugula. Finish by topping the sandwich off with the other slice of bread.;

- Mix basil, mayonnaise and butter in processor until basil is finely chopped and mixture is well blended. Season to taste with salt and pepper. (Can be made 1 day ahead. Cover and refrigerate.)
- Cook bacon in heavy large skillet over medium-high heat until crisp, about 8 minutes. Transfer to paper towels; drain.
- Spread half of mayonnaise mixture over 1 side of 6 bread slices. Top each with 2 tomato slices. Sprinkle tomatoes with salt and pepper. Top tomato slices with avocado, then with bacon strips, onion and lettuce. Spread remaining mayonnaise mixture over remaining 6 bread slices. Place bread slices atop lettuce. Cut sandwiches in half and serve.
JUICY BLT
The success of a BLT hangs in its balance of salt, acid, lusciousness and crunch. This version is perfect, with a generous swipe of mayonnaise on each slice of toast, followed by a drizzle of olive oil, tomatoes marinated in red wine vinegar and salt, butter lettuce leaves and thick-cut bacon. Squash this closed and eat while the bacon is still warm. BLTs are often associated with summer, but the vinegar here coaxes flavor and brings brightness to hothouse tomatoes, turning it into a sandwich for all seasons.

- Working in batches if necessary, fry bacon in a large skillet over high heat until golden brown, about 4 minutes. Transfer to a large cutting board.
- While bacon cooks, slice tomato crosswise into thin rounds. Transfer to a plate and marinate with red wine vinegar, 1 tablespoon olive oil, salt and pepper.
- Spread toast generously with mayonnaise on one side, follow with remaining 1/2 tablespoon olive oil.
- Divide the tomatoes with some of their vinegar marinade among 2 slices of toast. Top with the lettuce.
- Lay the bacon on the remaining slices of toast. Form sandwiches by piling the bacon-topped slices on top of the remaining toasts. Squeeze to close, cut in half and serve immediately.

- For the basil mayonnaise, puree the basil, 1/4 cup of the mayo, lemon juice and mustard in a blend until smnooth. Stir in the rest of the mayo. Refrigerate until needed.
- Fry the bacon and drain.
- Put half the flour on a plate or waxed paper. Combine the other half of the flour, all the cornmeal, and salt and pepper to taste. Arrange the flour, egg and cornmeal mixture in a row on a work surface. Dip each green tomato slice in flour, then egg, then cornmeal mixture, coating thickly. Pat the coating on. Fry in hot oil 2 minutes per side. Drain.
- Make sandwiches by spreading bread with mayonnaise, then stacking green tomato, bacon, sliced tomato alternately. Top with arugula.

- In a skillet, fry the bacon over med-high heat until crisp (about 3-5 minutes) and remove to drain on a paper towel when browned to your desired preference. While the bacon is cooking thickly slice the tomatoes and sprinkle lightly with kosher salt to bring out the flavor even more.
- Toast the bread in a toaster or in the top rack of the oven with the broiler turned to high. Watch carefully if using the broiler as it doesn’t take long.
- Assemble the sandwiches by spreading the basil mayo on the golden brown toast, then add the bacon on top of the mayo, the tomatoes on top of the bacon, and the frilly lettuce on top of the tomatoes. Finish with the top slice of toasted sourdough. Summer!!
