I love wraps, but am allergic to mayonnaise, so I designed this wrap to be glued together with melted cheese instead.

- Place bacon in a large, deep skillet. Cook over medium-high heat until evenly brown. Drain, and set aside.
- Place 1 tortilla on a microwave-safe plate. Sprinkle tortilla with 1/4 cup cheese. Cook in microwave 1 to 2 minutes, or until cheese is melted. Immediately top with 1/4 of the bacon, lettuce, and tomato. Fold sides of tortilla over, then roll up. Repeat with remaining ingredients. Cut each wrap in half before serving.

BLT TACOS
Without the bread muffling the crunch of bacon and crisp lettuce, BLT tacos are a lot more texturally exciting than the usual sandwich. Here, hot sauce-spiked mayonnaise adds spice; avocado adds creaminess; and chopping the tomatoes into a salsa with jalapeño, lime juice and cilantro makes everything juicy and bright. You can serve these for brunch, lunch or a light, fast dinner.

- Heat oven to 400 degrees. Lay bacon in an even layer on a rimmed baking sheet, and bake until browned and crisp, 15 to 20 minutes. Transfer to a paper towel-lined plate and let cool.
- While bacon is cooking, toss together tomatoes, jalapeño, cilantro, lime juice and a large pinch of salt in a medium bowl. Taste and add more lime juice and salt, if needed.
- In a small bowl, whisk together mayonnaise and hot sauce.
- Lay a clean kitchen towel in a medium bowl. Using the open flame from a stovetop gas burner (or in a skillet placed on an electric burner), warm and lightly char tortillas, 30 seconds to 1 minute per side. Transfer warmed tortillas to a towel-lined bowl, and cover with towel to keep warm while you finish remaining tortillas.
- Serve, letting people make their own tacos by layering bacon, salsa, lettuce, spicy mayonnaise and avocado, if using, on tortillas. Top with more hot sauce, if desired.

BLT QUESADILLAS
This is a bit different from the recipe already on Zaar for BLT quesadillas. this one is a bit fancier, came from the Hartford Courant food section 7/19/2007 - haven't tried it yet but plan to soon. I am not a fan of goat cheese so will try some substitute! I highly recommend microwaving the bacon using Recipe #173076. Cooking time for quesadillas does not include cooking time for bacon.

- Place a tortilla on a clean workspace.
- Mix the cheese & cumin in a mixing bowl until well blended.
- Using a table knife or small rubber spatula, spread a fourth of the cheese mixture on the tortilla, going almost to the edges.
- Then arrange a fourth of the tomatoes on one half of the tortilla.
- Drizzle the tomatoes with 1/2 tsp balsamic vinegar on each tortilla.
- Lay a fourth of the bacon pieces over the tomatoes, then top with a fourth of the spinach.
- Fold the tortilla in half and press down gently to secure the filling.
- Repeat to make three more quesadillas.
- Heat up your grill (to medium-low), brush the grate with olive oil (while it is still cool or prior to putting on the heat). I would recommend brushing the outside of the tortilla with the olive oil also. (you can also cook them in a skillet at medium heat).
- When grill is hot, add the quesadillas in a single layer.
- Using a spatula, press down on the quesadillas, and cook until grill marks appear (or it is lightly browned in a skillet), about two minutes.
- Carefully turn the quesadillas over and cook until grill marks appear (or lightly browned if using skillet), about 2 minutes more.
- Remove and cover loosely with foil to keep warm until all quesadillas are cooked.
- Cut each tortilla into 3 wedges and arrange on a dinner or salad plate.
BLT PINWHEELS
A tasty appetizer for those holiday parties that is very attractive and easy to make. For an interesting and healthy variation try using turkey bacon, light mayo and spinach as substitutes. I like this recipe because there are a lot of variations that can be made with this very basic idea. I hope you like these as much as my family, they disappeared in 5 minutes flat! Cook time is refridgeration time.

- In a small bowl mix cream cheese, mayo, and sun dried tomatoes.
- Add bacon but be careful not to crumble it too much.
- Spread mayo mixture over tortillas and top each with plum tomatoes and lettuce.
- Roll tightly and secure in plastic wrap.
- Refrigerated for one hour so they get firm.
- To serve cut each roll into 1 inch thick sliced with a serrated knife.
- A regular knife will squish them!
