Steps:
- Heat a skillet over medium heat until warm. Add a few slices of bacon and cook until crisp on both sides. Remove to a paper towel lined plate to drain while you cook the rest of the bacon.
- Toast the slices of bread, buttering the outside of the slices. Buttering the bread is optional.
- Mix all the sauce ingredients in a bowl.
- Assemble the sandwiches: spread one slice of bread with a generous amount of BLT sauce. Lay a couple slices of bacon over the sauce, top with a slice or two of tomato and a few pieces of lettuce. Top with another piece of toasted bread and serve.

- Fry bacon in a skillet until crispy.
- While bacon is cooking, cut tomato slices in half lengthwise and add to a large dish with olive oil, red wine vinegar, salt, and pepper. Turn tomatoes and brush each side with the mixture to ensure full coverage.
- Add mayo to a small dish and drain 1 tbsp of the tomato basting mixture (olive oil, red wine vinegar, & tomato juices) into the mayo and stir to combine.

SUNNY'S OPEN-FACED GRILLED BLT

- For the bread: Preheat the grill to 400 degrees F.
- Lay out the dough on a work surface and sprinkle with the olive oil, parsley, rosemary, garlic, a pinch of salt and a few grinds of pepper. Fold it over itself and roll out or just press with your hands to make a square that could fit four slices of bread, because that's the goal. (You will eventually want to cut this into fourths to serve.) Place on the direct heat of the grill and cook until it releases from the grill and is slightly golden brown, 3 to 5 minutes. Flip and cook until done, 5 to 8 minutes.
- For the bacon: Mix the brown sugar, cayenne pepper, zest and a few grinds of black pepper in a bowl. Press the bacon into this mixture and place on a piece of nonstick aluminum foil on the grill. Cook, without flipping, until the bacon is crispy, 18 to 20 minutes. Remove from the grill and roughly chop.
- For the tomatoes and lettuce: Brush the tomato slices and lettuce with olive oil and sprinkle with a pinch of salt and pepper. Place the tomatoes and lettuce directly on the grill and cook, flipping halfway through, until the tomatoes and lettuce are slightly charred, 3 to 5 minutes.
- Build the sandwiches: Mix the mayonnaise, honey, lemon juice and sriracha seasoning in a small bowl. Chop the grilled tomatoes and lettuce. Add the chopped tomatoes to the bread and press them slightly into the bread, then add the chopped bacon and piles of lettuce. Drizzle with the sriracha mayonnaise. Cut into four pieces and serve.

CLASSIC BLT SANDWICH
This is a sandwich that I crave a lot. I am just posting it because I couldn't find it posted already on the Zaar...I couldn't believe that! My ex-DH wondered how I make these, so I decided to post it and send him the recipe. Nothing fancy -- just the real, simple, unabridged version. UPDATE: After reading Peg629's review, I have tried it that way, with one slice of toast spread with yellow mustard, and I must say it really, really makes an exceptional BLT! Such a subtle difference, yet genuinely makes a superior BLT, in my opinion! (Thank you Peg629 for that awesome suggestion!)

- Cook bacon until crispy, then drain on paper towels.
- Toast the 8 slices of bread.
- Spread 1 tablespoon mayo on each slice of toasted bread. (More or less, to taste).
- Add 1 slice of lettuce to 4 pieces of mayo-spreaded toast.
- Add 2 slices of tomato on top of lettuce.
- Arrange 3 slices of bacon evenly on top of tomato. (Break bacon slices in half to fit, if needed.).
- Add 1 slice of lettuce on top of bacon.
- Put the remaining 4 pieces of mayo-spreaded toast on top to finish the sandwiches.
- Enjoy!
- NOTE: I also like to butter the toast slices before adding the mayo -- higher in fat, but tastier, in my opinion!
BLT CLUB WITH TANGY GARLIC MAYO
Found this tangy garlic mayo recipe while trying to dress up a steak sandwich but it works a much better on BLTs. I'll include ingredients for a single sandwich, you can multiply the ingredients from there depending on how many servings you need.

- Tangy Garlic Mayo: Mash minced garlic with a spoon until you get a pasty consistency. Stir garlic, mayo, balsamic vinegar and lemon juice in a bowl until thoroughly mixed.
- BLT Club:.
- Spread garlic mayo on first piece of toast, top with 2 leaves of lettuce, 3 slices of bacon and 2 slices of tomato.
- Spread garlic mayo on both sides of second piece of toast and place on top of first layer of sandwich. Top with 2 leaves of lettuce, 3 slices of bacon and 2 slices of tomato, salt and pepper to taste.
- Spread garlic mayo on last slice of toast, place on sandwich, then cut diagonally and serve. (fries and a pickle spear are a good side).
