- Combine the apple cider vinegar, honey, onion, mustard, salt and pepper in a small bowl. Whisk in the oil gently. Once the dressing has come together, set it aside.
- Slice two of the eggs. Grate the other two eggs finely.
- On a large salad platter spread the greens, tomatoes, bacon and grated eggs in strips
- Coat the salad with the dressing and use the egg slices to garnish.
- Serve immediately.
