One 15-ounce can cannellini beans, drained and rinsed
One 16-ounce box angel-food cake mix
1 cup pitted dates, chopped (about 20 small or 10 large)
1 cup chopped nuts (optional)
Store-bought vanilla frosting

Steps:

  • Preheat the oven to 350 degrees F. Prep a standard muffin tin with paper liners or mist with oil spray. Set aside.
  • Puree the beans and 1 cup water in a high-powdered blender. Add the cake mix and dates to blender and combine until smooth, 1 minute.
  • Stir in the nuts by hand, if using. Pour the batter into the prepared muffin tins about three quarters of the way high and bake for about 18 to 24 minutes or until an inserted toothpick comes out clean. (See Cook's Note.) Let cool completely.
  • To finish: Top each cupcake with 1 to 2 tablespoons frosting.

1 1/2 cups buttermilk
1 egg
2 tablespoons olive oil or 2 tablespoons canola oil
1 teaspoon vanilla
1 1/2 cups kamut or 1 1/2 cups buckwheat groats
1/4 teaspoon baking soda
1/4 teaspoon salt
1 teaspoon baking powder

Steps:

  • Blend the buttermilk, egg, vanilla, oil and grain in a blender or food processor for about 5 minutes or until completely blended.
  • Fold in the soda, salt, and baking powder.
  • Cook on a hot griddle as pancakes or bake in hot waffle iron for about 4 minutes.
  • Serve with maple syrup or fruit.

Steps:

  • Combine milk, eggs, all-purpose flour, whole wheat flour, baking powder, vegetable oil, sugar, honey, vanilla extract, and salt in an electric blender; blend until smooth.
  • Place a skillet or griddle over medium heat until hot, 2 to 3 minutes. Spray with nonstick cooking spray.
  • Heat a lightly oiled griddle over medium-high heat. Drop batter by large spoonfuls onto the griddle and cook until bubbles form and the edges are dry, 3 to 4 minutes. Flip and cook until browned on the other side, 2 to 3 minutes. Repeat with remaining batter.

This is a recipe from my Bosch cookbook: Healthy Recipes from the Heart of Our Homes by Phyllis Stanley. You could use straight milk (or buttermilk) instead of water and powdered milk. These turn out really fluffy. I love the way it foams up in the blender!

1 1/2 cups water
1 cup wheat berries (wheat, spelt, kamut)
1/2 cup dried non-fat powdered milk
1 egg
2 tablespoons oil
1 tablespoon honey
1/4 teaspoon salt
1 tablespoon fresh baking powder

Steps:

  • Put the water, whole grain wheat berries and milk powder in the blender and blend on high 3 minutes.
  • Add egg, oil, honey and salt and blend on high for another minute.
  • Add the baking powder and pulse 3 times, just enough to mix. Mixture should foam up and get very light.
  • Cook immediately on a hot skillet.
  • Serve with maple syrup, cinnamon sugar, powdered sugar, or whatever you desire!
