I had a bunch of apples to use up an I found a basic applesauce recipe and then fiddled around with it.

4 granny smith apples, peeled, cored and chopped
4 Red Delicious apples, peeled, cored and chopped
1 cup water
1/2 cup brown sugar
1/4 teaspoon ground allspice
1/2 teaspoon ground cinnamon

Steps:

  • Put water and apples in pot.
  • Bring to a boil.
  • Reduce heat to low. Simmer approx 25 minutes, or until soft -- stirring occasinally.
  • Slightly mash apples. Add sugar, cinnamon and all spice.
  • Mix well, and let simmer about 5 more minutes.
  • If you want a smoother texture sauce, pour into a blender, and Puree until desired texture.

  • This applesauce is not light colored. It is very good. There is a lot of water and whiteners in manufactured applesauces and I personally prefer making my own. When I don't want to open a whole quart of home canned I make this recipe.Very quick to prepare.

2 pounds assorted apples (such as Golden Delicious, Gala, Honeycrisp or McIntosh; about 4), peeled and chopped
Up to 2 tablespoons sugar
Lemon juice, to taste

Steps:

  • Combine the apples, sugar and 1/2 cup water in a medium saucepan. Bring to a simmer over medium-high heat, stirring occasionally. Reduce the heat to medium; cover and cook until the apples are very soft and most of the liquid has evaporated, about 20 minutes (or microwave in a large microwave-safe bowl, covered, about 10 minutes).
  • Add lemon juice to taste to the applesauce, then transfer to a blender or food processor and puree (or puree in the pan with an immersion blender).
  • Transfer the applesauce to a bowl and refrigerate until cool.

  • Apricot: Stir in 1/4 cup apricot jam.
  • Raspberry: Add 1 cup raspberries while the applesauce is still warm; mash slightly.

1 cup fruit puree/mash (mashed bananas, applesauce, sweet potato, pumpkin purée, & more!)
2 ¼ cups rolled oats
2 eggs
½ cup liquid sweetener (honey or maple syrup)
½ cup nut/seed butter of choice
1 tsp vanilla extract (optional)
1 tsp baking powder
½ tsp baking soda
½ tsp salt
½ cup milk of choice (adjust amount as needed for consistency)
½ cup mix-ins of choice (nuts, dried fruit, berries, chocolate chips-whatever you like!)

Steps:

  • Preheat oven to 375°F (190°C).
  • Add all ingredients to a blender, except for mix-ins, and blend until a smooth, thick batter forms.
  • Add mix-ins and stir to integrate. (Stir mix-ins right into batter in blender to save a dish!)
  • Transfer batter into a sprayed muffin tin, filling each cavity about ⅔ full. (I use a ¼-cup ice cream scoop to make portioning easy.)
  • Bake 18-20 minutes.
  • Allow to cool about 15 minutes before removing muffins from tin and enjoying!
  • Lasts 5 days stored in an airtight container in the fridge.
  • Recipe yields 12-14 oatmeal blender muffins baked in standard muffin tin.

1 1/2 teaspoons baking powder
1 1/2 teaspoons ground cinnamon
1/2 teaspoon baking soda
1/4 teaspoon salt
1 cup unsweetened applesauce (regular or cinnamon)
1/3 cup honey
1/4 cup Greek yogurt
2 eggs
1 teaspoon pure vanilla extract
1/2 cup chopped nuts (such as pecans or walnuts, and/or additional nuts for topping (optional))

Steps:

  • Preheat oven to 400°F. Line 12 muffin cups with paper liners.
  • Measure oats into a blender. Blend until the oats are ground into a fine powder, like flour. Shake the ground oats to one side of the pitcher and add the baking powder, cinnamon, baking soda, salt, applesauce, honey, Greek yogurt, eggs, and vanilla to the blender. Turn on the blender to low speed and then immediately increase to high speed. Blend until the ingredients are just combined, stopping and scraping down the sides of the blender as necessary. If using nuts, add them at the very end; sprinkle them on top of the finished batter and quickly pulse one time to incorporate the nuts without chopping them further.
  • Evenly divide the batter between the prepared muffin cups, pouring it directly from the blender pitcher. If desired, sprinkle the top of each muffin with additional chopped nuts.
