TEX-MEX BLACK BEAN BURGERS

Steps:
- Chop the stir-fry mix into 1/2-inch pieces. Heat 2 tablespoons olive oil in a large nonstick skillet over medium-high heat. Add the vegetables, brown rice and a big pinch of salt. Cook, stirring, until the vegetables are softened, about 5 minutes. Stir in the chile powder, cumin, black beans, 3/4 teaspoon salt and a few grinds of pepper. Cook until the beans are hot and the skillet is dry, about 2 minutes.
- Transfer the mixture to a food processor; reserve the skillet. Pulse 5 to 6 times, until the mixture holds together but is still chunky. Scrape into a large bowl and stir in the breadcrumbs and chipotle mayonnaise. Shape into 4 patties, about 4 inches wide. Place the patties on a plate, cover with plastic wrap and freeze to firm up, about 15 minutes. Meanwhile, split and toast the rolls.
- Wipe out the reserved skillet, add the remaining 2 tablespoons olive oil and heat over medium-high heat. Add the patties and cook until heated through and a crust forms, about 2 minutes per side. Season with salt.
- Serve the patties on the rolls with lettuce, avocado, tomato, pickled jalapenos and chipotle mayonnaise. Serve with chips.

- 1. GRILL DIRECTIONS: In small bowl, combine all butter ingredients blend well. Place butter on piece of plastic wrap. Shape into 4-inch log. Refrigerate 1 hour or until firm.2. Meanwhile, brush each side of steak with 1 tablespoon melted butter rub each side of steak with 1 teaspoon blackened steak seasoning. Let stand at room temperature for 30 minutes.3. Heat grill. When ready to grill, place steak on gas grill over medium heat or on charcoal grill 4 to 6 inches from medium coals. Cook 8 to 20 minutes or until of desired doneness, turning once.4. If necessary, allow butter to stand at room temperature for about 15 minutes to soften. To serve, cut steak into 4 serving pieces place on serving plates. Cut butter into 4 slices place on center of hot steaks. - In small bowl, combine first 6 ing.
- Place in refrigerater.
- Brush the 1 T melted butter on steak.
- Rub blackened seasoning on each side of steak.
- Let stand 30 minutes.
- Cut steak into 4 pieces.
- Preheat a heavy saucepan to very hot.
- Add the oil.
- Add steak and cook on med-hi for 6-8 minutes, to desired doneness.
- Serve steak with a ball of Tex-Mex butter on top.
