A refreshing twist on a blackberry sorbet. Due to the 1/2 cup wine, this sorbet will not freeze hard. Serve out of the freezer as soon as possible.

¾ cup white sugar
½ cup water
1 ½ pounds fresh blackberries
½ cup semi-dry fruity red wine, such as Sangiovese

Steps:

  • Heat the sugar and water together in a small saucepan over medium-low heat; cook and stir until the sugar is dissolved completely, making a simple syrup. Set aside to cool.
  • Puree the blackberries in a blender or food processor; strain through a fine-mesh strainer to remove any seeds or pulp. Whisk the strained blackberry juice, the cooled simple syrup, and the red wine together in a bowl; chill in refrigerator until cold.
  • Freeze in the freezer canister of an ice cream maker according to the manufacturer's directions

Number Of Ingredients 9

1 pound ripe red, black, or prune plums, halved lengthwise and pitted
3/4 cup dry red wine
3/4 cup sugar
3/4 cup water
1 (3-inch) cinnamon stick
2 (3- by 1-inch) strips lemon zest (removed with a vegetable peeler)
1 teaspoon fresh lemon juice
8 black peppercorns
Equipment:an ice cream maker

Steps:

  • Stir together all ingredients and a pinch of salt in a heavy medium saucepan and cook, covered, over medium heat, stirring occasionally, until plums fall apart, about 25 minutes. Discard cinnamon stick and zest. Purée in batches in a blender until very smooth (use caution when blending hot liquids). Force purée through a fine-mesh sieve into a bowl, discarding solids. Cool, uncovered, then chill, covered, until cold, at least 2 hours.
  • Freeze purée in ice cream maker, then transfer sorbet to an airtight container and put in freezer to harden, at least 1 hour.

6 cups blackberries or 6 cups black currants (fresh or frozen)
2 cups raspberries (fresh or frozen)
2 cups water
1 1/2 cups sugar
1 -2 tablespoon fresh lemon juice
2 egg whites

Steps:

  • Place blackberries, raspberries and half the water into large pan; bring to boil, reduce heat; simmer gently for 3 minutes, or until pulpy; strain through some cheesecloth; return strained mixture to pan; add remaining water.
  • Add the sugar and lemon juice and stir over low heat until the sugar dissolves; remove from heat and allow to cool.
  • Pour mixture into freezer trays and freeze until sorbet is a slushy consistency.
  • Using electric mixer, beat egg whites until stiff peaks form; using a metal spoon, fold egg whites into berry mixture; freeze, stirring occasionally to ensure egg whites are evenly distributed.
  • May be served in scoops or scraped; garnish with finely shredded fresh mint leaves and lemon zest.

1 cup (200 g) sugar
3/4 cup (180 ml) water
1 bottle (750 ml) fruity red wine, such as Merlot, Zinfandel, or Beaujolais
3 cups (15 ounces/400 g) raspberries

Steps:

  • In a medium saucepan, bring the sugar, water, and red wine to a boil and let boil for 1 minute, stirring to dissolve the sugar. Remove from the heat and add the raspberries. Cover and let steep for 1 hour.
  • To purée the berries and remove the seeds, using a rubber spatula, press the mixture through a mesh strainer set over a medium bowl or pass it through a food mill fitted with a fine disk into a medium bowl. Cover and refrigerate until thoroughly chilled.
  • Freeze in an ice cream machine according to the manufacturer's instructions.
  • Variation:
  • For a lighter-tasting sorbet, use rosé in place of the red wine.
