BLACKBERRY CORDIAL
After trying lemoncello, and learning how simple it is to make, in the middle of berry season here, this was inevitable. Blackberries, vodka and simple syrup combined to produce an absolutely delicious nectar. I used what I had on hand, which was 80 proof vodka, and it does freeze. For this reason I suggest using 100 proof vodka. Other than that nothing could be simpler.

- Fill quart jars with blackberries. Pour vodka in to cover berries. Put on the lids and put jars in a cool, dark place and forget about them for 2 to 4 weeks. Then, pour contents through a strainer and reserve liquid. In a heavy saucepan combine sugar and water and bring to boil, long enough to dissolve sugar. When this syrup cools a bit, add to blackberry liquid and stir. Pour liquid into container of choice and put in freezer. When chilled, it's good as is or, as we tried it, in a juice glass with ginger ale. It's indescribably good.
BLACKBERRY LIQUEUR (CRÈME DE MÛRE)
After a day of blackberrying, what could be nicer than turning your bounty into homemade liqueur?

Steps:
- Pick over the blackberries and remove any stalks or leaves. Tip into a large ceramic or glass bowl and pour over the wine. Use a potato masher to crush the fruit into the wine. Cover with a tea towel and leave to macerate in a cool place for 2 days, mashing occasionally.
- Pour the mixture through a plastic sieve, then pass again through the sieve or a colander lined with a square of muslin to remove any bits. 3 Tip the juice into a pan and add the sugar. Heat gently, stirring until the sugar has dissolved, then simmer for 5 mins. Leave to cool, then stir in the vodka or gin. Using a small jug, pour into bottles, then seal and label. It's ready to use straight away. Store in a cool, dry place away from direct sunlight for up to 1 year.

BLACKBERRY LIQUEUR
Ridiculously easy to make, tastes wonderful and makes an impressive gift for any non-teetotaler friends. Superfine sugar works the best. Preparation time does not include 10-12 days for fruit to infuse liqueur.

Steps:
- Shake together the water, vodka and sugar to dissolve sugar.
- Gently mix together with the blackberries, taking care not to cut or crush the berries.
- Leave to infuse about 10-12 days until the berries have lost most of their color.
- Pour thru a fine strainer and discard the berries.
- Pour into decorative bottles.

SPICED BLACKBERRY CORDIAL
This has a a nice layer of flavors. Steeping times posted are the minimum, especially with the orange peel. Use the orange peel later for candying, in a salad, or leave it in the bottle for interest.Ginger, Allspice, Nutmeg, and or Cinnamon are fine spices to use.

- 1. Add crushed blackberries to brandy in a wide mouthed juice bottle.
- 2. Let steep for 2 weeks in a dark corner. Shake bottle briefly each day.
- 3. Strain liquid from blackberry/brandy solution. Use a coffee filter for a second straining.
- 4. Add back to clean bottle with honey, spices, and orange peel. Close and shake well.
- 5. Let steep for a month minimum. Strain and add back peel if you like. Shake occasionally to mix up harmless deposits from the honey.

BLUEBERRY CORDIAL
Simple. Cheap. No artificial anything. And Delicious! A wonderful cheap treat for your family's drink bottles. I created this after being unable to find a kid-friendly blueberry cordial recipe. I used frozen berries but fresh would do, of course! Time shown does not include the overnight steeping time, which is optional but advised to get the max flavour.

- In a large saucepan combine everything. Simmer over medium heat and stir with wooden spoon to dissolve the sugar. Mash the berries as they soften, with the spoon, or a potato masher. I tried an immersion blender which worked ok but the masher was the most effective.
- Once dissolved, let cool, then steep overnight in the refrigerator. This will get the max flavour from the berries.
- Next day, strain into a bottle (clean softdrink is perfect). I used a funnel with a wire mesh strainer over the top, and poured a little at a time. Squeeze the juice from the pulp through the strainer. Set pulp aside - delicious with icecream!
- To reconstitute to a delicious drink, try 1 part cordial to 5 or 6 parts water. This will depend on how sweet you like your drinks.
- KEEP IN REFRIGERATOR.
- It makes 1.75 litres which will creat about 12 litres of drink.
BLACKBERRY VODKA

- Tip the blackberries, cinnamon stick, bay leaf and sugar into a large sterilised jar. Pour over the vodka, seal the jar and swirl around to dissolve the sugar. Store in a cool, dark place and turn the jar once a day for the first week.
- After two to three weeks, strain the vodka through a fine mesh sieve (see tip, below) and decant into bottles, then label. It will keep its colour for a few months, and will be drinkable for up to a year. Use the infused blackberries in bakes or meringue-based desserts.

Cook over low heat for 30 minutes, gently crushing the berries against the side of the saucepan. Strain the berries through a fine sieve into a heatproof bowl without pressing on the berries. - Stir in the Cognac and pour into bottles. Seal the bottles tightly and store in a cool dark place for at least 2 weeks before serving.
