1 teaspoon salt
1 1/4 cups yellow cornmeal

Steps:

  • Combine 2 1/2 cup water and salt in small saucepan; bring to a boil.
  • Mix cornmeal with remaining water in a small bowl.
  • Add cornmeal mixture slowly to boiling water, stirring constantly.
  • Reduce heat to low; cook stirring constantly, for 5 minutes or until mixture is thickened.

2 ½ cups water
½ teaspoon salt

Steps:

  • Mix together cornmeal, water, and salt in a medium saucepan. Cook over medium heat, stirring frequently, until mixture thickens, about 5 to 7 minutes.
  • If using as cereal, spoon mush into bowls and serve with milk and sugar, if desired. If frying, pour mixture into a loaf pan and chill completely. Remove from pan, cut into slices, and fry in a small amount of oil over medium-high heat until browned on both sides. Serve with sauce of your choice.

1 quart fresh or frozen (loose-pack) blackberries
1 cup plus 1 tablespoon sugar, divided
3/4 teaspoon salt, divided
1/2 teaspoon lemon extract
1-1/2 cups all-purpose flour
2 teaspoons baking powder
1/4 teaspoon ground nutmeg
2/3 cup 2% milk
Optional: cream or whipped cream

Steps:

  • In a Dutch oven, combine the blackberries, 1 cup sugar, 1/4 teaspoon salt and lemon extract. Bring to a boil; reduce heat and simmer for 5 minutes., Meanwhile, in a bowl, combine the flour, baking powder, nutmeg and remaining sugar and salt. Add milk; stir just until mixed. (Dough will be very thick.), Drop by tablespoonfuls into 6 mounds onto hot blackberry mixture; cover tightly and simmer for 15 minutes or until a toothpick inserted in a dumpling comes out clean. , Spoon into serving dishes. Serve with cream or whipped cream if desired.

2 tablespoons ground cinnamon
1 1/4 cups sugar
1/2 cup sour mash bourbon whiskey
1 1/2 cups all-purpose flour
1 tablespoon baking powder
Salt
1 1/2 stick butter
1/3 cup sugar
1 egg
1/2 cup heavy cream
1 teaspoon vanilla extract

Steps:

  • Preheat oven 350 degrees F.
  • Combine the blackberries, flour, cinnamon, sugar and burbon in pot and heat over low heat. Allow the sugar to dissolve and the syrup to form. Over medium heat, bring the mixture to a boil. Then reduce the heat and allow it to cook until tender. Remove the mixture and set aside and keep warm. Mix all batter ingredients together in a large mixing bowl. Pour batter over berries and return to the center of the oven and bake for 1 hour or until brown on top.

1 tablespoon unflavored gelatin
Juice and grated zest of 1 orange
2 bags (10 ounces each) frozen blackberries, without sugar; reserve several for garnish
2 egg yolks
1/2 cup sugar
2 tablespoons Cointreau, Grand Marnier , or other orange-flavored liqueur
2 cups heavy cream
8 to 10 mint sprigs, for garnish

Steps:

  • 1. Soak gelatin in 2 tablespoons of cold water in a saucepan for 5 minutes. Add the orange juice, zest, and berries; bring just to a boil, stirring. Cool to room temperature; reserve.
  • 2. Beat the egg yolks and sugar in a bowl until pale yellow. Add the liqueur and beat for another minute.
  • 3. Put egg yolk mixture in the top of a double boiler over simmering water. Stir until slightly thickened and hot to the touch. Cool to room temperature.
  • 4. Add egg yolk mixture to blackberry mixture and stir until well-blended. Whip heavy cream to soft peaks and fold gently into blackberry and egg yolk mixture. Divide among serving dishes and chill until ready to serve.
  • 5. Garnish with whole blackberries and a mint sprig.
