Found some blackberry syrup in the pantry that I had to use, so I thawed some chicken, mixed up a bunch of ingredients I had in the cabinets and voila: Pure Yumminess!

4 tablespoon(s) lemon juice
1/2 cup(s) distilled vinegar
1 cup(s) red wine, preferably merlot or a burgundy
1/2 cup(s) olive oil, extra virgin
1/2 teaspoon(s) chipotle chili powder
1 teaspoon(s) lemon pepper
1 clove(s) garlic
1/2 cup(s) blackberry syrup
1 tablespoon(s) tabasco chipotle pepper sauce or liquid smoke

Steps:

  • Add all ingredients, whisking until completely combined.
  • Use as marinade for beef, pork, chicken and shrimp.
  • Marinate at least 2 hours. Grill or broil to taste.

PAN-FRIED VENISON WITH BLACKBERRY SAUCE

Blackberries are delicious in savoury sauces, and this version is the perfect match for the richly flavoured venison

1 tbsp olive oil
2 thick venison steaks, or 4 medallions
1 tbsp balsamic vinegar
150ml beef stock (made with 2 tsp Knorr Touch of Taste beef concentrate)
2 tbsp redcurrant jelly
1 garlic clove , crushed
85g fresh or frozen blackberry

Steps:

  • Heat the oil in a frying pan, cook the venison for 5 mins, then turn over and cook for 3-5 mins more, depending on how rare you like it and the thickness of the meat (cook for 5-6 mins on each side for well done). Lift the meat from the pan and set aside to rest.
  • Add the balsamic vinegar to the pan, then pour in the stock, redcurrant jelly and garlic. Stir over quite a high heat to blend everything together, then add the blackberries and carry on cooking until they soften. Serve with the venison, celeriac mash (see below) and broccoli.

This is a delicious way to serve steaks. You can marinade the meat for 10 minutes and up to 2 hours. Serve with rice and vegetables.

4 filet of beef
1/2 cup merlot
1 tablespoon Worcestershire sauce
4 garlic cloves, minced
1 tablespoon brown sugar
1 teaspoon fresh ground black pepper

Steps:

  • Combine Merlot, Worcestershire sauce, garlic cloves, brown sugar and black pepper.
  • Stir and add beef filets.
  • Let meat marinade for at least 10 minutes or up to 2 hours.
  • When ready to grill steaks, heat grill.
  • Place marinated beef filets on grill and cook until desired doneness.
  • Serve with the rice and vegetables.
  • Note: Add marinade mixture to a small saucepan and bring to a boil after meat has been removed.
  • Reduce heat to a simmer and cook for 10 minutes.
  • Pour sauce over cooked filets.

This recipe was printed in the Houston Chronicle. It's very elegant, but quick and easy enough to prepare for a week night meal.

2 pork tenderloin (about 1 lb each)
1 tablespoon olive oil, divided
1 tablespoon chopped fresh rosemary leaf
1/2 teaspoon salt, divided
1/2 teaspoon freshly ground pepper, divided
4 shallots, minced
1 clove garlic, minced
1 cup merlot or 1 cup dry red wine
1 tablespoon chicken stock powder or 1 tablespoon chicken soup base (a concentrated reduced chicken broth can be substituted)
2 tablespoons cherry preserves or 2 tablespoons blackberry preserves
2 tablespoons butter (optional)

Steps:

  • Preheat oven to 350.
  • Coat pork with 1 1/2 tsp olive oil; rub with rosemary, 1/4 tsp salt and 1/4 tsp pepper.
  • Heat a heavy, ovenproof skillet over high heat.
  • Cook pork, turning often, until lightly browned on all sides, 5 minutes.
  • Transfer skillet and pork to oven; roast until thermomether reads 150 degrees, about 10- 15 minutes.
  • Transfer cooked pork to a platter; keep warm.
  • Add remaining 1 1/2 tsp oil to same skillet.
  • Heat over medium heat.
  • Add shallots and garlic; cook, stirring until lightly browned, about 4 minutes.
  • Add wine; cook over high heat until reduced by half, about 5 minutes.
  • Reduce heat to medium.
  • Stir in stock concentrate and preserves.
  • Add remaining 1/4 tsp each salt and pepper; adjust seasoning if necessary.
  • Whisk in butter.
  • Pour into a serving bowl.
  • Slice pork into 1/4" slices and serve with sauce.

  • Make the marinade: combine 1 clove minced garlic, olive oil, cider vinegar, half teaspoon of salt and rosemary in a bowl.

  • Preheat oven to 400 degrees on the convection setting. If not available, heat to 425 conventional. When the oven is ready, place the pork tenderloin in a roasting pan, and place in the oven.
  • The pork tenderloin will likely take about 20 minutes to roast, but check it after 15 minutes to avoid over cooking. When ready, pork tenderloin should still have a little pink showing, registering between 140 and 145 degrees when you remove it from the oven.
