BLACKBERRY MERLOT MARINADE
Found some blackberry syrup in the pantry that I had to use, so I thawed some chicken, mixed up a bunch of ingredients I had in the cabinets and voila: Pure Yumminess!

Steps:
- Add all ingredients, whisking until completely combined.
- Use as marinade for beef, pork, chicken and shrimp.
- Marinate at least 2 hours. Grill or broil to taste.
PAN-FRIED VENISON WITH BLACKBERRY SAUCE
Blackberries are delicious in savoury sauces, and this version is the perfect match for the richly flavoured venison

Steps:
- Heat the oil in a frying pan, cook the venison for 5 mins, then turn over and cook for 3-5 mins more, depending on how rare you like it and the thickness of the meat (cook for 5-6 mins on each side for well done). Lift the meat from the pan and set aside to rest.
- Add the balsamic vinegar to the pan, then pour in the stock, redcurrant jelly and garlic. Stir over quite a high heat to blend everything together, then add the blackberries and carry on cooking until they soften. Serve with the venison, celeriac mash (see below) and broccoli.

MERLOT MARINATED GRILLED BEEF
This is a delicious way to serve steaks. You can marinade the meat for 10 minutes and up to 2 hours. Serve with rice and vegetables.

Steps:
- Combine Merlot, Worcestershire sauce, garlic cloves, brown sugar and black pepper.
- Stir and add beef filets.
- Let meat marinade for at least 10 minutes or up to 2 hours.
- When ready to grill steaks, heat grill.
- Place marinated beef filets on grill and cook until desired doneness.
- Serve with the rice and vegetables.
- Note: Add marinade mixture to a small saucepan and bring to a boil after meat has been removed.
- Reduce heat to a simmer and cook for 10 minutes.
- Pour sauce over cooked filets.

PORK TENDERLOIN WITH MERLOT-SHALLOT SAUCE

Steps:
- Preheat oven to 350.
- Coat pork with 1 1/2 tsp olive oil; rub with rosemary, 1/4 tsp salt and 1/4 tsp pepper.
- Heat a heavy, ovenproof skillet over high heat.
- Cook pork, turning often, until lightly browned on all sides, 5 minutes.
- Transfer skillet and pork to oven; roast until thermomether reads 150 degrees, about 10- 15 minutes.
- Transfer cooked pork to a platter; keep warm.
- Add remaining 1 1/2 tsp oil to same skillet.
- Heat over medium heat.
- Add shallots and garlic; cook, stirring until lightly browned, about 4 minutes.
- Add wine; cook over high heat until reduced by half, about 5 minutes.
- Reduce heat to medium.
- Stir in stock concentrate and preserves.
- Add remaining 1/4 tsp each salt and pepper; adjust seasoning if necessary.
- Whisk in butter.
- Pour into a serving bowl.
- Slice pork into 1/4" slices and serve with sauce.

- Make the marinade: combine 1 clove minced garlic, olive oil, cider vinegar, half teaspoon of salt and rosemary in a bowl.
- Rinse and pat dry the pork tenderloin. Place the pork in a large, sealable plastic bag. Pour in the marinade, and toss gently to combine. Put in the refrigerator to marinate for 30 to 60 minutes, taking out for the final 15 minutes of marinating prior to cooking.
- Preheat oven to 400 degrees on the convection setting. If not available, heat to 425 conventional. When the oven is ready, place the pork tenderloin in a roasting pan, and place in the oven.
- The pork tenderloin will likely take about 20 minutes to roast, but check it after 15 minutes to avoid over cooking. When ready, pork tenderloin should still have a little pink showing, registering between 140 and 145 degrees when you remove it from the oven.
