1 cup flour
2 teaspoons baking powder
1/2 teaspoon salt
1 cup milk
1/2 cup butter, melted
2 1/2 cups fresh blackberries
1/2-1 cup sugar (subjective ingredient so add according to your taste)

Steps:

  • Mix blackberries and sugar; let stand 20 minutes or until fruit syrup forms.
  • Mix together flour, baking powder, salt, and milk in ungreased 8 inch square pan; stir in butter until blended; spread evenly in pan.
  • Spoon blackberries over batter.
  • Bake at 375 degrees for 45-55 minutes or until dough rises and is golden.
  • Serve warm.

1 box white cake mix
1 box hershey's white chocolate pudding mix
3 eggs
1 tsp lemon extract
1 can(s) blackberry pie filling

Steps:

  • 1. 1. Preheat oven to 325 2. Put cake mix and pudding mix together in a bowl 3. Add eggs one by one mixing before adding the next egg 4. stir until moist (batter will be lumpy if mixing by hand). Add Lemon extract 5.Fold in the pie filling 6.Pour mixture into a greased bundt pan Bake at for at least 1 hour or until done *let cake cool before glazing*
  • 2. Lemon Glaze 2 cup Powdered sugar 2 tbsp Lemon Juice 2 tbsp milk Lemon zest Slowly add lemon juice and milk to powdered sugar. stir until smooth. Add more liquid to adjust flavor and/or to thin out glaze. Pour over cooled cake. Sprinkle with lemon zest (optional)

½ cup butter, softened
3 cups fresh blackberries

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C).
  • Place the cake mix into a mixing bowl, and work in the butter until the cake mix resembles corn meal. Spread the berries into a 9x13-inch glass baking dish, and sprinkle evenly with the crumb topping.
  • Bake in the preheated oven until the berries are tender, and the crumb topping is golden brown, about 30 minutes.

Fresh blackberries and a crumb topping with lemon zest brighten up this sour cream coffee cake.

3/4 cup all-purpose flour
2/3 cup packed light brown sugar
2 teaspoons finely grated lemon zest
1 teaspoon ground cinnamon
Pinch of fine salt
5 tablespoons unsalted butter, at room temperature
1 stick (8 tablespoons) unsalted butter, at room temperature, plus more for the pan
2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon fine salt
1 cup granulated sugar
2 large eggs
2 teaspoons vanilla extract
1 cup sour cream
1 1/2 cups fresh blackberries
3/4 cup confectioners' sugar
2 tablespoons milk

Steps:

  • Combine the flour, brown sugar, lemon zest, cinnamon and salt in a small bowl and mix well. Add the butter and mix thoroughly with your fingers or a fork until all of the butter has been evenly distributed and incorporated into the flour. Form into small to medium clumps with your fingers.
  • Preheat the oven to 350 degrees F. Butter an 8-inch square cake pan.
  • Whisk together the flour, baking powder, baking soda and salt in a small bowl.
  • Beat together the butter and granulated sugar in a large bowl with an electric mixer on medium-high speed until light and fluffy, about 3 minutes. Add the eggs 1 at a time, beating well after each addition. Beat in the vanilla. Reduce the speed to low and add the flour mixture in 3 batches, alternating with the sour cream, beginning and ending with the flour, beating until just incorporated.
  • Spoon half of the cake batter (it will be very thick) into the prepared pan and smooth with an offset spatula. Sprinkle the blackberries on top. Spoon the remaining cake batter on top and smooth the top. Sprinkle on the crumb topping.
  • Bake until the cake and topping are golden brown and a toothpick inserted into the center of the cake comes out clean, about 1 hour. Let cool in the pan 20 minutes, then invert onto a plate; invert back onto a rack to cool completely.
  • When the cake is cool, whisk together the confectioners' sugar and milk in a medium bowl until smooth. Drizzle the glaze over the cake and let set.

½ cup orange juice

Steps:

  • Stir blueberries, blackberries, orange juice, and 3 tablespoons white sugar together in a bowl. Allow berries to stand 20 to 30 minutes to accumulate juice.
  • Whisk flour with baking powder in a bowl until thoroughly combined. Mix 1 cup sugar with melted butter, egg, and vanilla extract in a separate bowl until thoroughly combined. Whisk flour mixture gradually into the liquid ingredients to make a smooth batter.
