½ cup Butter (1 stick) at room temperature
½ cup Lard, or Crisco Vegetable Shortening
1 cup Light Brown Sugar, packed firm
1 cup Granulated Sugar
5 Large Eggs, at room temperature
1-1/2 cup Buttermilk
3-1/2 cups sifted Self-Rising Flour
2 teaspoon Butter Nut Flavoring, (or Vanilla)
1 ½ cups Black Walnut Pieces, finely chopped
2 - 8oz packages Cream Cheese, softened
1 cup Butter, at room temperature
1 Tablespoon Vanilla Flavoring
8 cups Confectioners' Sugar

Steps:

  • Sift your flour to have it ready. Set aside for now.
  • Chop the black walnuts if needed.
  • Place the butter in a large mixing bowl.
  • Add the lard or shortening.
  • Use a mixer to cream butter and shortening together for 3 minutes.
  • Gradually add in the light brown sugar, mixing until smooth.
  • Gradually add the granulated sugar, mixing until light and fluffy.
  • Add eggs, one at a time, mix just until combined. Scrape down bowl as needed.
  • Add flour, alternating with milk, beginning and ending with flour.
  • Add butter nut flavoring, mix just until combined.
  • Add the walnut pieces.
  • Fold nuts into mixture by hand until combined.
  • Grease and flour 3 - 8 inch cake pans.
  • Divide batter between the 3 pans.
  • Bake at 350F degrees for 20 - 30 minutes, or until cake tests done using a wooden toothpick.
  • Remove from oven, place pans on wire rack and let cool for 10 minutes.
  • Remove layers from pans, place layers on wire rack to cool completely.
  • Black Walnut Butter Cream Frosting Instructions:
  • Place the cream cheese, butter and flavoring in a large mixing bowl.
  • Cream the ingredients together until smooth.
  • Gradually add the confectioners' sugar. Stir slowly to avoid making a mess.
  • Spread frosting between layers of cake, on sides, and on top.
  • Enjoy!

Steps:

  • To make the frosting: in a large mixing bowl, cream butter and cream cheese; gradually add powdered sugar, beating (with an electric mixer) until mixture is light and fluffy.
  • Stir in vanilla; set aside.
  • To make cake: In a large mixing bowl, cream butter and shortening; gradually add sugar, beating well with an electric mixer at medium speed.
  • Add egg yolks, one at a time, beating well after each addition.
  • In another bowl, combine buttermilk and soda; stir until soda is dissolved.
  • Add flour to creamed mixture alternately with buttermilk mixture, beginning and ending with flour.
  • Mix after each addition.
  • Stir in vanilla.
  • Add in 1 cup walnuts and coconut; stir well.
  • In another bowl, beat egg whites (at room temperature) and cream of tartar until stiff peaks form; fold egg white mixture into batter.
  • Pour batter into 3 greased/floured 9-inch round cake pans.
  • Bake in a 350° oven for 22-25 minutes or until pick comes out clean.
  • Cool cakes in pans 10 minutes; remove from pans and let cool completely on wire racks.
  • Spread Cream Cheese Frosting between layers and on top and sides of cake.
  • Press additional chopped walnuts onto sides of cake.

2 cups sugar
1 cup buttermilk
1 cup canola oil
4 eggs
2 teaspoons coconut extract
3 cups all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda

1 cup sweetened shredded coconut
1 cup chopped black walnuts
SYRUP:
1 cup sugar
1/2 cup water
2 tablespoons butter
1 teaspoon coconut extract

Steps:

  • In a large bowl, beat the sugar, buttermilk, oil, eggs and extract until well blended. Combine the flour, baking powder, baking soda and salt; gradually beat into sugar mixture until blended. Stir in coconut and walnuts., Transfer to a greased and floured 10-in. fluted tube pan. Bake at 325° for 60-70 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes., Meanwhile, in a small saucepan, bring sugar and water to a boil over medium heat. Cook and stir for 5 minutes or until slightly reduced. Remove from the heat; stir in butter and extract., Remove cake from pan to a wire rack. Poke holes in warm cake with a skewer; slowly pour syrup over cake. Cool completely before cutting.

Vegetable oil, for cake pan
14 1/4 ounces cake flour, plus extra for pans, approximately 3 cups
1 1/2 teaspoons baking powder
1 teaspoon kosher salt
1/2 cup fresh coconut milk
1/2 cup fresh coconut cream
8 ounces unsalted butter, room temperature
16 ounces sugar, approximately 2 1/4 cups
1 teaspoon coconut extract
4 egg whites
1/3 cup coconut water
3 large egg whites
12 ounces sugar, approximately 1 3/4 cups
1/3 cup coconut water
1/2 teaspoon cream of tartar
1/4 teaspoon kosher salt
1 teaspoon coconut extract
1/2 teaspoon vanilla extract
Grated coconut from 1 coconut, approximately 8 to 10 ounces

Steps:

  • For the cake:
  • Preheat the oven to 350 degrees F. Lightly oil 2 (9-inch) cake pans. Line the bottom of each pan with parchment paper. Oil the parchment paper and then flour the pan. Set aside.
  • Place the flour, baking powder and salt into a large mixing bowl and whisk to combine.
  • Combine the coconut milk and coconut cream in small bowl and set aside.
  • Place the butter into the bowl of a stand mixer and using the paddle attachment, cream on medium speed until fluffy, approximately 1 minute. Decrease the speed to low and gradually add the sugar slowly over 1 to 2 minutes. Once all of the sugar has been added, stop the mixer and scrape down the sides. Turn the mixer back on to medium speed and continue creaming until the mixture noticeably lightens in texture and increases slightly in volume, approximately 2 to 3 minutes. Stir in the coconut extract.
  • With the mixer on low speed, add the flour mixture alternately with the milk mixture to the butter and sugar in 3 batches, ending with the milk mixture. Do not over mix.
  • In a separate bowl, whisk the egg whites until they form stiff peaks. Fold the egg whites into the batter, just until combined. Divide the batter evenly between the pans and bang the pans on the counter top several times to remove any air and to distribute the batter evenly in the pan. Place in the oven on the middle rack. Bake for 40 minutes or until the cake is light golden in color and reaches an internal temperature of 200 degrees F.
  • Cool the cake in the pans for 10 minutes then remove and transfer to a cooling rack. Once the cakes have cooled completely cut across the equator of each to form 4 layers. Place the 1/3 cup coconut water into a small spritz bottle and spray evenly onto the cut side of the 4 layers. If you do not have a spritz bottle you may brush the coconut water on with a silicone pastry brush. Allow to sit while preparing the frosting.
  • For the frosting:
  • Bring 1 quart of water to a boil in a 4-quart saucepan over high heat. Decrease the heat to medium to maintain a steady simmer. In the meantime, place the egg whites, sugar, coconut water, cream of tartar and salt into a medium size-mixing bowl. Place the bowl over the simmering water and immediately begin beating with an electric hand mixer set to low speed. Beat for 1 minute and then increase the speed to high and continue to beat for 5 minutes. Remove from the heat and beat in the coconut and vanilla extracts for 1 minute. Allow the frosting to sit for 5 minutes before using.
  • Place approximately 3/4 cup of the frosting on the first layer of cake, sprinkle with 1/2 cup coconut and top with the next layer. Repeat until you reach the top layer. Frost the top and sides of the cake and sprinkle with the remaining coconut. Refrigerate for at least 30 minutes before serving.

4 egg yolks
1 cup milk
½ cup butter
2 ½ cups all-purpose flour
1 tablespoon baking powder
1 teaspoon vanilla extract
1 ¾ cups white sugar
½ cup water
4 egg whites, room temperature
1 teaspoon vanilla extract
½ teaspoon cream of tartar
2 cups sweetened flaked coconut, or as needed

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease three 9-inch round cake pans.
  • Mix sugar, eggs, and egg yolks together in a mixing bowl using an electric mixer until light and fluffy, about 5 minutes.
  • Heat milk and butter in saucepan over low heat until butter melts, 2 to 3 minutes. Remove from heat and let cool slightly.
  • Combine flour and baking powder in a bowl. Pour into egg mixture. Add vanilla extract and milk mixture; beat well using an electric mixer. Divide batter evenly among the prepared pans.
  • Bake in the preheated oven until a toothpick inserted into the center of the cakes comes out clean, 15 to 18 minutes. Let cool in pans for 10 minutes before transferring to wire racks to cool completely.
  • Meanwhile, thoroughly clean mixing bowl and beaters. Beat egg whites and cream of tartar with an electric mixer until foamy.
  • Bring sugar and water to a boil in a saucepan. Boil until a candy thermometer reads 242 degrees F (116 degrees C), 3 to 4 minutes.
  • Beat egg whites on high speed. Carefully pour in hot sugar mixture in the side of the bowl, avoiding the beaters; continue to beat on high until stiff peaks form, 6 to 8 minutes. Stir in vanilla extract.
  • Place 1 cooled cake layer on a serving platter and frost the top. Repeat with second and third layers of cake. Complete frosting the sides, top, and throughout. Sprinkle coconut on top and smooth onto sides of cake using your hands.

Steps:

  • CAKE: Pre heat oven to 375 degree F. Cream butter and sugar in a large mixing bowl. Add eggs one at a time beating after each addition. Sift flour, baking powder and salt together and stir into creamed mixture,alternating with milk. Add vanilla and beat to combine. Fold in Walnuts just to incorporate.
  • Pour mixture into 3 greased and floured 9 inch round cake pans. Bake until done, about 25 minutes. Test with tooth pick to be sure.
  • FROSTING: Combine sugar and milk in a medium sauce pan and bring to a boil. Turn down to low boil for 5 minutes, stirring constantly. Remove from heat and add butter and vanilla. Cool. After cooled, beat until thickened. Follow instructions below on how to apply frosting.
  • TIP: Turn 1 st layer of cake on to cake plate top side down, sprinkle with walnuts and thickly drizzle with frosting. Place second layer on top of first layer top side down. Sprinkle with walnuts and drizzle with frosting. Place third layer on top of second layer top side up. Frost top and sides of cake, covering top first and drizzle as heavily as possible down sides. Sprinkle remaining walnuts on top.

3 eggs
1 1/4 cups oil
2 cups sugar
2 teaspoons nutmeg
2 1/2 cups self-rising flour
3 medium apples, peeled, cored and chopped. (I use Granny Smith Apples)
1 cup black walnut, chopped
1/4 cup margarine
1/2 cup brown sugar, packed
1/3 cup milk

Steps:

  • Grease and flour a tube or bundt cake pan and preheat the oven to 350 degrees.
  • Blend eggs, oil, nutmeg, and sugar until creamy.
  • Add flour, a little at a time; and blend well.
  • Batter will be stiff.
  • Fold in apples and nuts.
  • Pour into tube or bundt cake pan and bake for 1 hour.
  • Remove from pan after about 30 minutes.
  • Punch holes in top of the cake.
  • Mix together topping ingredients in a saucepan.
  • Boil for three minutes, stirring frequently.
  • Take off the heat and pour topping over cake with a spoon, letting it to seep into the cake holes.
  • Brush the sides of the cake with a kitchen brush.
  • Let it set for at least 24 hours befor cutting and serving.
